Beef marinated in soy sauce and stewed with vegetables comes out very soft, literally “melting in your mouth”, and a successful union of flavor notes adds spice to the dish. If you wish, you can vary the recipe to suit your preferences, for example, adding fresh ginger, sweet pineapples, hot peppers, etc.

Ingredients:

  • beef (can be replaced with pork) - 500 g;
  • soy sauce - 100 ml;
  • flour - 1 tbsp. the spoon;
  • potato starch - 1 tbsp. the spoon;
  • onion - 1 pc.;
  • bell pepper - 1 pc.;
  • mushrooms (honey agarics, champignons, etc.) - 100 g;
  • green beans - 2-3 tbsp. spoons;
  • apple cider vinegar - 2 tbsp spoons;

  • tomato paste (or ketchup) - 3-4 tbsp. spoons;

How to cook beef with vegetables

  1. After rinsing under running water and getting rid of layers of fat, cut the meat into small pieces or long strips.
  2. Making batter. To do this, sprinkle the beef with a mixture of flour and starch.
  3. Pour in soy sauce immediately and mix thoroughly. We leave the meat in this form for 20 minutes.
  4. While the beef is marinating, prepare the rest of the sweet and sour dish. Cut the bell pepper into cubes, finely chop the peeled onion.
  5. We mix beans, peppers, onions and mushrooms (miniature honey mushrooms do not require preliminary cutting, but if you use champignons or other large mushrooms, chop them with plates or strips).
  6. In a frying pan with butter, fry the already marinated beef over moderate heat until golden brown. Next, add the vegetable mix. If desired, you can season the dish with ground pepper, sprinkle with sweet paprika or any spices to your taste. You need to salt the beef quite a bit, since the meat pieces were marinated in salted soy sauce.
  7. Fry the meat in Chinese style with vegetables for about 5-10 minutes, and then add the tomato paste.

The vegetables must first be fried, then adding the rest of the ingredients, you need to bring the mixture to thicken and strain. You can change the ingredients for the sauce as you like. Meat with sauce is prepared with any vegetables to taste. Most of all, eggplants, onions, carrots, bell peppers and zucchini will harmonize well with beef.

Beef in sweet and sour pineapple sauce

Ingredients:

300 g of beef (neck or shoulder);

140 g canned pineapple;

80 g yellow sweet pepper;

Half a carrot;

80 g red pepper (sweet);

Half a tomato;

1.5 tbsp. l. any soy sauce;

1 tsp vinegar;

1 tbsp. l. granulated sugar;

Ground black pepper;

Sunflower or vegetable oil.

Cooking method:

1. Wash the meat, air dry and cut into small steaks. Beat each steak with a hammer, carefully placing the meat in a plastic bag.

2. Prepare the marinating mixture. To do this, pour soy sauce into an enamel cup, add apple cider vinegar. Add sugar and ground black pepper there. Stir the mixture and put the meat in it. Keep in a cool place for several hours.

3. Peel carrots and bell peppers, wash and cut into small cubes. If canned pineapples are ring-shaped, cut them into cubes. Chop the tomatoes in mashed potatoes.

4. Put chopped vegetables (carrots and peppers first) in a slightly preheated pan with sunflower oil and fry. Add tomato puree and canned pineapple along with juice. Season with salt.

5. Simmer the vegetable mixture over medium heat and a closed lid until all the liquid has evaporated.

6. Marinated softened meat should be fried in another pan. To do this, pour sunflower oil into it and warm it up well. Spread the pieces of meat separately and fry on both sides until tender.

7. Put the stewed vegetable mixture in a heap in a serving plate. Put pieces of fried meat on it. Serve the dish hot.

Beef in sweet and sour cranberry sauce

Ingredients:

450 g of beef;

100 g brown sugar or 125 ml liquid honey;

35 ml of apple cider vinegar;

150 g fresh or fresh frozen cranberries;

One medium onion;

A pinch of black pepper;

A pinch of cinnamon;

Two allspice peas.

Cooking method:

1. Rinse the beef, dry and cut into cubes or strips.

2. Place the meat in a saucepan, add hot boiled water there so that it covers the meat by a few centimeters. Turn on strong heat, after boiling, remove all foam and reduce the heating of the burner to moderate. Then simmer with the lid slightly open.

3. Prepare food for the sauce. Sort fresh cranberries and rinse. If using fresh frozen berries, place in a bowl and thaw at room temperature. Cut off the bottom and neck of the onion, remove dry scales and wash the onion, cut it into cubes.

4. Grind allspice peas to a powdery consistency.

5. Take a small saucepan or stewpan and place the cranberries and onions in it. Add a little less than a glass of boiled water and simmer for about 10-14 minutes. Cool the mixture a little and grind into a gruel with an immersion blender. Add sugar, ground pepper, vinegar, salt and cinnamon to the sauce. Simmer for a few more minutes.

6. When the meat has softened a little and the broth has boiled away by 2/3, add the sauce to the saucepan and simmer until thickened.

Beef in sweet and sour cognac sauce

Ingredients:

450 g of beef;

A glass of cognac;

35 ml of apple cider vinegar;

120 ml olive oil;

25 g granulated sugar;

One onion;

20 ml soy sauce.

Cooking method:

1. Fry meat cut into portions in a well-heated frying pan without oil. When the meat acquires a light brown color, pour olive oil into the pan and fry until it becomes “meat with blood”.

