Filling

Carefully cut off the top leaves from the stump, trying not to damage them, we will wrap the filling in them. Put the head of cabbage again, cook for a short time and cut off the leaves. We do this until there are 10 - 12 boiled cabbage leaves on the plate.

If too thick veins interfere, cut them off with a knife.

We form cabbage rolls

Now we wrap 1 - 2 tbsp in each sheet. fillings and spread the cabbage rolls on a deep baking sheet with the fold down.

We put them more densely - so they definitely will not turn around, and they will be saturated better.

Fill

Now we are preparing the sauce-filling: mix 3 tbsp. tomato paste, 2 tablespoons water, 3 tbsp. vegetable oil and 1 tbsp. mustard. Stir well, add pepper, add salt and evenly fill the cabbage rolls. If desired, replace vegetable oil with lean mayonnaise.

We put the baking sheet in a hot oven (220 ° C) for 30 - 40 minutes. If it seems that the top is burning, cover with a lid from a baking sheet or foil. We serve stuffed cabbage rolls hot for dinner.

The same recipe can be slightly changed by making, for example, a filling of stewed mushrooms with rice or mushrooms with buckwheat. The taste will be even richer, and the fast will not be broken.

If we are talking about mushrooms, then how not to remember an excellent alternative to any pies - zraz? We will make them from potatoes, because these products are perfectly combined with each other, not only during fasting.

First, prepare the filling

  • Fry finely chopped onion (1 pc.), And then, as soon as it becomes transparent, add 500 g of chopped mushrooms (champignons or oyster mushrooms) in portions.
  • Salt, season with spices - nutmeg, allspice and black pepper.
  • Bring to readiness and set aside to cool.

Boil 1 kg of peeled potatoes, cutting them into slices. When ready, drain the water completely. Knead the slices with a crush or mixer, salt and add a little sugar - this will make the dough much tastier.

  1. Fry in a deep frying pan in olive oil, first 2 chopped garlic cloves, then, when they are browned, send 1 bell pepper, 1 fresh carrot and, if desired, onion, chopped into cubes - without it, the taste will be different, but no worse.
  2. Meanwhile, rinse a glass of rice with water. Remember that it should become completely transparent, as a rule, this requires 8 - 9 rinses.

After 5 - 6 minutes, open and pour in another ½ cup and keep it under the lid for the same time. We check again and, if the rice is not yet ready, add the remaining liquid, if it is already soft, remove from heat, let stand for a couple of minutes and serve.

When you do not want serious food, light vegetable snacks come to the rescue.

The fillings can be varied indefinitely, guided only by your imagination and tastes!

  • Cut off the upper part of 3 medium tomatoes (1.5 - 2 cm) and take out the pulp with a spoon - we do not need it.
  • Drain the liquid from canned white beans (200 g) and grind it in a blender along with a clove of garlic and 100 g of walnuts, salt.
  • We fill the tomatoes with the resulting mixture and put in the refrigerator for an hour. Serve by cutting into quarters.

Similarly, you can make tomatoes stuffed with mushrooms, which in this case can be chopped and fried without chopping into a paste. We cook them with garlic or add it later separately raw - this will make the appetizer more spicy.

If you don't want to bother with further slicing, let's arrange the dish a little differently: immediately cut the tomatoes into rings, and put the filling on top with a teaspoon.

Also, tomatoes in fasting can be stuffed with a mixture of green peas, finely chopped boiled potatoes, carrots and lightly salted cucumbers. The filling is prepared separately and seasoned with vegetable oil - almost a vinaigrette turns out.

Now that we have figured out with hot dishes and snacks, let's remember the sweet tooth, who do not have to deny themselves goodies during the fast. It is enough just to cook them differently and baked goods for a lean dinner will be a pleasant surprise.

  1. We brew strong black tea - we need 300 ml of tea leaves. As soon as it is infused, add 2/3 tbsp. sugar and 2 tbsp. honey and stir until completely dissolved.
  2. Grind ½ lemon and orange together with zest in a blender. Add the resulting mass to the tea leaves.
  3. Put 300 g of chopped sweet candied fruits and 150 - 200 g of chopped walnuts there.
  4. Pour in 1 glass of flour, 2 tsp. baking powder, add a little salt, and if the dough is thin (it should be thick!), add a couple more tablespoons of flour.
  5. Put the dough in a greased pan and sprinkle with brown sugar on top - when baked, it will give a caramel crust.

If desired, 5 minutes before the end of cooking, we update the sugar topping - this will make the glaze a little thicker.

Bake the cake for 40 - 35 minutes at 190 ° C.

The taste of carrots is well emphasized by walnuts and dried fruits added to the dough.

  • Soak 50 g of prunes and dried apricots in water - they should stand for at least half an hour.
  • To make the nuts more flavorful, roast them in a pan for 10 - 15 minutes with continuous stirring - 100 g is enough.
  • Grind them in a blender, or even better, chop them with a knife, since you should not bring them to the consistency of flour.
  • Then mix 1 cup sugar with 8 tbsp. vegetable oil, add 1 cup of nectar (peach, orange juice - the main thing, it should be with pulp), add nuts, 150 g of grated carrots and mix.
  • Drain the dried fruits, dry with a napkin, chop finely and add to the carrots.
  • Mix 150 g of flour with a pinch of salt, 1 tsp. baking powder and vanilla on the tip of a knife, pour into the carrot-sugar mixture, mix with a mixer or spoon.
  • Pour the resulting rather thin dough into a baking dish and place in a hot oven (200 ° C) for 35 - 40 minutes.

Let the finished cake cool and decorate as you wish. If it turns out to be high, you can cut it lengthwise and coat with fruit puree or jam, and sprinkle with powdered sugar and cinnamon on top. Dessert for dinner is ready!

But what to do if there were no nuts at hand, but you want to observe the fast? Let's make a very simple orange manna.

  • Mix 200 ml of orange juice (fresh or purchased) with 200 g of semolina.
  • Add 200 g of sugar, 100 g of vegetable oil and 1 tsp. orange peel (you can use dry).
  • Mix everything and leave for 25 - 30 minutes to swell the semolina.
  • Then pour 200 g of flour in portions - it may take less, ½ tsp. soda and a pinch of salt.
  • Mix again - the dough should be of a sour cream consistency, and pour it into a greased form. If desired, sprinkle with breadcrumbs on the bottom.

Bake at 190 ° C for 40 minutes. You can serve manna without decorating, because it turns out to be of an extraordinary bright color!
