If we want to cook something delicious for dinner, then puff pastry pies are just what we need. Everyone loves hot, aromatic and delicious pastries. And the pies are just like that. And each time they can be prepared with different fillings. These are meat, and vegetable, and mushroom, and fruit - you can safely choose any. With any of them, they turn out to be very, very tasty.

And if there is also ready-made, store-bought in the refrigerator, then you also do not need to waste time preparing it. After all, it's not a secret for anyone that this is what takes the longest time. And the point is not even that the dough is kneaded for a long time. And the fact that it always takes time to insist. And here I bought a ready-made one, thawed it, prepared the filling, and bake whatever you want.

The shops sell yeast puff pastry and yeast-free. What is their difference, and which one is better to buy for baking.

The yeast-free version has more layers than the yeast version. And since there are more layers, then there is more oil between the layers. That is, it is more fatty and there are twice as many calories in it. In terms of taste, both options are practically the same. But yeast-free dough is somewhat dry, and yeast dough is softer, baking from it turns out to be more fluffy.

Therefore, the yeast-free version is used for baking pastries with sweet fillings - puffs, croissants. it is made from it .. And yeast is just good for not sweet options, as well as for pizza.

Therefore, today we use a yeast base. It must be properly defrosted. This is best done at room temperature. But we must remember that puff pastry contains butter, and if you defrost it hard, the butter will also melt, and the baked goods will not turn out to be layered and tasty.

I try to defrost it in the refrigerator. Knowing that I will bake today, I move it from the freezer to the refrigerator in advance. If I put it in in the morning, then by the evening it is already defrosting, and you can immediately roll it out and cook pastries.

I'll tell you how to cook pies with different fillings. Someone in our house is a meat eater, and someone is a vegetarian. And everyone wants baked goods! Therefore, we will cook for different tastes.

We need (for 16 pieces):

  • potatoes - 800 gr
  • egg - 1 pc.
  • butter - 50 gr.
  • milk (optional)
  • onions - 2 pcs. (optional)
  • sesame seeds - 2 tbsp. spoons
  • salt to taste
  • vegetable oil - for lubricating the leaf


Preparation:

1. Pour potatoes with water, bring to a boil, salt and boil until tender.

2. Now you need to decide what kind of filling you would like to make. There are two options, the first is to use only mashed potatoes for this. The second is to make the filling from mashed potatoes with fried onions. Today I follow the simplest path and choose the first option.

If you want to choose the second option, then cut the onion into small cubes and fry it until golden brown in a little vegetable oil.

3. Potatoes pour over, add butter, potato broth, or milk. When the consistency is desired, add the egg white. Leave the yolk, we need it. For the potato filling, mashed potatoes are better done a little thicker than we do for a side dish.

If you are stuffing with onions, puree before filling. In this case, you can not add butter at all or add less. Taste salt, if it is not enough, then salt to taste.

4. The filling should be allowed to cool down.

5. Grease the table with vegetable oil, and roll out one layer of dough on it. It should be rolled in one direction, away from you, so as not to break the layers. You do not need to press hard on the rolling pin, roll out evenly.

6. Cut the workpiece into 4 pieces. Spread over each significant portion of the filling. In order for the finished products to turn out delicious, there should be a lot of fillings in them.

7. Roll up with an envelope or a triangle.

8. Cover the baking sheet with baking paper, grease it with oil or use a silicone mat, and place the pieces on it. Do the same with the other three layers.

9. Brush with yolk. Thanks to him, the products will turn out to be rosy and appetizing. And sprinkle them with sesame seeds on top for beauty. After all, a dish is first of all determined by its appearance, so we will make it attractive.

10. Put in an oven preheated to 180 degrees, bake for 30 minutes. The finished baked goods should acquire a beautiful golden brown crust.


11. Remove the baking sheet, remove the pies and place in a large, flat dish. Let cool slightly, serve with hot tea.

Pies with potatoes and mushrooms

Similar to the previous recipe, but only in the filling we add mushrooms fried with onions.

