Every year I make preparations for the winter. I recently cooked homemade ketchup according to a new recipe, which I took from a local newspaper. The result was beyond praise!

The products that are necessary for making homemade ketchup are not quite common - the recipe includes plums and apples, but they are the ones that give the ketchup the spice and the necessary thickness. And pay attention - absolutely no harmful additives - only natural product!


Plum and apple ketchup

  • 3 kg of tomatoes;
  • 1 kg of ripe plums;
  • 4 apples of sweet and sour varieties;
  • 5 medium-sized onions;
  • 2 cups sugar;
  • 2 tablespoons of salt;
  • 1 teaspoon black hot pepper
  • 100 g vinegar.
  • The process of making plum apple ketchup:

    Rinse the tomatoes well, cut into pieces - make tomato juice through a juicer. We peel the plums, cut the skin off the apples and cut the core, peel the onion - cut everything into slices and pass through a meat grinder. Mix with tomato paste.

    Now add sugar and salt. Stir thoroughly with a wooden spoon and put on low heat. Homemade apple and plum ketchup should be boiled for one hour under the lid, and for one hour without the lid. At the end of cooking homemade apple-plum ketchup, add black hot pepper and vinegar. I boil the mixture for a couple of minutes and pour it into clean, dry sterile jars, roll it up.

    And here are two more recipes for homemade ketchup - one plum, the other apple.

    Apple ketchup

    We need the following products:

  • 5 kg of tomatoes;
  • 1 kg of sweet pepper;
  • 1 kg of apples;
  • 6 pcs. bitter capsicum;
  • 200 gr. garlic;
  • 1 glass of sunflower oil;
  • 1 cup of sugar;
  • 1 glass of vinegar;
  • 3-4 tablespoons of salt.
  • How to make homemade apple ketchup:

    Wash the vegetables, peel the tomatoes and apples, remove the stalks and seeds from the pepper, pass everything through a meat grinder and cook the mixture over low heat for about 2 hours. Then add chopped garlic, sunflower oil, sugar, salt, boil for about 30 minutes more. Two to three minutes before the end of cooking, add vinegar, boil. Pour the finished apple ketchup into sterile hot dry jars.

    Plum ketchup

    We need the following products:

  • 4 kg of tomatoes;
  • 2.5 kg pitted plums;
  • 6 pcs. Luke;
  • 3 pcs. bitter capsicum;
  • 2 cups sugar;
  • 2 tablespoons of salt;
  • 200 gr. vinegar;
  • How to make homemade plum ketchup:

    Rinse the vegetables under running water, cut the tomatoes into pieces, peel the plums, cut the onion into slices, peel the hot pepper. Simmer over low heat for about 2 hours. Then rub the warm mixture through a sieve, add sugar, salt, vinegar, boil for another half hour, pour into dry clean sterile jars and roll up.

    Homemade apple and plum ketchup turns out to be thick, sweet and sour in taste. Perfect for meat, fish and vegetable dishes.

    Not all housewives harvest plum and tomato ketchup at home for the winter. What for? Indeed, in stores and supermarkets there is such a huge selection of all kinds of sauces. But, if you look at the composition of the store sauce, you can see that they contain preservatives and various chemical additives.

    Of course, natural ketchups are also on sale, but they are very expensive. So why not make the sauce at home in your kitchen? True, it will take a lot of time to cook, but the cost of the finished product will be quite low, and the ketchup will be cooked from natural products.

    Delicate plum ketchup with tomatoes and peppers at home for the winter

    Delicious and simple recipe

    Ingredients:

        • five kilograms of ripe plums;
        • one kilogram of tomato;
        • a pound of red sweet pepper;
        • garlic - two heads;
        • hot pepper - two pcs.;
        • granulated sugar - one and a half glasses;
        • salt - two tbsp. spoons with a slide.

    Cooking steps:

    • prepare glass containers for the finished product. Better to take glass bottles or half-liter jars. Wash them thoroughly with baking soda, and sterilize over steam;
    • prepare vegetables: remove seeds from plums, cut tomatoes, peppers into small pieces;
    • mince the ingredients;
    • transfer the vegetable mass to a saucepan with high sides;
    • put on fire and boil for about an hour;
    • remove the pan from the heat, let the vegetable puree cool;
    • grind the mass through a fine sieve to remove seeds and peel;
    • put mashed potatoes on the fire and cook for three hours;
    • forty minutes before cooking, add the garlic grated on a fine grater;
    • at the end of cooking, pour in a little vinegar, but this is optional;
    • pour the finished product into a prepared container;
    • put in a cellar or basement.

    Plum ketchup "Solo" without tomatoes


    To make tomato-free plum ketchup, you need the following foods:

    • plums - two kilos;
    • two pieces bitter pepper;
    • one head of garlic;
    • 250 gr granulated sugar;
    • 100 g salt;
    • three teaspoons of curry.

    Preparation:

    • remove the seeds from the fruit, cut the hot pepper lengthwise into two parts;
    • grind all the ingredients in a meat grinder, add spices, except for garlic;
    • put in a saucepan on fire for twenty minutes;
    • add grated garlic;
    • still let it boil for about fifteen minutes;
    • pour the finished product into the prepared container.

    ON A NOTE

    Plum sauce can be cooked not only with tomatoes. Sweet and sour apples, such as "Antonovka", will give the ketchup a special aroma. Then it is advisable to add various spices to such a sauce: cloves, cinnamon and a little ginger.

