How to make herring with onions in sour cream

I propose an excellent appetizer - herring in sour cream with apples. This is a popular and delicious Polish dish. The combination of herring with apple, pickled onion and sour cream sauce is excellent.

Apples for such a dish are better to take sweet and sour, sour cream - high fat. Also process the herring fillets well so that there are no small bones in it. The dish can be tasted immediately after preparation, but it will be most delicious if you marinate the dish in the refrigerator for 3 days.

Cooking a dish according to the recipe "Herring in sour cream":


Step 1

For work, we need a ready-made herring fillet in pieces, a sweet and sour apple, sour cream, mustard, vinegar, sugar, lemon juice, onions.


Step 2

Peel 1 medium onion, cut into thin half rings. Add sugar (0.5 tsp) and vinegar (1 tbsp). Leave on for 10 minutes.


Step 3

Combine sour cream (150 g) with mustard (1 tsp).


Step 4

Peel the apples (150 g), cut into thin slices and sprinkle with lemon juice (1 tablespoon).

Ingredients:
500 grams of salted herring (fillet)
150 grams of apples
Lemon juice
150 grams of onion
1 cup sweet sour cream
3 tablespoons sour cream
1 bunch of dill
Apple and lemon, for decoration

Preparation:
Pour over the fillet with cold water and soak for several hours.
Change the water several times during this time. And at the very end, wet some more
half an hour in cold milk. Then cut into pieces.

Peel the apples, remove the seed chambers, grate the pulp
with thick "eyes" or cut into pieces and sprinkle immediately
lemon juice.

Peel the onion, cut into small pieces, put on a sieve,
rub with sugar and set aside for 2-3 minutes, then pour
a lot of boiling water. Leave to cool.

Mix the onions with apples. Add chopped herring.
Season to taste with salt, pepper and paprika powder.
Mix well. Put in a jar, close the lid
and refrigerate for 1 hour.

At this time, whisk sour cream with a pinch of salt and mix with
sour sour cream. Season to taste with salt and pepper.
Cut the dill and leave a few branches for decoration.
Mix with sour cream sauce. Combine with herring.

Cut apples and lemon into slices. Put on the edge of the plate
covering layers of apples with lemon rings.
Place the herring on this. Garnish with dill and serve.

If you bought a ready-made fillet of salted herring, then we still look at it for small bones and be sure to remove them. (And if you have a herring carcass, then it is very easy to mill it - we cut off the head, fins and tail. And then rip the abdomen and remove the insides. Remove the skin from the fish and remove the ridge, thus, disassembling the carcass into two fillets.
Cut the fish into small slices.




We wash fresh dill greens in warm water and dry thoroughly with a napkin, and then just chop finely.




We wash the lemon fruit with hot water, cut it in half.
Mix sour cream with finely chopped dill and lemon juice.






To make the sauce more fluffy, beat it a little with a whisk. If the sour cream is of sufficient fat content, then the sauce is of good consistency.








Leave the herring in sour cream sauce for 10-15 minutes to soak, and then serve.

Ingredients:

  • one kilogram of fresh frozen herring;
  • one glass of sour cream;
  • 2 heads of onions;
  • salt and spices to taste;
  • greens to taste;
  • vegetable oil - for frying;
  • flour for boning fish.

  1. We defrost the fish at room temperature (do not do it in a microwave oven or in hot water), remove the fins and head, cut off the tail.
  2. We remove the insides of the herring, remove the black film.
  3. We cut the herring into portioned pieces (if you wish, you can remove the seeds, I will not do this).
  4. Salt and pepper to taste, mix.
  5. Peel the onions, cut them into thin quarter rings.
  6. Pour vegetable oil into a frying pan, heat it up.
  7. Roll the pieces of herring in flour, put in heated vegetable oil.
  8. Fry on one side until golden brown, turn over and immediately sprinkle with chopped onions.
  9. Cover the pan with a lid and simmer over low heat until the onion becomes soft and transparent.
  10. Then fill the fish and onions with sour cream. Sprinkle with any herbs (to your taste), cover the pan with a lid.
  11. We simmer the fish in sour cream for about 5 minutes: we need the sour cream to melt. Turn off the heat immediately and you can serve herring in sour cream on the table.

What began to be sold in our stores is far from "spicy salted herring", they began to pack it in vacuum packaging and plastic cans, after consuming all this for a couple of years I came to the conclusion that people completely forgot what "spicy salted herring" is, I had to abandon the store herring.

I grew up in the USSR, there was a normal herring, made according to GOST, not oversalted and did not fall apart in my hands, it is not clear what!

In short, I opted for the "aluther" fresh-frozen herring, it is pretty and large, and most importantly - it shows how many times it was frozen, if not at all beautiful, then there is no point in taking it, but if it asks for it, means IT!

Now we are cutting the herring, I don’t remember who showed it on TV, but an interesting way of cutting, rip the skin off the herring with a stocking, take the herring with both hands by the ends of the tail, twist it a couple of times around the axis, and then spread our hands in different directions!

Bottom line, back fillet in one hand, belly with a ridge, in the other hand. If the fish is fresh, no bones remain in the back file!

The process of removing meat from the abdomen, I think is not worth describing, that's what we have!

Now we take a sharp saber and chop the herring into pieces, not very small, but so that it is pleasant to put in your mouth, about 5x5 mm.

We also finely chop the onion and herbs, if the onion is very "evil", you can put it under boiling water for a couple of minutes, and then squeeze it out to get rid of excess water.

We take a suitable vessel and put everything there, immediately sprinkle with black ground pepper, it is better to grind it yourself, the aroma will be cooler. If you have any other wishes for spices, no question - the owner is a gentleman!

Now we mix everything well, you can let the mixture stand for 10-15 minutes, so that they make friends, or you can add sour cream right away, I gave them to make friends.

While they are friends, let's make mashed potatoes. Drain the water, crush the potatoes, add a glass of hot milk, then a hundred grams of butter, beat with handles until "airy".

What? Does not work? That's right, we hammer in a couple of eggs, do not ... well, according to the technology, we put the yolks, knead, beat the whites into a foam, then add them in mashed potatoes ... fuuu ... I don't want to!

In short, we drive in eggs and beat again, with pens, handles ... Well, not with our own, we take men's hands and beat them!

So, the mashed potatoes are ready, set it aside and begin to rush around the kitchen in search of herring, find it, look for sour cream, we also find it, put it to the herring and stir it!

All! Almost everything is ready, there is a trifle left, you need to eat it beautifully and tasty! Here thin pita bread comes to our aid, we cut off a strip 15-20 cm wide from it. and spread with mashed potatoes, it is still warm and smeared well.

We roll up a roll from pita bread with mashed potatoes and wait for the mashed potatoes to cool down, for this purpose you can push the rolls into the refrigerator, the mashed potatoes are no longer very hot and the refrigerator must withstand such torture!

Cooling, infection, takes about thirty minutes, here I really can't stand it at all, cut off a thin slice of black bread or a loaf, put a warm puree on top, a herring on top and taste!
