Hello my dear readers, what are we going to cook today? I had chicken and fries for lunch, so I decided to make one of the world's most popular sauces. In any cafe, even in McDonald's, it is always on sale. But can you cook it at home? Read on.

Chinese sweet and sour sauce

Of course, the Chinese invented it. Probably every fifth thing on Earth is invented by them. Traditionally, the Chinese recipe contains the following ingredients:

  • Apple juice - 100 ml;
  • Garlic - 2 cloves;
  • Onions - 1 pc;
  • Ginger root - 1 piece;
  • Vegetable oil - 3 tablespoons;
  • Ketchup - 1 tbsp.;
  • Sugar -1 tbsp;
  • Starch - 1 tablespoon;
  • Vinegar - 1 tablespoon

For cooking, we need a frying pan or stewpan. While the pan is heating the oil over low heat, chop the onion and garlic. Rub a little ginger. Buy a chopper or chopper blender and don't worry!

Fry vegetables in vegetable oil. When the onions turn yellowish, add a tablespoon each of vinegar, sugar, soy sauce and ketchup. Bring to a boil and add starch diluted in water to the sauce. Pour in 100 ml of fruit juice and stir constantly. You can use flour instead of starch. Cook until thick, about 5-10 minutes.

This sauce is often used in Chinese cuisine. Serve with noodles or sushi, use as a dressing for udon or for a vegetable salad.

For meat dishes

Not sure where to put the last pickle from the jar? There is the easiest way to get rid of it. Try the unusual sweet and sour meat gravy. This recipe has a Slavic soul! For cooking, we need an unusual set of products:

  • Pickled cucumbers - 1 pc;
  • Vegetable oil - 1 tablespoon;
  • Cognac - 1 tbsp;
  • Tomato paste - 1 tablespoon;
  • Ground ginger - 5 g;
  • Wine vinegar - 5 ml.

To prepare a sweet and sour sauce for meat, you need to fry the cucumbers. Yes that's right! Then add all the other ingredients and pour in 300 ml of water. Increase heat to high and stir all the time. Turn on low heat and simmer for 5 minutes until thickened.

You can serve sweet and sour sauce with beef, lamb, even chicken. I got a lot of sauce, so I even ate it with potatoes. It goes well with your favorite dish.

Dedicated to fast food lovers. This recipe produces a very similar flavor to the bagged sauce. Only homemade sauce is much healthier. The ingredients we'll be using:

  • Plums - 200 g;
  • Chili pepper - 1 circle;
  • Garlic - 2 cloves;
  • Adjika (dry) - 5 g;
  • Sugar, salt, pepper.

Peel the plums and grind them in a blender. Can be cut into pieces and stew for half an hour until smooth. And stew mechanically chopped plums for only 5 minutes.

Add chili, adjika, sugar and salt to the plum puree. Add coriander for a spicy flavor. Boil for another 10-15 minutes, add garlic. By the way, such a sauce can be prepared for the winter, just increase the amount of products several times!

  3. During this time, cut the pineapple on a cutting board as small as possible.
  4. Add pineapple to the boiling liquid in a saucepan. Bring our future sauce to a boil again.
  5. We dilute the starch in cold water, then pour it in a thin stream into the pan.
  6. Reduce heat to medium and cook sauce until thick.
  7. We remove the sauce from the stove, after which we transfer it to a more beautiful and presentable container.

Ingredients:

  • 60 ml olive oil;
  • 70 g tomato paste or ketchup;
  • half a tablespoon of cornstarch;
  • onion head;
  • 50 ml soy sauce;
  • 2 cloves of garlic;
  • 50 g sugar;
  • two thirds of a glass of orange juice;
  • a quarter glass of dry white wine;
  • a tablespoon of apple cider vinegar;
  • a quarter glass of water.

Getting started cooking

  1. Peel the onion and chop it on a cutting board as fine as possible. We do the same with garlic, although the peeled garlic can be passed through a garlic press, if there is one.
  2. Put the pan on high heat and pour olive oil into it. We are waiting for the crackling, which means that the pan is hot enough.
  3. Put chopped onion and garlic in a pan. Reduce the heat a little and fry until the onion is light.
  4. While the onion and garlic are fried, pour apple cider vinegar, olive oil, orange juice, soy sauce, wine into a saucepan. And also add tomato paste and sugar. It is best to use cane sugar, but if there is none, then you should not dwell on it, add regular sugar.
  5. Add the fried vegetables to the saucepan and put it on low heat.
  6. Dissolve the starch in cold water, then pour it in a thin stream to all the other ingredients in a saucepan. Do not forget to mix.
  7. Stir all the ingredients as thoroughly as possible one last time, after which you can leave the sauce to thicken over low heat.
  8. If you do not like small pieces of garlic and onions, then this sauce can be whipped in a blender, or you can grind the pieces with a regular potato press.