We need (for 16 pieces):

  • puff yeast dough - 4 plates (750 gr)
  • potatoes - 500-600 gr
  • mushrooms - 300 gr
  • egg - 1 pc.
  • onions - 2 pcs.
  • sesame seeds - 2 tbsp. spoons
  • vegetable oil - 5 tbsp. spoons
  • salt, pepper - to taste

Preparation:

1. Boil potatoes. Grind it in mashed potatoes, add a little potato broth and egg white.

2. While the potatoes are boiling, cut the onion into cubes and lightly fry it in vegetable oil.

3. Finely chop the mushrooms, any - both forest and store-bought, for example champignons, and pickled and salted, will do. Add them to the onion and fry for 5-7 minutes. Add salt and pepper to taste.

4. Add mushrooms to mashed potatoes, mix.

5. Roll out the layer, divide it into 4 parts, and put on each filling. Fold up with an envelope or a triangle. Do the same with the rest of the test.

6. Place on a baking sheet greased with vegetable oil and lined with baking paper, or on a silicone mat placed on top of it. Brush with yolk and sprinkle with black or white sesame seeds.

7. Bake for 30 minutes, until golden brown. Take out, put on a dish, let cool slightly, and serve with hot tea.

Puff pastries with minced meat

If you prepare minced meat in advance and defrost the dough, then in an hour the whole family will be able to enjoy delicious, aromatic pastries with meat.

We need (for 16 pieces):

  • minced meat -500-600 gr
  • onions - 2-3 pcs.
  • dough - 4 plates (750 gr)
  • egg -1 pc
  • sesame seeds - 2 tbsp. spoons
  • spices, dried herbs
  • vegetable oil - for lubrication


Preparation:

1. Cut the onion into small cubes and add to the minced meat. You can, of course, twist it in a meat grinder, but not worth it. The ground onions are very runny and the minced meat will also be runny. But when we cut it, the minced meat will be the consistency we need. In addition, during the cooking process, the onion will gradually exchange juice with meat, and the filling will turn out to be much tastier from this.

2. Add spices and dried herbs to the minced meat. Ground coriander, rosemary and cumin are good spices. They will give our products a divine scent. You can add any dried herbs, but I add basil and parsley, as well as oregano.

3. Salt and pepper to taste. And add the egg white. We need the yolk to lubricate the baking surface. During the preparation process, it will acquire a beautiful golden color.

4. Thoroughly mix the minced meat until smooth.

5. Roll one layer on an oiled table. Do not forget that we are rolling it in one direction so as not to break the layers. Cut the layer into four parts.

6. Place a significant portion of the filling on each part of the dough. Fold up with an envelope or a triangle. Place on a greased baking sheet or lined with silicone mat.

7. Do the same with the rest of the parts. Grease the finished blanks with yolk and sprinkle with sesame seeds.

8. Bake in an oven preheated to 180 degrees for 35-40 minutes. The pies will brown and become beautiful and very appetizing.


9. Take them out and place on a large flat dish. let cool slightly and serve with hot tea.

Pies with green onions and eggs

With the onset of spring and summer, we all feel a lack of vitamins. And by that time, the first "green vitamins" appeared in our summer cottages - and onions took pride of place among them. We are happy to eat it with a bite to various dishes and with no less pleasure we make a variety of pastries using it. Puff pastries are one of them.

We need (for 16 pieces):

  • dough - 4 plates (750 gr)
  • egg - 6 pieces
  • yolk - 1 pc.
  • green onions - as much as it is not a pity (a good big bunch)
  • sour cream, or mayonnaise - to taste
  • salt to taste
  • sesame seeds (optional)

Preparation:

1. Boil eggs, cover them with cold water and peel them. Cut into small cubes.

2. Chop green onions 0.6-0.8 cm thick.

3. Mix onion with eggs, add sour cream or mayonnaise. Or both in equal proportions. The filling should not come out thin or thick. In the first case, the finished products "float", and in the second they will turn out to be dry and tasteless.

4. Lubricate the table with vegetable oil and roll out the first layer. Cut it into four pieces and place the filling on each piece. We do not regret it, we put more. Fold the blanks with an envelope or triangle. Place on a greased baking sheet or lined with silicone mat.

