First, we put a full kettle of purified water on medium heat, let it boil. We don't waste a minute, we take a small pumpkin weighing one kilogram, rinse it, dry it with paper kitchen towels, put it on a cutting board and cut it into 2 equal parts with a sharp kitchen knife.

With a tablespoon, remove the seeds with fibers from this vegetable and remove the hard peel. Then cut the pulp into medium cubes, slices or blocks of 1.5 to 2 centimeters in size and move them into a clean dish.

Then we rinse the tomatoes, make a cross-shaped incision on each, put them in a deep bowl, pour boiling water from a kettle, so that they are completely covered, and leave in it for 40-60 seconds. After that, put the tomatoes in a bowl of ice water, cool, dry, carefully remove the peels from the tomatoes, divide them one by one into 4–6 equal parts, put them into the blender bowl and grind them at high speed until they become liquid puree.

Now we remove the stalks from the bell peppers, gut them from seeds, rinse them, dip them with paper towels and chop them into strips or pieces of arbitrary shape up to 1 centimeter thick.

Then peel the onions, carrots and garlic. We also rinse them under trickles of cold running water, dry them, take turns moving them onto the board and grind them. The first in cubes, quarters or straws, and the second in rings, half rings, or just chop on a coarse grater.

We squeeze the cloves through a special press into a small bowl. After that, put the rest of the ingredients on the countertop and proceed to the next step.

Step 2: prepare the pumpkin vegetable stew.


We put a deep frying pan, cauldron or non-stick pan on medium heat and pour in the required amount of vegetable oil. After a few minutes, dip the onion and carrots into well-heated fat and fry them until tender golden brown for about 4-5 minutesstirring constantly with a wooden kitchen spatula. As soon as these vegetables are slightly browned, add pumpkin with bell peppers to them. We loosen everything to a uniform consistency and simmer 5 minutes.

Then we season the semi-prepared dish with ground tomatoes, squeezed through a press with garlic, paprika, laurel leaf, salt and two types of pepper: chili flakes, as well as ground black. Mix everything again, cover with a lid so that a very small gap remains, and simmer over a very low heat 30 minutes, for which the stew is completely cooked. As soon as it reaches the desired consistency, all the components of the food will soften, becoming tender, turn off the stove and let the fragrant food brew 10-12 minutes... Then we lay it out in portions on plates and begin to taste.

Step 3: Serve the pumpkin vegetable stew.


Vegetable ragout with pumpkin is served hot as the second main vegetarian dish, although cold it can be served as a good appetizer-salad or a side dish with meat, poultry, fish or game.
