Sour cream gives the coffee cake extra moisture and a perfect crumbly texture. The cheesecake filling is just a mixture of cream cheese, sugar, egg, and a splash of vanilla. Cinnamon crumb filling and topping from just one mixture. It's a simple combination of ghee, brown sugar and cinnamon.

Easy Cinnamon Coffee Cake is an easy and quick recipe for a delicious homemade coffee cake from scratch.

The composition of the product

For Cinnamon Crumbs:

1 1/2 cups flour
¼ Glasses of sugar
½ cup light brown sugar
2 teaspoons of cinnamon (or more to taste)
A pinch of salt
½ cup unsalted ghee

Cream Cheese Filling:

8 oz. cream cheese-softened
5 tablespoons of sugar
1 egg
½ teaspoon vanilla

for cake:

1 1/2 cups all-purpose flour
1 ½ teaspoon baking powder
½ teaspoon baking soda
1/4 teaspoon salt
6 tablespoons unsalted butter - softened
2/3 cup sugar (I used 1/3 cup light brown sugar and 1/3 cup granulated sugar)
2 eggs
1 1/2 teaspoons vanilla extract
3/4 cup sour cream

For glaze:

3/4 cup caster sugar
2 tablespoons milk
1/2 teaspoon vanilla extract

Instructions

To make the crumb topping, mix both sugar, flour, cinnamon and salt. Add the melted butter and stir with a fork until the mixture is crumbled (make sure the streusel is in pea-sized crumbs). Place in refrigerator until ready to use.
Preheat oven to 350F. Butter and flour 9-inch springform pan. Postpone.
To make the filling: Combine cream cheese and sugar on medium speed until creamy. Add the egg and vanilla to the end of the mixture on a low, just combine. Postpone.
To make cake dough, stir in flour, baking powder, baking soda and salt in a bowl and set aside.
Using an electric mixer, add butter for a minute, then add sugar and stir until light and fluffy. Add eggs and vanilla, stir. Mix with sour cream. Stir in flour mixture slowly.
We spread half of the dough on the bottom of the prepared pan, smooth it with a spatula (this will be a very thin layer). Sprinkle with less than 1/2 crumbs. Leave the rest to top up.
A spoonful of cream cheese filling over the crumbs, but don't go all the way to the edges.
Using a spoon, gently spoon the remaining dough on top of the cream cheese and spread as much as possible using the back of the spoon.
Then sprinkle the remaining crumbs on the sprinkles and bake for 50-60 minutes, until the cake stops drooping in the center. If the top browns to quickly, you can tent it with aluminum foil after 35-40 minutes of baking time.

To make a cake, we need to take such products

For apple filling:

  • 1 kg of ripe apples
  • 0.5 cups (200 ml) sugar (regular or brown).
  • 400 grams of wheat flour,
  • 200 grams of butter
  • 2 tbsp. tablespoons of sour cream (fat content to taste),
  • 1 teaspoon baking powder (can be substituted with baking soda).

For cinnamon cream:

  • 2 chicken eggs
  • 180 grams of sugar (plain or brown)
  • 2 tbsp. tablespoons of wheat flour
  • 0.5 liters of milk (fat content 3.2 percent),
  • 1 bag of vanillin,
  • 180 grams of soft butter
  • 1 teaspoon ground cinnamon

To decorate the cake:

  • 0.5 cups walnuts
  • 1 bag of glaze (chocolate TM Haas)
  • Chocolate chips optional.

How to make apple cake:

  1. Rinse the apples, dry them with a clean kitchen towel, and cut them into thin slices. Pour three tablespoons of water into a saucepan, add half a glass of sugar and put apples.
  2. We put the pan with apples and sugar on the fire. After boiling, reduce the power of the fire and bring the apples to softness (under the lid). We put the apples on a sieve, filter and cool.
  3. Cooking the dough. Mix flour (preferably sift several times) with baking powder. Add sour cream (fat content to taste), pieces of butter to the dry mass and knead the dough. Divide the resulting dough into nine parts.
  4. Roll out the pieces of dough into rectangles (approximate size 15 x 20 cm). On each rolled layer (on the side), put the apple filling, cover with the free part of the dough and splice the edges. We will have nine filled envelopes. We spread the blanks on a baking sheet (grease them with oil in advance) and put them in a preheated oven for 15 minutes. The cakes should be baked at 180-200 degrees. Remove the finished apple cake blanks from the baking sheet, transfer to a flat plate and cool.
  5. For the cream. In a bowl, combine eggs with sugar, flour, milk and vanilla. Beat, pour into a saucepan and cook with constant stirring over low heat until thickened. Cool it down.
  6. Whisk the butter in a bowl and add the cooled cream in portions (whisk when adding). At the end of whipping, add ground cinnamon to the cream.
  7. We collect the cake. Put three apple cakes on the dish, coat with prepared cream. We put three more cakes on top, coat with cream. Three more on top, also grease with cream. Don't forget to smear the sides of the cake. Sprinkle the cake with walnuts. You can also decorate the cake with hazelnuts or peanuts - to taste and desire.
  8. For chocolate glaze. Dilute a bag of glaze in hot water (see instructions) and mix until smooth. We decorate the cake with the resulting chocolate mass. You can make your own chocolate icing if you wish.