5. Do the same with the remaining three parts. Brush the pies with yolk and sprinkle with sesame seeds.

6. Bake in a preheated oven to 180 degrees for 30 minutes. They will brown and become beautiful and of course delicious.

Yeast Puff Pastry Recipe

We need:

  • premium flour - 0.5 kg
  • butter 82.5% -350 gr
  • milk -1 glass
  • sugar - 3 tbsp. heaped spoons
  • salt -1 tsp
  • dry yeast - sachet 11 gr


Preparation:

1. Sift flour 2-3 times, for better oxygenation. Set aside 3 tbsp. tablespoons of flour in a separate bowl.

2. Put the rest of the flour in a bowl, add salt.

3. Dissolve sugar in 1/2 part of milk and add to flour. Mix.

4. Dissolve the yeast separately in warm milk. Let stand for a while so that they separate and add the mixture to the flour and sugar.

5. Add the butter softened at room temperature beforehand. Knead the dough, it should be steep enough and well out of hand.

6. Wrap it in plastic wrap and refrigerate, preferably overnight, but not less than 4 hours. During this time, it will double in volume.

7. Take out the finished dough and roll it into a layer 0.5-0.6 mm thick.

8. Spread oil on the rolled layer, leaving 1/3 of a part. Do not smear to the very edges, leave about 1 cm from the edges unlubricated.

9. Screw the unlubricated part onto the greased one. And then cover it with the rest. This will create three layers. Using a rolling pin, roll it without pressing very hard along the entire length of the layer. In order not to break the layers, roll out only in one direction.

10. Then sprinkle the top of the layer with lightly remaining flour and fold it back into three layers. Roll out lightly and refrigerate again for 40 minutes.

11. This procedure should be repeated four times. Only four times. Then we will get the required number of layers.

The finished dough can be stored in the refrigerator for three days and in the freezer for 1 month.

  3. We spread a portion of the filling in the center of each piece.

  4. Lubricate the edges of the dough with egg yolk using a silicone brush.

  5. We connect the opposite edges of the dough diagonally and pinch the pastry along the edges to make a triangle. You can also pinch it into an envelope.

  6. Dip the prongs of a fork in wheat flour and press the edges of the dough with a fork again to create a beautiful pattern.

  7. Line the baking sheet with baking paper and put the pies on it. Let them stand in the refrigerator for 10 minutes. Also at this stage, you can turn on the oven to heat up to 200 degrees.

  8. Then grease the top of each triangle with egg yolk and pierce the dough with a fork in several places.

  9. Decorate the pies with sesame seeds on top. It took me about 20 g.

  10. We send them to the oven and bake for 20 minutes until golden brown. Serve hot for breakfast or for lunch with any first course.

  1. Let's prepare the pineapple filling. Take 320 g pineapple and cut into small cubes.

  2. We send pineapples to a saucepan, pour 60 g of sugar there and simmer them over low heat until soft. Adjust the amount of sugar to your liking, depending on how sweet the pineapples are. Canned pineapples are also good for this recipe.

  3. As soon as the pineapples are juiced, add 8 g of starch mixed with 25 ml of water to the saucepan. This is to make the pineapple juice thicker.

  4. Mix the resulting mass well and cook for a few more minutes until it thickens. Then cool the filling completely and proceed to making the pies.

  5. We dust the table with flour and roll out 480 g of dough into a rectangular layer to the desired size. As a result, the thickness of the dough should be about 3 mm.

  6. Divide the dough into 5 equal strips.

  7. We spread part of the filling on half of the strip.

  8. And then cover it with the rest of the dough.

    Try to keep the filling in the center and not fall on the edges of the dough, otherwise they will not pinch well.



  9. We pinch the pie along the edges, with the back of a fork, or just with your fingers. We form the rest of the pies in the same way.

  10. Put them on a baking sheet lined with baking paper. If you don't have parchment, just grease it with oil. Preheat the oven to 220 degrees. In a separate bowl, mix the yolk of 1 egg and 20 ml of milk.Lubricate the top of the pies with the resulting mixture so that they turn out to be very ruddy and appetizing.
  11. We make small cuts on the pies with a knife and sprinkle with 25 g of sugar. You can use cane sugar to make the crust more appetizing.

