First, heat, but do not bring to a boil 60 ml of cream in a small container, add gelatin there and leave for 7 minutes. Then again heat a little and stir thoroughly so that the gelatin is completely dissolved.

Pour the rest of the cream into a small container, add cocoa powder, mascarpone, vanillin, salt and sugar. Bring all ingredients to a boil over medium heat. Then remove from heat and add grated chocolate and beat thoroughly until creamy.

First you need to prepare the baked pear dough. To do this, you need 150 g of cold butter, 150 g of cottage cheese (drier), also cold, and 150 g of sifted flour, chop into crumbs with a blender, add a pinch of salt. Then add 1 egg and the zest of half a lemon and quickly knead the dough (it should not be homogeneous), form a ball, sprinkle it with flour a little, wrap it with cling film and place in the refrigerator for several hours.

Then you need to peel 3-4 pears without cutting off the tails, gently take out the core with a coffee spoon and cut a small piece from below with a knife to achieve stability. In a saucepan, mix 300 ml of water, 4 tablespoons of sugar and 2 tablespoons of freshly squeezed lemon juice, put pears in the prepared syrup and put on fire for 15 minutes.

Always use only clean water for cooking.

Remove from heat and cool pears in syrup, then pat dry with paper towel.

First you need to prepare the dough for the base of the cakes. To do this, cut 100 g of butter into small cubes, then add 200 g of sifted flour with a pinch of salt and chop with a knife or using a food processor until crumbs are obtained. Mix 250 g of Mascarpone cheese with the yolk mixture. Beat the chilled 3 egg whites with 20 g of sugar separately into a stable foam and one spoon at a time, gently stir in the Mascarpone.

Then you need to prepare the Savoyardi impregnation syrup. To do this, melt 30 g of sugar in a small saucepan with a thick bottom until a thick brown syrup is obtained, pour in 2 tablespoons of boiling water and 150 ml of milk. Then take 4 apples, peel them and cut into small pieces. As well as for making syrup, you need to melt 75 g of sugar, pour in a little boiling water.   • pistachio paste - 30 grams;
  • fat cream - 70 milliliters;
  • white chocolate - 150 grams;

  6. Mix almond flour with icing sugar and sift.
  7. In a bowl with sifted flour, add half of the proteins - 55 grams and mix with a spoon.
  8. After dissolving sugar in water, boil the syrup: after boiling, boil it for 5 minutes until it reaches 118 degrees. In the absence of a special thermometer, check its caramelity with your fingers: drip onto the skin of your finger, press with the second and gradually open - stretches with a long thread - ready; torn to cook more; breaks down - digested.
  9. Whisk the remaining whites while boiling the syrup.
  10. Pour the hot syrup in a thin stream while whipping with a mixer into the whipped egg whites, add the red dye and continue whisking until the whole mass becomes even, smooth and shiny.

  15. Ready-made cookies are easily removed from the paper while hot. Transfer to a dry and level surface until it cools completely.
  16. While the blanks are cooling, beat the chilled ganache for the last time, put it in a pastry bag. On the cooled circles of macarons, plant ganache in even portions, on it a circle of cookies, slightly pressing down on it from above. Ganache again - and the last layer of cookies. This makes 3 cookies and 2 layers of ganache. Ideally macaroons are of the same height.
  17. Pour the balls of powdered sugar into a separate plate and roll each macaroon on it so that the white balls of powdered sugar stick to the cream.

Put the finished cakes in a suitable closed container and put in the refrigerator for 1 day, excluding freezing, and half an hour before serving, take them out of it completely shaped to taste. You can decorate French macarons with ready-made New Year's decors, in the assortment presented in the country's supermarkets.
