Imagine, a couple of centuries ago, farmers bred purple raspberries! They took and crossed red and black raspberries. I didn’t know anything about black either, I naively thought it was blackberry, but here it’s a whole purple one!

In general, under the impression, I decided to make a raspberry pie from puff pastry. I’ve never made one before, so this recipe is my debut in the puff pie arena.

Baking is, of course, not very dietary, but in my defense, I will remind you that raspberries have a bunch of useful properties, and even a child can bake it at home, it is so easy to prepare.

Baking from a minimal set of products!

As I said, the recipe is very simple, it takes 45 minutes to cook. Even faster in a multicooker!

It turns out that the classic puff pastry is supposed to have 256 layers! Can you imagine? Personally, I can't do this, so with a feeling of deep gratitude to the one who relieves me of this laborious process, I take the ready-made dough in the supermarket.

How to make a raspberry pie if the season for these berries has already passed? We spin as we can! If there is no fresh one, then we take frozen, or even jam.

In the latter case, everything will be done in the same way as in our recipe, you just need to remove the sugar.

Ingredients:

  1. Puff pastry - 500 gr;
  2. Raspberries - 500 gr;
  3. Flour - 2 tablespoons;
  4. Starch - 2 teaspoons;
  5. Sugar - 200 gr.

Cooking method:


Perhaps the only problem that can arise during the preparation of this cake is removing it from the mold.

In some places, you may not notice the lack of flour, and since the cake is almost open, you can't turn it over much.

It's berry time now, so puff pastry puffs with raspberries are on the agenda. I have already said more than once that I like to use ready-made puff pastry. It is easy and simple to make all sorts of pastries from it, even a novice hostess can handle it.

I have already told you how I do it. How will this recipe be interesting? It would seem that replace strawberries with raspberries and that's it, there's nothing more to talk about. In that recipe, I used starch as a thickener for the juice that berries release during baking. Here I am using Streusel crumbs, and the shape of the puffs will be different, so I advise you to pay attention to this recipe.

What products do we need:

  • ready-made puff pastry - 500 gr
  • raspberries - 250 gr
  • egg - 1 piece
  • sugar

for crumb "streusel":

  • butter - 20 gr
  • granulated sugar - 40 gr
  • flour - 40 gr

Sometimes you want to cook something for dessert, for tea, without making any special efforts and using a minimum of time. Raspberry puffs are just perfect. We will use frozen raspberries for the filling. It must be mixed with sugar, and in order for the juice to remain inside the puff or to flow out minimally, it is imperative to add starch.

Ingredients

  • 250 g puff pastry
  • 200 g frozen raspberries
  • 2 tbsp. l. Sahara
  • 2 tsp starch
  • 1 tbsp. l. vegetable oil

Preparation

1. If the puff pastry has been frozen, remove it beforehand and thaw it at room temperature. You can also transfer it from the freezer to the refrigerator so it thaws but doesn't melt completely - especially if you plan to start making the puffs in a couple of hours.

2. If the raspberries were frozen, remove from the freezer, thaw and mix with sugar. Thus, it turns out that you can cook puffs with berry filling at any time of the year.

3. Roll out a piece of puff pastry to form a thin layer. Cut into triangles.

4. Place a small amount of raspberry filling on the half of each triangle - 1.5–2 tsp each, being careful not to add too much juice. Some of it will likely run out onto the baking sheet during baking and start to burn.

5. Sprinkle 1/3 tsp on top of the raspberries. starch - potato or corn.

Puff envelopes with raspberries - delicious and tender pastries with fruits. If you do not have the ability, desire or skills to make puff pastry, then you can buy it in the store. Of course, it is better to use homemade puff pastry, but it can take more than six hours to prepare it, so this time we choose the faster method.
Ingredients:
- puff pastry (store) - 250 grams,
- fresh raspberries - 35-40 pieces,
- fresh chicken egg - for greasing,
- granulated sugar - to taste.

How to cook from a photo step by step




1. Remove the finished dough from the freezer and wait until it softens. If the dough is frozen, the envelopes may not rise.




2. Roll out the puff pastry to make a large square. The dough should be thin. Cut the large square into several smaller ones. I got 12 pieces. You can use a knife or a special knife for embossed ends.




3. Prepare the raspberries. Wash it well.






4. Place two raspberries on one small square.




5. Put half a teaspoon of granulated sugar on the raspberries.




6. Take two opposite ends of the square and connect together, then connect the rest of the ends in the same way with the first two. You will have a raspberry envelope.






7. Place raspberries on the rest of the squares in the same way and add granulated sugar.




8. Similarly, connect the ends on each square to make envelopes. Prepare a baking sheet. A silicone mat is a great alternative to a baking sheet. Place the envelopes on a rug and let sit for twenty minutes.




9. Drive one chicken egg into a cup and shake well. Prepare a brush or cotton bandage.




10. Grease each envelope with an egg.






11. Send the envelopes to the oven and bake until tender. When they are browned, remove them from the oven and place on a serving dish.

A very easy-to-prepare recipe for puffs. Gourmets should appreciate the combination of delicate chocolate with aromatic raspberries. You can use any chocolate as a filling for puffs and experiment with a berry.

So, we are preparing puffs with raspberries and chocolate ...

Defrost the dough at room temperature beforehand. Roll out in one direction, not too thin, cut into rectangles with sides of 9x10 or 10x11.

Place the cut rectangles in muffin tins. Dust the bottom of the square a little with starch.

Pour in 1 tsp. chocolate. Grate or chop the chocolate. You can use chocolate drops.

Place 3 frozen berries each. You don't need to put a lot of berries, otherwise the filling will be too sour and may leak.

Pinch the edges of the squares, grease the puffs with yolk and bake in a preheated oven at 180 degrees for about 30-35 minutes, until browning.

Be sure to cool the puffs, then sprinkle with powdered sugar.

The puffs are unsweetened (since I took dark chocolate) with a harmonious combination of chocolate and raspberries.
