The taste of the finished products is slightly sweet and the lemonade is not felt at all in the dough. Any filling can be used, both sweet and not sweet. My favorite filling is stewed cabbage with tomato paste and herbs. I highly recommend trying this dough. For this recipe, not only lemonade is suitable, the dough will turn out on any soda or mineral water.

Ingredients:

  • dry yeast - 1 tablespoon with a small slide.
  • wheat flour - 4-4.5 cups.
  • sparkling water (any) - 400 milliliters.
  • ready-made mustard - 1 teaspoon.
  • sugar - 0.5 tablespoon.
  • salt - 1 teaspoon.
  • vegetable oil - 3-4 tablespoons.

How to make soda leavened yeast dough for pies:

Pour carbonated water into a bowl (I have lemonade), add dry yeast, sugar and salt. Stir well, cover with a towel and leave warm for 15-20 minutes to activate the yeast. Use lemonade at room temperature and preferably without bright colors.

After the lapse of time, you should have a foamy cap. This suggests that the yeast is good and the baked goods will be successful.


Add ready-made mustard (mustard will give the dough a subtle note of pungency, which is very harmoniously combined with the light sweetness of the dough). Pour vegetable oil into the dough. The oil must be used odorless.


Gradually add the sifted flour. Pour flour in parts, it may need a little more or less than the specified amount.

Knead a soft dough that does not stick to your hands. Cover with a towel and leave in a warm place for 30 minutes.

I divided the dough into two parts. From one she made pies stuffed with cabbage.


And fried in vegetable oil.

From the other part of the dough, I molded pies and put them in a baking dish, left for 20 minutes to prove, greased with a beaten egg and sprinkled with sesame seeds. Baked at 180 C until golden brown.

Ingredients:

  • high quality flour - 3 tbsp.;
  • cow's milk - 110 ml;
  • mineral water without gas - 45 ml;
  • egg (selected, of the highest category) - 1 pc .;
  • vegetable oil - 5-10 ml;
  • salt.

Preparation

Prepare a table or a deep bowl in advance, in which we will knead the dough. Now we sift the flour with a slide, make a small depression in the middle and drive in a chicken egg. Separately mix warm mineral water with milk and toss in a pinch of fine salt. Gently pour the resulting composition into flour and knead the dough thoroughly with a spoon from the middle to the edges in a circular motion. After that, add a little oil and knead again until you feel a soft, elastic and smooth dough in your hands. We wrap it tightly in a towel and leave for 25 minutes, and in the meantime we prepare the minced meat and proceed to sculpting homemade dumplings.

Traditionally in Russian cuisine, dough for dumplings and dumplings is kneaded in clean chilled water. But if you want the dough for dumplings to be elastic, then it is better to cook it in carbonated mineral water. Another nice bonus: when kneading dough on soda, there is no need to constantly flour the work surface and dough, as a result, the kitchen remains clean.   • chicken egg - 1 piece;
  • salt - 0.5 tsp;
  • sugar - 0.5 tsp;
  • sunflower oil - 4 tbsp. spoons;
  • wheat flour - 0.5-0.7 kg (it is better to have a supply of flour, since how much exactly the dough will take, you cannot say for sure - it depends primarily on the quality of the flour used).

Filling for dumplings:

  • mixed minced meat - 0.5 kg;
  • onions - 1 head;
  • spices (a mixture of ground peppers, coriander, dried dill, salt) - to taste.

The procedure is as follows - first prepare the minced meat, then knead the dough, mold the dumplings and boil them.

Usually dumplings are molded like this: fold the cake in half, forming a semicircle, and carefully pinch the edges with your fingers, forming an even seam. This is the most crucial moment - the seam must be strong so that the dumplings do not open during cooking.

Some housewives sculpt dumplings like store-bought dumplings: first, they carefully pinch the edge, then join the corners of the dumplings together to create a “handkerchief”.

But the most beautiful dumplings (as well as dumplings) are those with the edge made in the form of a pigtail. This is easy to do. First, pinch the seam in the usual way. Then form the pigtail using only the thumb: start the movement BEYOND the seam, passing the phalanx of the thumb through the seam and making a pinch already in the front of the seam.

The movement of the finger should be slightly oblique, upward, as shown in the figure. Try it, you will definitely succeed.

Let's go back to the minced meat. The most popular is mixed mince, which contains both beef and pork. Usually, meat varieties are taken in equal proportions. Thanks to this "trick", the filling for dumplings is not too tough and not too greasy.

Pass the meat through a meat grinder. Peel, chop and chop the onion head with a food processor. Or mince it with the meat.

You can conduct an experiment and add not raw onions to the minced meat, but fried in sunflower oil. The taste of the dumplings will be different, but also great.

