  • ½ teaspoon sugar
  • 2 tbsp. tablespoons of vegetable oil
  • 1 medium turnip
  • 500 g fresh mushrooms
  • 1.5 tbsp. tablespoons of bread crumbs

How to make sour cream pie with mushrooms:

  1. Start by making the filling. To do this, wash the mushrooms well. If you are lucky enough to collect or buy butter, remove the thin skin on the cap from them, and only then rinse. If you are using champignons, chop them into slices. Small forest mushrooms can be cut in half, quartered or boiled whole. From large specimens, you need to cut off the leg, divide it across into 3-4 pieces.
  2. Boil the champignons for 10 minutes, let the forest mushrooms boil for 30–40. Throw them in a colander, leave in this form for a short time to glass the water. During this time, you will have time to finely chop the peeled onion and fry it until golden brown in a pan with vegetable oil. After that, lay out the mushrooms, fry them for 10 minutes, stirring occasionally. Then add 2 tbsp. tablespoons of sour cream and simmer for 5 minutes. Leave the filling to cool and start making the dough.
  3. Place the oil in the microwave for a minute, turn it on at full power so that it becomes soft. You can remove it from the refrigerator 1 hour before cooking to make it more plastic. Add sour cream, 2 eggs, salt, sugar to the butter and whisk the mixture lightly until smooth. Add flour, replace the dough, it should become smooth. Put it in the refrigerator for half an hour.
  4. Divide the dough into 2 parts, the first should be slightly larger than the second. Roll the first one into a layer so that it is 3 cm larger in diameter than your form in which baking will take place. Grease it with butter, sprinkle with breadcrumbs.
  5. Put the layer in the prepared form, fold its edges up, put the filling on it. Roll out the second layer of dough, cover the filling with it. Beat the egg, grease the surface of the pie, and send it to the oven, preheated to 180 ° C, to bake at this temperature for 35-40 minutes. After that, you can take it out and taste it.

To make the right mushroom pie, it's important to be clear about the recipe. If this is your first time baking pies, then choose the simplest recipes.

Filling

Mushroom filling for pies is of great importance. It can be made with mushrooms, mushrooms, white mushrooms and others. For a change, you can combine them with other products. Mushroom pies are very tasty, to which are added:

  • meat or chicken;
  • minced meat;
  • vegetables, herbs;
  • cottage cheese or cheese.

Dough

The most common and popular mushroom pie dough is yeast. For its preparation, live yeast is used, but an inexperienced cook will not be able to cope with it. It is much easier to purchase dry yeast from a nearby store, which only needs to be diluted with warm water. Putting the yeast dough is simple, however, you have to wait until it rises, but at this time you can prepare the filling. If you want something unusual, try other test options:

  1. Always preheat the oven to the desired temperature, then the dough will not have time to settle, the baked goods will be high and fluffy.
  2. Fry the mushrooms so that all excess moisture comes out of them, in pies it is useless.
  3. Do not add too many vegetables to the filling, otherwise the mushroom flavor will be lost.
  4. Make sure that the expiration date is correct. The yeast must be fresh, otherwise the dough will not rise and the dish will spoil.

  6. Potato starch added to flour will help to achieve splendor.
  7. To help the dough rise faster, remove the ingredients from the refrigerator beforehand so that they warm up at room temperature.
  8. Do not soak yeast in cold water or boiling water. Enough temperatures of 30-40 degrees.
  9. Knead the dough with dry hands.
  10. To prevent the bottom of the mushroom pie from burning and to be dry, sprinkle a small amount of starch on the pan.
  11. To create a beautiful shiny crust on the baked goods, brush it with a beaten egg.
  12. If you cooked a cake on shortbread dough, be sure to let it rest and cool down, then the dish will not crumble.
  13. Never add salt to the dough right away, first it should rise and infuse.
  14. If the cake is tall, bake it over low heat. This will completely bake the filling and nothing will burn.

Autumn recipes continue! What else is autumn rich in besides fruits, vegetables and bright colors? Of course, mushrooms. As my friend said: "Autumn is the time for photographs of mushrooms in all gadgets of the country." And if in the coming weekend you picked up milk mushrooms, honey mushrooms, aspen mushrooms, and maybe even boletus mushrooms, washed a whole bath of forest gifts, salted and pickled everything that you could, and there is still a little bit left, then you have come to the right place. Let's prepare a mushroom pie according to the recipe with a photo. But even if you do not have forest delicacies, but you want a pie, buy frozen or fresh mushrooms in the store, or you can even oyster mushrooms and it will be in the hat.

  • Butter - 150 g.
  • Wheat flour - 310 g (two full glasses of 250 ml.)
  • Sour cream 20% fat - 3 tbsp. spoons

Ingredients for the filling:

  • Boiled potatoes - 3 pcs. (large size)
  • Butter (for making mashed potatoes) - 30 g.
  • Champignons (can be replaced with other mushrooms) - 250-300 g.
  • Bulb onions - 1 pc.
  • Vegetable oil for frying - 4 tbsp. spoons
  • Salt, spices to taste

How to make a pie with mushrooms (step by step recipe with a photo)

Grate cold butter (150 gr.) In sifted flour.

The butter should be very cold. You can hold the oil in the freezer for a few minutes to rub it easily.

Rub butter and flour with our hands to a crumb state.

Add 3 tbsp. spoons of sour cream. First stir with a spoon, then put the spoon aside and knead the dough with your hands.

The dough should be soft. We roll it into a ball, wrap it with foil and put it in the refrigerator for 20 minutes.

While the dough is resting in the refrigerator, prepare the pie filling.

Oven Mushroom Pie Filling

Mushrooms (champignons in this recipe, others can be used), rinse, cut into large pieces.

The most popular mushrooms - champignons - are good because they are available. They can be bought at any time of the year in any supermarket, so you can delight your family with this delicious cake all year round!

Finely chop the large onion.

Pour oil into the pan (2-3 tablespoons), heat it up. We spread the mushrooms, fry until golden, appetizing color. Then add finely chopped onion, fry a little more until the onion is tender. Remember that you need to salt and pepper to taste.

Boil the potatoes until tender, knead, salt, pepper, add a piece of butter (30 gr.)

We cover the baking dish (I have a round one, with a diameter of 24 cm) with parchment.

Roll out the cooled dough on a surface sprinkled with flour. Lean the pan in which you will bake the cake, press down slightly to get an outline print. Trim off excess dough. Transfer the finished cake to the mold (for convenience, you can wind the dough on a rolling pin).

Pierce the dough crust over the entire surface with a fork so that the dough does not puff up during baking. Lay out the potato layer, spread evenly.

I use mashed potatoes in this recipe. But there are options for making this pie, when raw potatoes are cut into rings and placed in the first layer under the mushrooms. You can try doing both).

The next layer is mushrooms with onions.

The final step will be to grease the filling with sour cream (2-3 tablespoons will be needed). Thanks to sour cream, the surface of the pie will turn out to be appetizing and juicy, without a dried tough crust.

We send the cake to a preheated oven at 180 C. Baking time is 30 minutes. The doneness of the pie is determined by the brown appearance of the dough and crust. Remember that the filling is almost ready.

Pie with mushrooms and potatoes is ready to go to the table! Hearty, fragrant, truly autumnal! Mushroom pie can be served in place of bread for soups, or as a substitute for a regular meal, served with hot tea.

Enjoy your meal!