    Plum and tomato ketchup for the winter "Sweet and sour"


    Pizza and pasta, meat and fish, borscht and vegetable soup - you can add a couple of tablespoons of homemade ketchup to all these dishes, and bring their taste to perfection. And if you just want to have a snack, then a piece of black bread with homemade ketchup is just a godsend. In order to make the ketchup with a delicate sweet and sour taste, plums are added to the tomatoes.

    Recipe number 1

    Products:

    • tomatoes - two kilos;
    • plums - kilo;
    • ground black pepper;
    • allspice - 4 pcs.;
    • sweet bell pepper;
    • incomplete glass of sugar;
    • a spoonful of salt.

    Preparation:

    • grind vegetables through a meat grinder;
    • boil a quarter of an hour;
    • grind through a sieve;
    • salt, add sugar and spices, except vinegar;
    • cook with stirring for 2-2.5 hours;
    • pour into glass containers, close with metal lids.

    Ingredients:

    • tomatoes - two kilos;
    • plums - a pound;
    • a teaspoon of ground red pepper;
    • salt, sugar - to taste;
    • cloves - three pcs.;
    • laurel leaf - three pcs.;
    • 6% apple cider vinegar - half a glass.

    Preparation:

    • remove seeds from plums;
    • chop vegetables with a meat grinder or blender;
    • boil the tomato-plum mass for two hours;
    • grind through a sieve;
    • add all spices to the puree except vinegar and pepper;
    • add the rest of the ingredients ten minutes before the end of cooking;
    • let it boil for ten minutes, pour the finished product into prepared jars or bottles.

    Sauce made from plums is a real storehouse of vitamins. It is easy to roll up sweet and sour ketchup from plums and tomatoes for the winter at home. And in summer and autumn, it will be very useful for meat dishes cooked on the grill. The pungency and sweetness can be adjusted according to your taste preferences. The main product of the sauce is, of course, ripe, fleshy and juicy plums. The rest of the products are optional.

    Such ketchup turns out to be fragrant and with a rich taste. You can adjust the amount of spices to your taste. Optionally, you can make the ketchup more or less spicy, and you can use the greens you like the most.

    Ingredients for preparing ketchup with plums for the winter (for 800 g of finished ketchup):

    • tomatoes - 2 kg
    • plums - 800 g
    • onions - 2 pcs. medium size
    • sugar - 150 g
    • salt - 1 tablespoon with a small slide or to taste
    • dried herbs (basil, parsley, oregano) - 1 tablespoon
    • apple cider vinegar - 40 ml
    • chili pepper (dried) - 1 tsp
    • garlic - 1 head
    • pepper mixture (ground) - 1 tsp optional

    Recipe ketchup with plums at home:

    First, wash the tomatoes and plums thoroughly. If there are any damaged places, then be sure to cut them off.


    Peel the tomatoes. To do this, make cross-shaped cuts on each tomato.


    In a saucepan, bring 2-3 liters of water to a boil. When the water boils, put all prepared tomatoes in it and leave them in it for 3-4 minutes.


    Remove the scalded tomatoes from the water and let them cool slightly.


    Remove the peel from the cooled tomatoes and squeeze them slightly to remove excess liquid. Place the peeled tomatoes in a blender bowl.


    Grind them into a homogeneous tomato puree. By the way, if you have a juicer, then you can safely skip the scalding and cleaning process. You just need to squeeze the juice out of the tomatoes.


    Strain the resulting puree through a sieve to get rid of the seeds. You can skip this step if you wish.


    Remove the pits from the plums and place them in the blender bowl as well.


    Chop until puree.


    Peel and chop the onions. For convenience, chop the onion with the tomatoes.


    In a large saucepan, combine chopped tomatoes, plums and onions. Put the saucepan on fire, bring to a boil and boil over low heat for 1 hour. The mass should be boiled down by at least a third.


    Meanwhile, chop the garlic finely.


    When the tomato mixture is boiled down, add salt, sugar, ground pepper, dried chili and dried herbs to it. Stir and simmer for about 1 hour or more. The mass should become thick. Stir the mixture from time to time during cooking so that it does not stick to the bottom. When the sauce thickens, pour the vinegar into it and cook for another 10 minutes. After 10 minutes, the tomato ketchup with plums is completely ready.


    If desired, to make homemade ketchup more uniform, it can be additionally chopped with an immersion or stationary blender. Return chopped ketchup to heat, bring to a boil and boil for another 10 minutes.


    Pour the finished ketchup with plums into sterilized jars and roll up the lids for the winter. Turn them upside down and wrap them in a warm blanket.


    When the jars are completely cool, transfer them to the basement or to the cool pantry - homemade ketchup with plums is ready for the winter!


    Enjoy your meal!

    Then pour boiling water over the tomatoes, hold for 10-15 minutes, then remove from the water and peel them off.

    Wash, cut, peppers and hot peppers. Wash the apples, peel and core.

    Put a saucepan with chopped vegetables on the stove, bring to a boil and cook over low heat under a lid, stirring occasionally so that the mixture does not burn, for 1.5 hours. Then add salt and granulated sugar, mix and cook the plum and tomato ketchup under a lid for another 10 minutes.

    Add the grated garlic to the future ketchup along with vegetable oil and vinegar, mix. Bring to a boil and turn off.

    Arrange hot ketchup in sterilized jars (I sterilize in the microwave, very convenient), roll up the lids. Put the rolled-up jars of ketchup with the lids down, wrap them in a blanket or blanket and leave as they are until they cool completely. Store in an apartment in a dark place.

    Delicious, bright ketchup from plums and tomatoes will go well with a variety of dishes and perfectly diversify the winter menu.