Salt, black pepper, other seasonings of your choice - add all this to the minced meat and mix well.

Cover the minced meat with a lid or a towel and start kneading the dough. It is not quite usual with us - we will start it on mineral carbonated water. The dough will turn out to be just magical: soft and elastic. By the way, not only dumplings or dumplings can be made from this mineral water dough, it is also suitable for pies and pasties.

In a large bowl, combine a glass of soda water, one egg, 4 tablespoons of sunflower oil, and half a teaspoon each of salt and sugar. Stir the ingredients and add flour in portions (this is very important!).

Knead a soft dough that shouldn't stick to your hands. Please note that flour should be added gradually. You may not need all the flour. Determine by touch. The dough for dumplings must be thoroughly kneaded with your hands (15-20 minutes), then it will roll out evenly and thinly.

Now pinch off a small piece of dough and roll a sausage out of it. Use a knife to cut the sausage into pieces.

Roll each piece into a thin tortilla, put minced meat in the center (about a full teaspoon).

Pinch the edges well. You can make a simple, strong seam, or a pigtail seam.

Place the blinded dumplings on a floured table or baking sheet. You also need to freeze them, spreading them out at a short distance from each other.

Put water in a large saucepan, add salt and bring to a boil. Throw in the dumplings and cook over medium heat until tender, stirring frequently (especially at the beginning of cooking) with a spoon. 10 minutes after the dumplings boil and float, they can be removed from the heat. Spread the dumplings with a slotted spoon on the plates, sprinkle them with chopped herbs, put a piece of butter - dumplings love it very much. And serve!

Yeast dough for pies and pies is made not only with milk, whey, kefir, yogurt, water, but also with mineral water. The dough is light, airy and very tasty. The culinary portal Art-cooks offers a recipe for dough for pies with green onions and eggs on mineral water.

2. Add flour, stir. Then add vegetable oil, knead the dough on mineral water, it should lag behind the walls of the cup. Cover with a towel, put on the rise, about one hour.

3. Boil the eggs, as usual, for 10 minutes, rinse with cold water, peel, and grate. Finely chop the green onion.

4. Put green onions and boiled grated eggs into a bowl, mix, salt, add vegetable oil, mix again. One of my favorite patty fillings is ready.

5. When the dough rises, transfer it to a floured table. Cut off two-thirds of the dough, we will make a pie from this piece, from the remaining dough we will get 5-6 small pies.

6. Roll out most of the dough into a 5 mm rectangle. Transfer it to a baking sheet covered with baking paper.

7. Put the finished filling on the dough with a spoon, there should be a lot of filling.

8. Pinch the dough very well, on top you can put leaves cut from the dough remnants.

8. Cut the remaining dough into 5-6 small pieces, roll out each piece. Put the filling on the rolled circle.

9. Connect the edges of the pie, pinch well, transfer to a baking sheet with the seam down.

10. Grease the surface of the pie with a beaten egg, you can take only the yolk.

11. Put a baking sheet with pie and pies in a preheated oven, bake at 200 degrees until tender.

12. To make the crust soft, grease the surface of the pie and pies with a piece of butter, cover with a kitchen towel and let stand.

13. Cut the finished pie across into portions.


you can make any filling for pies made of yeast dough in mineral water, both sweet and savory;

be sure to let the dough rise well, the rise time depends on the quality of the yeast and flour, the temperature in the kitchen, the thickness of the dough;

Buy flour with a familiar brand. If you have to take a weight, try making a trial balloon. If the finished base does not float, feel free to get to work.

You can also try another good version of the dumplings dough - but no mineral water is added in it.

  • fine crystalline granulated sugar - 1 teaspoon.

How to make dumplings dough

Put the egg in a convenient container, add the specified amount of sugar and salt.


Stir the ingredients until dissolved and pour in the mineral water.


Shake the liquid mixture slightly. Sift the flour through any fine sieve and immediately add small portions to the mineral mixture. Mix together with a spoon or fork until thick. Pour in vegetable oil. Next, knead the viscous mass with your hands.


Try not to add too much flour, as the dough for dumplings should be soft and elastic. Roll up a bun and wrap with foil.


If you wish, you can simply lightly flour and transfer to a bag with a fastener, or simply cover with a damp cloth on all sides. Leave the dough mass for 20 minutes, let it rest. For now, tackle the filling. After the time has elapsed, remove the elastic dough from the package, separate the desired part and roll it out as it is more convenient.


When offering ready-made dumplings, don't forget to serve sour cream or natural yogurt. Sauces, mayonnaise dressings will be very useful. If you intend to serve dumplings in broth, be sure to reheat. Salt, spices, vinegar have not been canceled.
