What to cook from boiled squid. How to cook squid for salads and other dishes? How much to cook squids so that they are soft and delightful

Squid are known for their delicate flavor and health benefits. It is an excellent source of protein, iodine, phosphorus and other elements that all marine life is rich in. But unlike them, squid do not have a specific "fishy" smell.

The meat of these seafood is delicate and cooks very quickly, it is enough to overexpose them on the stove for at least a minute, so that the squid turns from a delicate delicacy into a rubber sole. Therefore, many do not dare to cook squid fresh or frozen, preferring less healthy, canned and dried products. However, dishes made from fresh and frozen squid are distinguished by the most delicate taste, very nutritious and healthy.

These seafood is added to salads, from which you can prepare a variety of snacks, soups and other dietary dishes, mainly of Mediterranean and Asian cuisine.

Food preparation

To make the squid tender and juicy, you need to choose the right product and prepare it for further processing. You need to do this as follows:

  • defrost frozen carcasses on the bottom shelf of the refrigerator or at room temperature;
  • put seafood in a deep bowl and pour boiling water over;
  • wait until the skin curls up, and separate it from the carcass;
  • remove the insides and spine (transparent septum inside the squid);
  • rinse under water;
  • if desired, marinate in lemon juice and spices;
  • proceed with further cooking.

Cooking methods

The main method used by chefs to prepare these seafood is cooking. In addition, they are baked, stewed, fried on the stove, in the oven or in a slow cooker.

In order not to spoil the product, you need to remember that squid meat is cooked for no more than 3 minutes. If you overexpose them in water and the meat becomes tough, continue cooking for another 30 minutes, so the seafood will become soft, but lose its beneficial properties.

Cooking

There are several ways that will allow you to cook squid correctly, preserve their useful properties and delicate taste:

  1. The easiest option is to boil the water with the addition of spices. Bay leaves, black peppercorns and many other spices are well suited to squid. Place seafood in boiling water and cook for 2-3 minutes. Take out and discard in a colander or sieve to glass the water.
  2. Bring the water with the addition of spices to a boil, turn off the heat and put the peeled squid in a saucepan, keep under a closed lid for 10 minutes.
  3. Another way to get tender and soft squid meat. Place the carcasses in a saucepan, pour boiling water over them so that it completely covers them. Close the lid and wait a minute. Then drain the water and pour boiling water over again, wait another minute and discard the squid on the net to glass the water.
  4. You can also cook squid in a double boiler - cooking time 7 minutes and microwave at full power for 1-3 minutes.

Squids prepared in this way are used as a separate dish, lightly seasoned with spices and lemon juice, they are stuffed and added to salads.

Extinguishing

Braised squid can be cooked alone or combined with a variety of ingredients such as vegetables, other seafood, meat or fish. Thus, you can quickly prepare a light, healthy dinner dish.

It is important to remember that squid is added at the very end of cooking, otherwise the meat will become tough and tasteless.

Baking

These seafood are baked on their own or as part of more complex dishes - fillings for pies, rolls, cutlets. But most often stuffed squid with sauce is cooked in the oven.

Cooking time 20-30 minutes depending on the size of the carcass and the filling used. Prepare dishes on the grill, wire rack, and in foil.

Frying

Squids are fried in different ways: in crispy breadcrumbs, in beer or egg batter, with onions and eggs, mushrooms, sour cream, garlic or soy sauce. For frying, use vegetable or butter, cooking time no more than 3 minutes. After frying, cover the pan with a lid, remove from heat and leave for 15 minutes.

Be sure to place the fried calamari on a paper napkin that will absorb all the excess fat. The dish is served with a variety of savory sauces and herbs. Before frying, the squid can be lightly beaten with a hammer and cut into rings.

