  • A pack of low-fat cottage cheese - 180 g
  • Thick curdled milk 8.5% - 1 tbsp. spoon - 40 g
  • 2 selected eggs
  • Wheat flour - 270 g (200 g + 70 g)
  • 1/2 tsp salt
  • Soda 1/2 tsp

Filling products

  • White cabbage - 370 g
  • 2 eggs
  • Milk 3.5% - 60 g
  • Salt to taste

How to prepare the filling

  1. Grind the white cabbage into a shredder.
  2. We put it in a saucepan or deep frying pan, add water, about 100 ml, salt.
  3. We put to simmer over low heat under the lid.
  4. Boil eggs hard-boiled.
  5. When the water in the cabbage boils away, add milk (this is about half a glass) and simmer until the milk evaporates and the cabbage becomes soft. Stir occasionally.
  6. Put the cabbage in a bowl, chop the eggs here, mix. Add salt if necessary.
  7. We divide the entire filling into 6 parts.

How to make diet dough

  1. Put cottage cheese in a saucepan or a large bowl, break 2 eggs, a full tablespoon of yogurt (you can replace no more than 10% with low-fat sour cream).
  2. Add salt and soda quenched with lemon juice.
  3. Mix thoroughly. This is especially important if the curd forms lumps. Then you can beat everything with a blender until flour is added, everything mixes well.
  4. Pour in flour, sifting it through a sieve. Pour in 200 g in total.
  5. Knead the dough. It turns out to be quite sticky.
  6. We put it on a silicone mat. It will stick to your hands, then slightly dip them in flour.
  7. Now we measure another 60-70 g of flour for rolling.
  8. We divide the whole dough with a knife into about 6 identical parts. Flour in 6 parts.
  9. We take each piece of dough, a portion of flour on it and roll out a circle with a rolling pin, about 0.5 cm thick, pouring the dough from one side or the other to the rolled cake, so that it does not stick to the rolling pin. I got cakes with a diameter of about 15 cm.
  10. We put the filling in the middle. Blind the pie, put it on a baking sheet.
  11. When all the pies are molded and laid in a brazier, grease them on top with a mixture of half a teaspoon of egg yolk and half a teaspoon of vegetable oil (you can only use butter or only yolk).
  12. We put the pies in a preheated oven, bake at 180 degrees for 35-40 minutes.

I did not take pictures of the cooking process, I was covered in flour, during the preparation I weighed, calculated and wrote down everything, and the assistants only came running to eat. Therefore, the details are in words.

So, the subtleties of dough preparation. If you immediately add all the flour to it, or make a recipe according to the principle: "how much dough will take", then it will take oh how much, not less than 350-400 g of flour. And at the same time, the pies can turn out to be dryish or harsh. But when there is little flour, the dough is very sticky.

If you sprinkle flour a little bit with the sticky dough during rolling, then the dough will roll out well and remain plastic, not rubber. It is unlikely that you can roll out all the dough into one large pie, it will rather break when laid out in a mold ...

The amount of filling that I bring is great! On pot-bellied pies: I roll out the dough thinly, I put a lot of fillings. And I put it so that my pies do not get empty asses around the edges from one dough. Those. the filling is not in the middle of the pie, stuffed to the brim. By the way, pies do not fall apart during cooking, do not creep or crack.

Another caveat - ovens bake in different ways, if your oven dries the dough a lot, you need to put a wide pan of water under the baking sheet with pies. After the pies are baked, I grease them with a brush with a drop of vegetable oil.

If you divide the filling and dough into even parts, then the nutritional value of the pies can be calculated very accurately per 100 g of the pie.