Sweet and sour sauce recipe like in McDonald's

Ingredients:

  • 3 kg of any sweet and sour plums;
  • 1 chili pepper;
  • 2 cloves of garlic;
  • one and a half teaspoon of coriander;
  • 800 g sugar;
  • a tablespoon of salt;
  • half a teaspoon of dry adjika.

Getting started cooking

  1. We get rid of plums. We spread the slices of fruit in a saucepan and send it to low heat. We make sure that they do not burn, do not forget to mix.
  2. Once the plums are soft, rub them through a metal sieve. You can grind directly into the same pan.
  3. Cook the resulting puree for a few more minutes, adding coriander, sugar, salt and chopped chili to it.
  4. We achieve a boil. Cook for about 10 minutes more.
  5. In the meantime, we remove the husk from the garlic and chop it finely on a cutting board or pass it through a garlic press. Add the garlic almost at the very end of cooking, when the sauce begins to thicken.
  6. The finished sauce can be chopped in a blender or with a potato press. This will rid it of the small pieces of garlic and chili.

The resulting mixture must be brought to a boil. Then add water with starch, stir thoroughly and boil until the consistency you like.

  • onion (2 pcs.)
  • garlic (2 cloves)
  • vegetable oil (2 tbsp. l.)
  • ginger root (1 pc.)

  • dry sherry (2 tablespoons)

The preparation of this sauce begins with finely chopping the onion, ginger and garlic and then frying for several minutes in vegetable oil, stirring continuously. Next, in a small saucepan, mix the vinegar, soy sauce, ketchup, orange juice, sherry, sugar, put on a low heat and bring to a boil. After that, you need to pour the starch into the pan, and stirring continuously, cook to the required consistency.

Recipe for making sweet and sour sauce with pickles

For this recipe you will need the following products:

  • pickles (3 tbsp. l.)
  • potato starch (2 tsp)
  • cognac (2 tsp)
  • wine vinegar (0.5 tsp)
  • vegetable oil (1 tbsp. l.)
  • ginger (0.5 tsp)
  • granulated sugar (2 tsp)
  • and tomato paste (1 tsp)

This sweet and sour sauce is prepared in this way: first you need to chop the cucumbers, which are the basis of the sauce. Then pour the vegetable oil into a skillet with high sides and heat it for one minute. Next, add the cucumbers and simmer them for five minutes. In a separate bowl, mix sugar, potato starch, tomato paste, cognac and stir until smooth. Then pour water into the resulting mixture in small portions, without stopping stirring. Pour the prepared mixture over the cucumbers and simmer over low heat for five minutes.

Recipe for making sweet and sour sauce with juice

Here's another sweet and sour sauce recipe. Preparing it according to this recipe, you get a sweet and sour pineapple sauce.

To prepare this sauce, you need the following ingredients: canned pineapples (150 gr.)

  • pineapple juice (75 ml.)
  • sugar (75 gr.)
  • vinegar (1 tbsp. l.)
  • cornstarch (1 tablespoon)

The preparation of this sauce begins with finely chopping pineapples. Then you need to mix all the other ingredients in a separate bowl. Next, add finely chopped pineapples and mix thoroughly.

An option for making sweet and sour sauce with vinegar

Sweet and sour soy sauce has an unusual taste. This sauce recipe is being prepared from the following components:

  • vinegar (1 tbsp. l.)
  • sugar (1 tbsp. l.)
  • as well as water (150 ml.)
  • cornstarch (1 tablespoon)
  • and sesame oil (0.5 tbsp. l.)

Preparation is as follows: first of all, you need to mix the cornstarch with water. Then all other components should be mixed in a separate bowl. Add starch to them, mix, put on low heat and bring to the desired consistency, stirring continuously. Enjoy your meal!

There are simple ways to quickly ferment cow's milk at home.