In a multicooker

Cooking seafood in a multicooker is very simple, all you need to do is prepare and clean the carcasses correctly and select the desired mode. With this oven, squid can be fried, stewed, boiled and baked. To do this, use modes such as "Cooking", "Pilaf", "Frying". Cooking time ranges from 2 to 10 minutes and depends on the dish and the size of the squid.

Delicious squid dishes

Boiled squid is served as a separate dish, for this it is enough to sprinkle them with vegetable oil and lemon juice. They are also added to salads and fillings for tartlets, pies, pancakes. Squid rings fried in batter or breadcrumbs are the ideal low-calorie beer-accompanied snack.

In addition, the following main dishes are prepared from squid:

  • stewed seafood with mushrooms, vegetables, olives in sour cream, cream, wine or tomato sauce;
  • cutlets, for which mince is made with the addition of onions, garlic, eggs and spices, are fried in the oven or in a pan;
  • stuffed squid baked in sauce with cheese - rice, mushrooms, other seafood, fish mousses, vegetables, cheese, avocado are used as the filling;
  • calamari rings fried with onions;
  • soups - vegetable, fish, cream soups with the addition of cream;
  • risotto - can only be cooked with squid or add any other seafood to taste.

Salads are a separate and, perhaps, the most popular category of dishes with the addition of squid. There are many recipes for salads with squid. And you yourself can easily come up with your own signature recipe, because squid is combined with a large number of different products - lettuce, fresh vegetables, red onions, garlic, fried and pickled mushrooms, avocados, any seafood, eggs, cheese and many others. Sour cream, natural yogurt, olive oil, mayonnaise, lemon juice and soy sauce are used as a dressing.

The subtleties of cooking squid

Squid meat requires a very delicate attitude. Many people are afraid to cook it, once they spoil this product. It is easy to digest or left raw, in any case the result will be negative. To prevent this from happening, it is enough to remember a few useful tricks:

  • if the squid is boiled for more than three minutes, it will become tough. In this case, they continue to cook it for another 30 minutes, the meat will be soft, but most of the vitamins will disappear;
  • you need to fry this seafood no longer than 2 minutes, then turn off the heat and leave under the lid for another 5 minutes;
  • squid meat is briefly marinated in lemon juice before cooking;
  • fried boiled or raw;
  • you do not need to cook squid for a long time before frying, it is enough to wait for the water to boil again and turn off the heat;
  • small squids have tender meat;
  • pies stuffed with these sea creatures are best served cold so that they have time to soak well;
  • squid meat easily absorbs the flavors of neighboring ingredients, so you need to be careful with the amount of spices.

Mediterranean cuisine is no longer a novelty for us, and squid is an integral part of it, like other seafood. They are not only tasty, but also very useful, especially for those who care about their figure. Each housewife has several recipes for this seafood. But do we know how to cook squid correctly? Here are some tips to help you get through this task easily and error-free.

Selection rules and preparation of squid for cooking

Squid can be bought today in almost any supermarket. Most often they are sold frozen, with or without tentacles of your choice. During storage, squid carcasses cannot be thawed and cooled again, otherwise the product will be hopelessly spoiled: a bitter taste and an unpleasant fishy smell will appear in it. In addition, during cooking, the squid will creep and foam when cooking.

If stored correctly, the squid will be firm, the meat is white, and the top rind is pink-brown or grayish-purple.

When stored correctly, the squid carcass has this color

Please note: when choosing squid in the store, give preference to unpeeled carcasses. It is by the skin that you can determine the freshness of the product and the correct storage. A grayish or yellow skin, from under which meat with an irregular shade is visible, is a sign of stale squid.

If you are confident in the freshness and good quality of the squid, you can buy peeled carcasses. There will be practically no hassle with them: there is no need to peel the skin off, which means that the cooking process will not take much time.

The easiest way to clean frozen squid is with boiling water. Just pour boiling water over the carcasses or immerse them in it for literally 1-2 seconds. The film that covers the carcass will immediately curl up and you can easily remove it, and the remains can be washed off in cold running water. Also peel the wings off. The chitinous plates inside the squid also need to be removed.