2. Add apple cider vinegar, cognac and simmer until tender.

3. Finely chop the onion and fry in a separate frying pan, add sugar and mix well. Add soy sauce and a glass of boiled water. Simmer until moisture completely evaporates.

4. Add the onion sauce to the meat and heat.

Beef in sweet and sour honey sauce with dried fruits

Ingredients:

450 g of beef;

One large onion;

90 g pitted prunes;

80 g pitted dried apricots;

40-50 ml of oil;

1 tsp flower honey or 12 g of sugar;

Ground black pepper.

Cooking method:

1. The meat must be washed and dried. Cut off films and veins. Cut the beef into portions.

2. Peel and wash the onion. Cut in small pieces.

3. Wash prunes and dried apricots and soak in warm water for 10 minutes.

4. Pour sunflower oil into the pan and put it on heat. Fry the meat in a pan with onion until browned. Season the onion with salt and ground pepper.

5. Cut prunes and dried apricots into strips and add to the meat. Pour a glass of hot boiled water over.

6. When the mixture boils, reduce heat to medium and simmer with the lid slightly open (you can even close the lid tightly) until the meat is boiled. This process can take up to two hours.

7. Before finishing the heat treatment add honey and stir.

8. Close the lid and let the meat soak a little with honey.

Beef in sweet and sour red wine sauce

Ingredients:

450 g of beef;

Two onions (white);

Two onions (red);

1 glass of any dry red wine;

110 ml olive oil;

3 tablespoons of soy sauce;

Salt to taste;

Pinch of pepper;

A spoonful of granulated sugar or powdered sugar.

Cooking method:

1. After the initial processing, cut the meat into portions and put in a bowl. Drizzle with olive oil and sprinkle with black pepper. Mix.

2. Put the rooster on the included stove and heat it up a little. Put the meat and quickly fry it until crispy. Put on a plate.

3. Cut onion white and red onions into half rings and put in the same roaster with butter from frying meat. Stir and simmer a little.

Ingredients:

400 g of beef;

Two black peppercorns;

Two peas of allspice;

100 g of parsley root;

50 ml of freshly squeezed orange juice;

1 tsp orange peel;

50 g black currant;

150 ml port wine;

2 incomplete Art. l. wheat flour;

40 g butter;

250 ml of meat broth;

1 tsp honey;

Salt to taste;

A pinch of ground black pepper.

Cooking method:

1. Wash and place the beef meat in the cooking pot. Pour hot water into the meat. Add black and allspice peas, washed and chopped parsley root. When it boils, remove the foam and reduce the heat so that the meat boils a little. Cook until softened, then add salt.

2. When the meat is cooked, drain and strain 250 ml of broth for the subsequent preparation of the sauce. Let the meat sit in the remaining hot broth.

3. For the sauce, you need a small saucepan. Put butter in it and melt. Add flour and stir. Pass a little.

4. Add cooked broth to the sauce and simmer over very low heat.

5. Sort the currant berries, peel, wash and chop in mashed potatoes using a blender.

6. Pour orange juice and port into the broth, add orange zest and currant puree and honey. Stir the sauce and season with salt and ground pepper.

  • green onions - a large bunch;
  • eggplant - 1 small;
  • radish (daikon) - 1 pc .;
  • ginger - 1 root;
  • garlic - 2 cloves;
  • bitter red pepper - half a pod;
  • star anise - 2 dry stars;
  • cilantro - 3-4 branches;
  • soy sauce - 20-30 g;
  • starch - 100 g;
  • dry Spanish sherry - 6-7 tbsp. spoons;
  • vinegar (better - rice).

On average, this dish is cooked for 1 hour. Caloric content (100 g) - 170 kcal.

Recipe for beef in soy sauce in Chinese step by step:

  1. Cut the beef (preferably slightly frozen) into thin pieces of medium size.
  2. Put the meat in a deep glass plate, pour with soy sauce, sprinkle with sherry, sprinkle with starch. Gently mix everything with your hands so that the starch fills the structure of the meat tissue.
  3. Peel the ginger and garlic. Cut the ginger into thin slices, and just chop the garlic, combine them (these are very well combined tastes), add half of the finely chopped hot pepper to this mixture.

  9. After 2-3 minutes, add the eggplants and onions previously squeezed from the juice there, fry together for 5 minutes.
  10. Add a small amount of soy sauce, vinegar, sherry, water and a piece of star anise, let it boil.
  11. Add daikon and simmer everything together for a few minutes. To make the dish thicker, you can add a little starch diluted in water to the pan with vegetables.
  12. Put the meat on the vegetables and mix everything, adding a little sesame oil for taste and shine, and sprinkle with sherry again. We simmer everything together for 5-10 minutes.
  13. Sprinkle the finished dish with cilantro and green onions.

Chinese spicy beef with noodles

Ingredients:

  • a piece of beef pulp - 600-700 g;
  • beijing cabbage - 250 g;
  • garlic - 2 cloves;
  • chili pepper - to taste;
  • onion - 1 medium;
  • ripe tomato - 1 large;
  • paprika - 1 pc.;
  • soy sauce - 30 g;
  • sesame oil - 15 g;
  • lemon juice;
  • cilantro - 2-3 feathers;
  • olive oil for frying;
  • rice noodles - 300 g.