  • Dip the stale piece of bread into a bowl with prepared liquid. It should be at room temperature. Cover with plastic cover. Under such conditions, the bread will provoke active fermentation, and after a while the contents will turn sour.
  • In the pharmacy, you can buy starter culture or dry bacteria to mix with a dairy product. It is important to warm up the liquid on the stove for some time in order to provoke active reproduction of bacteria. The kefir product will be ready for use after 5 hours.
  • The initial product is heated to 40 degrees, after which any acidic additive is added, such as unsweetened yogurt, fatty sour cream, kefir or sourdough. It is kept warm, it can even be placed in a thermos. The useful substance will begin to sour. This is the principle of operation of an ordinary yogurt maker, designed for cooking various fermented milk products. After 8-10 hours, the mixture is ready for use.
  • Lemon juice squeezed from natural lemon or vinegar is added to the contents for the starter culture. It must also be kept warm.
  • You can simply leave the dairy product in a hot room. And to make cottage cheese, it is recommended to keep the container with milk in the oven over low heat.

It is not difficult to get homemade sour milk, if only whole and natural milk is available, and not bought in a store from preservatives with a long shelf life. It is not hard to understand that a chemical powder called a dairy product will never turn sour, but rather deteriorate and turn into an unusable, even dangerous product.

Signs of sour milk

In order to understand that milk is sour, you need to know the difference between a fermented product and a regular one.

This is determined by:

  • specific sour smell;
  • the fact that when boiled, the sour substance will necessarily curdle;
  • the characteristic whey begins to separate on the surface of the sour product, and fat globules settle to the bottom of the dish (this is especially noticeable if the dish is transparent).

Traditional recipe

To make a sweet and sour sauce, you will need:

  • sugar - 20 g;
  • vinegar - 50 ml;
  • soy sauce - 50 ml;
  • tomato paste - 25 g;
  • orange juice - 75 ml;
  • corn flour - 10 g;
  • water - 100 ml.

For this sauce, it is best to use a small, high-sided, thick-bottomed saucepan or wok. Sugar is mixed with vinegar. In Chinese sauce, the vinegar should be rice. But if it's not there, apple cider vinegar is called a worthy replacement. And only if there is no apple cider vinegar on the kuna either, you should take the usual six percent.

Stir thoroughly. When there are no individual grains of sugar left, soy sauce is added to the mixture. By the way, in oriental cuisine, it performs the function of salt, has the same properties, but it is more convenient to use, since the liquid consistency better penetrates deep into the product, and does not remain on the outer shell. That is why, while studying other recipes of Chinese cuisine, you should not be surprised if you do not find our most popular spice there.

Tomato paste and orange juice are also added to the saucepan. Stir thoroughly again so that the mass is homogeneous.

Advice! Orange juice can be substituted for pineapple juice. This is especially convenient if, for example, meat with pineapples is being cooked, and unclaimed juice remains - a sweet and sour sauce based on it will perfectly emphasize the taste of the dish.

The mixture can already be put on a small fire to warm up. Meanwhile, in a separate container, the cornmeal is mixed with water. In this recipe, corn flour plays the role of a thickener, because it is important for us that the mixture does not spread over the plate.

When the mass begins to boil, add the cornmeal solution to it, and, stirring constantly, but slowly, bring until thickened. Chinese sauce is served hot, but if the main course is not yet ready, you can reheat it before serving - over the same low heat, but first covered with a lid.

Recipe varieties

Like any dish that does not have one author, this sauce has different recipe variations. So, it can be cooked with onions and garlic. In this case, the vegetables are cut into small pieces and pre-fried slightly to make them more aromatic. They are then added to the saucepan along with the soy sauce.

Alternatively, you can use ginger. This is a very extraordinary root crop, and all people can be divided into two categories: who loves it, and who does not. It is extremely difficult to remain indifferent to him. It slightly burns the throat and gives the dish (or drink) in which it is used a brighter and spicier taste. And in this sauce it is definitely appropriate, as, indeed, in many other dishes of Chinese cuisine. Ginger is cut into thin strips or grated and added with tomato paste.

Instead of cornmeal, you can use the more familiar potato starch. It is also a thickener, but it is consumed about a third less.

Advice! If you add a little chopped chili pepper or a few drops of Tabasco to the sauce, it will no longer become sweet and sour, but spicy-sour-sweet. This sauce goes well with meat cooked over an open fire.

The flavor of the sauce will change if you add juicy red bell pepper, canned pineapple, or even honey to it. Some experimenters add dry white wine, coarsely chopped plums, and even jasmine tea bags for a more sophisticated oriental flavor.

By changing the proportions, you can "play" with taste, making the sauce more sour or sweeter. This dish is sure to please everyone - you just need to find "your" recipe.