Peeling squid is a must if you plan to use their meat for salad.However, this is also useful for other dishes: the skin can add a bitter taste and hardness, and the plates are generally superfluous.

Cooking features

The main thing to remember in the cooking process is that the squid should be boiled for no more than 2-3 minutes. Otherwise, the meat may acquire a "rubber" consistency and lose a lot in taste. When the squid completely turns white in boiling water, it is considered ready.

It is most convenient to cook squid carcasses in small portions. Dip 1–2 carcasses into a pot of boiling water, take out and place the next ones. Moreover, during cooking, you can use, in addition to salt, any seasonings and spices: pepper, dill, parsley, cloves, basil.

The finished squid carcass turns white

There are several simple ways to boil squid.

  1. Place a pot of water over high heat, add salt and spices to taste, and bring to a boil. Put a couple of carcasses in boiling water and keep it for no longer than 3 minutes. Remove with a slotted spoon.
  2. Boil 1–1.5 liters of water, add salt and spices. Lower thawed and prepared carcasses. Cover the pot with a lid and remove from heat. After 10 minutes, the meat is infused and ready. With the gradual cooling of the water, the squid carcasses will not become tough.
  3. If you have a lot of squid meat, use this method. Pour as much water into a saucepan as needed to fit all the meat, salt and add spices. When the water boils over high heat, dip the prepared squid into it. Wait for the water to boil again, cover the pan with a lid, remove from heat and let it brew for 5 minutes. The water can then be drained off.
  4. You don't need to defrost the squid before cooking. In this case, the carcasses are immersed in boiling water for 1 minute, after which the pan is removed from the heat and soaked in water for 3-4 minutes.
  5. If you don't want to peel the squid before cooking, you can put it in the boiling water straight from the package without cutting it. Frozen unpeeled carcasses are boiled for about 7 minutes, defrosted - no more than 3 minutes. After that, rinse them with cold water, and you can easily peel the meat from the skin.

These rules apply equally to whole carcasses, rings and squid fillets.

Several nuances

Boiled squid can be used to prepare many dishes. These can be salads, pie or pizza toppings, soups, and more. And as a separate dish, squid will take its rightful place on your table.

For the salad, cook the squid meat for 7-10 minutes until tender (white), and you may not defrost them before cooking. If you want to make stuffed squid or fry them after boiling, it is enough to keep them in boiling water for 3 minutes and remove. The meat will reach its final cooking during stewing or frying.

Most often boiled squid is used for making salads.

You can cook squid not only in a pot of water, because now there are so many devices that make it easier for the hostess to work! Cooking time for squid meat in various devices:

  • in a slow cooker - 2 minutes;
  • in a double boiler - 5 minutes;
  • in a pressure cooker - 1 minute;
  • in the microwave - 1 minute at maximum setting, after adding oil, lemon juice and spices.

With the latter method, you will get squid in its own juice. They are great for a salad or as a stand-alone meal, such as a beer snack.

Correcting mistakes: fixing our own mistakes

Often the first pancake comes out lumpy, and if you are still inexperienced in cooking squid, mistakes cannot be avoided. The most common nuisance is that the meat has been in boiling water for a long time, which means it has become tough. It turns out that this is not difficult to fix. Put the carcasses in boiling water again and cook for as long as possible, at least half an hour. The meat will become soft again, however, it will almost halve in volume. It can also lose its taste.

Despite the fact that few have seen live squid, dishes made from them are very popular.

Although not every housewife will take up the preparation of this delicacy, believing that it is difficult to prepare it. Indeed, when cooking squid, you need to carefully observe the cooking time, otherwise, instead of tender, tasty meat, you can get a tough, rubbery seafood that vaguely resembles squid.

Most often, these seafood is delivered to store shelves frozen.