  12. We send the pies to the oven and bake until golden brown for 20 minutes. The finished baked goods are very soft and tender inside with a beautiful crispy crust, and the aroma of pineapples is simply indescribable.

  6. We spread the finished pies on a baking sheet. It can be covered with parchment paper or greased with unscented sunflower oil.

  7. In a separate plate, shake 1 egg and grease the pies with it.

  8. Sprinkle with flax seeds or sesame seeds on top. It took me about 20 g.

  9. We put the pies in a preheated oven and bake for 30 minutes until golden brown. Set the temperature to 200 degrees.

  10. The pies are very soft and airy. And if you don't want to turn on the oven, fry them in a pan. Fried puff pastry pies will be crisper and juicier.

Another easy way to make such pies is shown in the video. Please note that it is proposed to cook the filling here all at once in a pan, and the method of forming the pies is also quite interesting.

Every forward-thinking housewife should have frozen puff pastry in the freezer. It helps out all the time, but is quite inexpensive. And put the filling on each square - this is about a heaped tablespoon.

For each square, connect the edges in the form of a triangle. It will be convenient to connect the edges of the pie with a fork, passing along them with teeth.

Put the prepared pies on a baking sheet lined with baking paper.

Beat an egg in a separate container with a fork and brush the surface of each pie with it.

Quick pies are baked in the oven for 10 minutes, the baking temperature is not higher than 170 degrees.

Recipe for puff pastry pies with Scottish meat filling

If you have prepared puff pastry in advance or bought a ready-made one, then the pies can be made in 15 minutes!

I will share with you a recipe for baking, in which the filling is not minced meat, but minced meat mixed with carrots and onions. You can serve such puff pastry pies to the table as an appetizer or as an independent dish.

To make the pastries tasty and crispy, you will need the following ingredients:

350 g of dough from a package purchased in a store; half a kilo of beef; 2 onions; 1 carrot; 30 ml of vegetable oil (preferably olive oil); 300 ml of meat broth; a large spoonful of flour; 1 egg; salt and ground black pepper.

Pies from purchased dough are made according to a recipe, namely:

  1. Pour vegetable oil into a frying pan and fry chopped onions and carrots.
  2. Cut the meat into small cubes and send it to fry.
  3. Keep the filling on the fire for another 5 minutes, then add flour and broth.
  4. Let it simmer and season with salt and pepper.
  5. Simmer the contents of the pan for another 20 minutes, during which time the meat filling for puff pastry pies will be completely ready.

We form pies:

  1. Defrost the dough, leaving it at room temperature for 2-3 hours.
  2. Roll out a layer of dough and cut it immediately into strips, and then into squares.
  3. Put the cooled filling on each piece and blind the edges tightly.
  4. In the oven, which you need to preheat to 200-degree temperature, send the pies laid out on the baking sheet. Be sure to grease raw baked goods with a beaten egg for a shiny finish when done.

The puff pastry pies according to my recipe should be in the oven for 20 minutes. This is enough for the surface of the baked goods to brown, and the filling has already passed the heat treatment and does not require a lot of time to reheat to a high temperature.

I want to note that you can make pies with chicken from puff pastry, it is also fried with onions and carrots, finely chopping it. Now let's learn how to make another puff pastry pies with apples.

Store-bought puff pastry apple patties

The sweet filling makes pies a dessert dish, and for it you can use various fruits, berries, both just picked and in the form of jam. This time, we will consider the option of making puff pastry with fruits, or rather apples, sprinkled with granulated sugar.

Ingredients for baking:

puff pastry packaging (500g); 2-3 apples (depending on size); a glass of raisins; 3 tbsp. tablespoons of sugar; 50 g unsalted butter; a teaspoon of ground cinnamon; lemon fresh and a little flour for the tanning.

