When foam appears, add granulated sugar in a thin stream. You can put the glass of sugar next to the beating bowl and add a tablespoon at a time so that the sugar is added gradually rather than spilling out all at once.

At the end of whipping (it takes me 5-8 minutes for the whole process), the egg-sugar mass should look like a thick white foam. Looking into the bowl, it’s even hard to believe that it contains yolks (in appearance, the mass looks as if we are going to bake).

Now pour in the butter in a thin stream (I remind you that the butter should cool to room temperature by this time). Stir again.

Kefir should be preheated and cooled. Add cold kefir to the dough! But even hot can hurt the fact that the eggs curl. Therefore, we either take it out of the refrigerator in advance, or heat it in a saucepan on the stove (or microwave) and cool it. Pour kefir into the dough and mix slightly.

All dry ingredients: flour (250 g), salt (pinch), baking powder (2 tsp), combine together and stir with a whisk. Don't neglect this step if you want lush, evenly rising muffins.

Now we combine dry ingredients with liquid ones with a spatula, trying not to lose air in beaten eggs with sugar. By lifting from the bottom up, we achieve a homogeneous dough without large lumps. Muffins are baked at 180 C for 20-25 minutes. Start checking the readiness from 15 minutes (provided that the hats are already reddened). Cool the baked goods on the wire rack so that the bottom of the cakes does not get damp.