The edible parts of a squid are the head, torso, and tentacles.

How to prepare squid for cooking

  • Defrost the squid before cooking. To do this, frozen carcasses are placed in cold water, in which they are thawed.
  • The remains of the viscera, as well as the chitinous plates, are removed from the carcasses.
  • Then the squid is peeled. To do this, they are alternately immersed in hot water for a few seconds and taken out with a slotted spoon in a bowl.
  • After that, they part well with thin skin, which can be easily removed with your fingers by placing the carcass under a stream of water.
  • Rinse well under running water.

How to cook squid properly

The basic rule when boiling squid is not to overcook.

After all, it is enough to hold the carcass in boiling water for 2-3 minutes longer than necessary, and their meat will, firstly, become tough, and secondly, they will decrease in size.

There are several ways to cook this seafood, and all of them require the obligatory presence of the hostess near the stove, almost with a stopwatch in hand.

Method 1

  • The squid is peeled and washed.
  • The carcasses are dipped in boiling salted water and boiled for 2-3 minutes.
  • As soon as they turn white, they are taken out and cooled.

Method 2

  • Squid is poured with boiling water, kept for several seconds.
  • The water is drained, and the carcasses are peeled.
  • They are then rinsed in cold water.
  • After that, each carcass is in turn dipped in boiling salted water for 10 seconds. Many housewives believe that this time is quite enough for cooking this seafood.

Method 3

  • Squid are peeled by boiling water.
  • The entrails are removed and washed.
  • Prepared carcasses are dipped in boiling water, brought to a boil again.
  • Remove from heat and, without opening the lids, leave for 5 minutes.
  • Take it out of the water and cool it.

Method 4

  • The squid are peeled and washed in cold water.
  • Pour water into a saucepan, add salt and spices and bring to a boil.
  • Lower the carcasses, cover with a lid, wait a few seconds and remove from heat.
  • Cool for 10 minutes without removing it from the water.

Method 4 (cooking in the microwave)

  • Water is poured into a saucepan, salted and placed in the microwave.
  • Bring to a boil.
  • The prepared carcasses are lowered.
  • Cook for 1.5 minutes at maximum power.
  • They take out the squid and cool.

Method 6 (cooking in a double boiler)

  • The squid is dipped in boiling water, taken out and peeled.
  • Rinse well and remove the insides.
  • Place in a steamer bowl.
  • Cook for 10 minutes from the moment you turn it on.
  • Cool down.

The boiled squid is cut into strips, rings or cubes and cooked according to the recipe.

Note to the hostess

  • Squid is a valuable product. They contain up to 19% protein, up to 1.4% fat. They are rich in selenium, phosphorus, magnesium, zinc, iron, potassium, B vitamins.
  • In order not to spoil the dish with stale squids, you need to be able to choose them. A carcass that has been properly stored should be firm, pinkish brown or pinkish purple in color. The inner flesh should be white.
  • It is better to buy unpeeled squid, since the quality of the carcass can be determined by the skin.
  • When boiling squid, you can use different spices, taking into account taste preferences.
  • Overcooked and gummy squids can be softened by boiling for 30-40 minutes. But in this case, the carcasses will significantly decrease in size, and their quality will be much worse.
  • Frozen squid should not be re-frozen. This fact can be judged by the carcasses frozen among themselves. It is better not to buy such products.
  • If squid is cooked along with other foods, then they are placed in the pot as the last resort, when the dish is almost ready.
  • To improve the taste when cooking squid, add a sufficient amount of salt. Lemon juice also adds piquancy to the dish, sprinkled with both ready-made and fresh carcasses.
  • In order for squids to reveal their unique aroma well, there should be more of them in the dish than other products. For the same reason, squid is not mixed with foods that have a strong odor.

Until you try a well-cooked squid, you may not even notice what it is for sale. But if you try again, I don't think you won't want to do it again and then again and again ..