Stages of baking puff pastry:

  1. Preheat the oven to 210 degrees.
  2. Take care of the filling, for this finely chop the apples, peeled and core.
  3. Place chopped fruits in a bowl, pour lemon juice over them to darken them, and sprinkle with sugar.
  4. Add butter (half the dose) and raisins to the filling and begin to lay it out on squares cut from puff pastry.
  5. Shape the patties by tightly molding the edges of the blanks, and place them on a baking sheet.
  6. Now send the baked goods to the oven for 40 minutes.

Sweet apple and raisin pies can be served after brushing them with melted butter and crumbling with ground cinnamon.

Pies with jam or jam are prepared in the same way, but they bake a little faster. After 25 minutes, remove the pies from the oven and, after cooling down, treat your friends to delicious homemade pastries.

Cheese pies

Take: one pack of puff pastry; 0.3 kg of hard cheese (like Russian) and an egg.

Step-by-step recipe:

  1. Grate the cheese and mix with chopped garlic if desired.
  2. Roll out a large tortilla from the puff pastry and cut into equal squares.
  3. Put cheese filling in each piece and mold the pies.
  4. Place the baked goods on a baking sheet, apply a layer of the beaten egg and milk mixture, and place it in a hot oven (210 degrees) for 20 minutes.

Pies with cabbage filling

Puff pastry pies with boiled eggs and cabbage should be made from the following ingredients: half a kilo of cabbage; standard packaging of puff pastry; three chicken eggs, salt and ground pepper.

The cooking steps are:

  1. Shred the cabbage and stew it in a deep frying pan.
  2. Boil hard boiled eggs.
  3. Mixing the ingredients in one bowl and bringing them to taste with pepper and salt.

Then:

  1. Preheat the oven to 200 degrees.
  2. Roll out a layer of dough on the table and cut any size squares from it.
  3. Wrap the filling in them, brush the surface with a raw egg and bake for half an hour.

Puff pastry meat pies

Making meat pies is not difficult at all. You will be surprised, but the recipe does not require a solid set of ingredients, plus everything, you can always experiment with the filling, for example, you can take meat of the same type or combine several types at once.

Components: 500 gr. meat or minced meat; 2.5 tbsp. flour; ¾ Art. St. milk; 1 PC. chickens. egg; baking powder; 150 g sl. oils.

Cooking Algorithm:

  1. Sl. I mix butter and flour together. It turns out a crumb. Pour milk and baking powder into the mass. Beat chickens. egg and add to the mixture. Salt. I knead the dough, but simply by holding it together into a homogeneous mass. I leave it for 10 minutes.
  2. I divide the dough into 2 parts. I roll it into layers and grease it with pre-melted sl. oil. I roll the dough in the form of a roll and roll it into a bun. I send it to the refrigerator, let it stand there for about 30 minutes.
  3. I am engaged in stuffing. I make minced meat out of meat in a meat grinder, fry it with onions on sl. butter in a frying pan, salt and pepper are a must. I put seasonings to taste.
  4. I take out the dough, roll it out, cut the blanks into pies. I put minced meat inside the blanks. I split the edges and grease the chickens. egg side dough.
  5. I bake in the oven at 180 gr. about 30 min.

Puff pastry sweet pies

Pies can be baked with a sweet filling. They will turn out to be very delicate. Plus, goat cheese can be used as a filling.

Cooking Algorithm:

  1. I stir flour, salt, soda on the table in the form of a slide. At the top I make a depression where I pour in chickens. egg. I fall asleep sugar. I knead the dough. I leave it on for 10 minutes so that it is soft. I cover the dough, put it in a warm place and leave it aside for half an hour.
  2. I crush the nuts in a special mortar, mix with sugar.
  3. Divide the dough into 6 pieces and sprinkle with flour. I roll it out thinly and grease the sl. oil. Put 1/6 of the filling mixture in the middle. I make a rectangle in the dough and fix the pies in the corners, leaving the edges open. I put the pies on a baking sheet and bake in the oven at 180 gr. about 15 min.
  4. I cool the pies and pour them with honey before serving.

Feel free to use my recipes while experimenting with toppings. Pies can be made with berries or fruits, supplemented with dairy products, meat, cottage cheese.