Before the New Year, I prepared several different squid dishes. Those recipes describe in detail how to cut and how to cook squid. Here I give, please see them too, to know exactly what to do.

Simple and delicious step-by-step squid recipes with photos

Well, in this article we will look at several options for salads with you. They are all delicious and quite easy to prepare.

Menu:

  1. Squid salad

Ingredients:

  • Squids - 800 g.
  • Eggs - 3 pcs.
  • Cheese - 100 g.
  • Salt to taste
  • Fresh cucumber - 1 pc.
  • Crab sticks - 200 g.
  • Avocado - 1 pc.
  • Mayonnaise

Preparation:

Boil squids. We lower the peeled squid carcasses into very boiling water, close the lid so that the water boils again faster and boil for 1-1.5 minutes. We take out the carcasses and put them in cold water, if there is water with ice, even better. This is to stop the cooking of the squid. Since squid is practically pure protein, it continues to cook even when removed from the water. And so it will cool down much faster.

When boiling the squid, add plenty of water to the pot. The more water there is, the faster the water will boil after you put the carcasses in the water.

1. Cut the squid into strips.

2. Finely chop the cucumber and transfer to a plate. The cucumber will add freshness to our salad.

3. First we cut the crab sticks in half lengthwise, turn to the side and cut it lengthwise again, we got 4 sticks. Put them all together and cut them into small cubes.

4. Cut the avocado in half, remove the pit.

5. Cut the avocado inside and out, as if making a fine mesh.

6. Transfer the squid to a deep plate. Put a tablespoon of mayonnaise in it and mix.

7. Ingredients are ready to start collecting the salad. We take a round shape so that our salad fits evenly, beautifully, we put it on a dish on which we will serve the salad and put the first layer of squid on the bottom.

8. Smooth out the squid and put the second layer on it - an avocado.

9. Smooth out the avocado layer, add a little salt, a small pinch.

10. Straight into the mold, in the third layer, rub the eggs on a coarse grater.

11. Smooth the eggs and make a net of mayonnaise over them. We spread the mayonnaise over the entire surface.

12. We spread the next layer, crab sticks.

13. Smooth out the sticks and lay out the penultimate layer, cucumbers. There should not be a lot of cucumbers.

14. Smooth out a thin layer of cucumbers, even crab sticks are visible through it and apply a net of mayonnaise.

15. Sprinkle the cheese on top, level it and, in principle, our salad is ready. It remains to decorate it and let it infuse by placing it in the refrigerator.

16. Place a few lettuce leaves on the cheese. On top of the squid rings, lay out the figurine and put a spoonful of red caviar in each ring.

We put in the refrigerator for 20-30 minutes. We take out. Remove the form carefully.

Now the salad is completely ready and I don't want to talk. I want to eat, eat and eat such a beautiful salad.

  1. How to cook squid

Ingredients:

  • Medium squid - 4 carcasses
  • Bow - 2 large heads
  • Sour cream - 150 g.
  • Pepper
  • Dill
  • Vegetable oil.

Preparation:

1. Defrost squid carcasses if they are frozen. You can defrost a little and start boiling if you are in a hurry, but it is better to put the carcasses in the refrigerator in advance, let them defrost there completely.

2. Put water in a saucepan on the stove and bring to a boil.

Note that the more water, the faster it will boil again when you dip the squid into it. But I do not always wait for the water to boil a second time, after dipping the squid into it, but I take it out as soon as the carcasses are puffed up and rounded.

3. The water boils, throw in a few black peppercorns, a couple of sweet peas, salt, about half a teaspoon per 1 liter of water, a couple of bay leaves. Let it boil for another 5 minutes with spices.

4. Dip the squid into boiling water. If you have a little water, and even frozen squid, lower one carcass at a time. Brought to a boil, the carcasses are rounded, remove. And so all the carcasses. Please note that here we are dipping unpeeled squid into the water. This is one of the cooking methods that many people use. It is the simplest and lightest. But if you want to get a white squid, and not pink, it is better to remove the skin from a cold one without pouring boiling water over it.

5. Now you need to peel the skin. Under a running stream of water, as it were, we "wash" the carcasses. The skin peels off very easily.

6. Remove the insides, chords (this is the name of the cartilaginous rigid plate that runs along the ridge of the carcass).

7. Chop the onion rather coarsely.

8. Preheat the frying pan and add some vegetable oil.

9. Put the onion in hot oil and fry until golden brown. Well, in general, whoever loves it. Some people don't like fried onions. You can fry a little.

10. Cut the squid into rings, half a centimeter thick, and then cut the rings in half. You can cut the carcasses lengthwise into halves and then cut into strips. See how it suits you best.

11. We send the squid to the pan to the onion.

12. Season squid with onion with sour cream, mix everything and add pepper. Close with a lid and leave to simmer for 5 minutes.

13, At the end of stewing, sprinkle with a little dill (for an amateur). We mix everything. Turn off the stove.

14, Squid fried with onions is ready.

We lay out on plates. Garnish with vegetables if you like.

  1. Squid salad recipe

Ingredients:

  • Boiled squids - 4-5 pcs.
  • Crab sticks - 5 pcs.
  • Onion - 2-3 heads
  • Garlic - 3-5 cloves
  • Boiled eggs - 4 pcs.
  • Avocado - 1/2 pc.
  • Lemon - 1 / 4-1 / 2 pcs.
  • Smoked salmon - 4 small pieces
  • Soy sauce - 1-2 tablespoons
  • Mayonnaise
  • Greens

Preparation:

1. Spin the crab sticks into plates, put on top of each other.

2. Cut the stacked pile of sheets lengthwise.

3. Place one half on top of the other and cut into very fine strips.

4. We send it to a deep container (we have it a saucepan).

5. Take boiled, peeled squid and cut off the tails.

6. Cut the carcasses into the same small strips. We also cut the tails into small strips. Many people love ponytails even more than carcasses. They are a little harder and crunchy, as it were. We send the chopped squid to the sticks and mix.

7. Cut the onion into small strips and also send it to the container for the chopsticks. We mix.

8. Cut the eggs around the circumference, cutting the white and not touching the yolk. Divide and set aside the yolk separately.

9. Cut the protein into strips, as small as possible and also send to the pan.

10. Cut the cucumber into 3-4 parts across, cut each part into thin plates along. We put the plates on top of each other and cut into small strips.

11. We send to the pan. If you don't want a lot of liquid from the cucumbers, put them first on a paper towel, and when they drain a little, into a saucepan.

12. Take half an avocado, spoon out all the pulp, the second way is to simply peel the avocado with a knife like a potato, but this way is worse, because with a spoon you can only take out the pulp, and the tough part will remain. We put the pulp in a glass for a blender.

13, Squeeze a quarter or half of a lemon into a glass with avocado. Who loves what kind of acid. Here we cut the onion into large pieces, put 3-5 cloves of garlic, again to taste, lay out the smoked fish.

14. Take the hand blender and whisk the whole mixture.

15. Smash the bulk, add some soy sauce and continue to beat. The most important thing is that the fish breaks well and its smoky taste spreads over the sauce.

16. Beat until smooth, add yolks, mayonnaise. Add the same amount of mayonnaise as we got the whipped mass, i.e. in half. If this is not enough for someone, then you can add mayonnaise directly to the salad. You can add some mustard if you like, it will spice up the sauce.

17. From ten to fifteen sprigs of parsley, collect the leaves and add them to the sauce mixture in a glass. Beat everything until smooth.

18. Beat the sauce, pour it into a saucepan with crabs, onions and squid.

19. Mix everything well.

20. We thought the salad was too thick. We added some more mayonnaise.

21. Mix everything thoroughly again. Salad ready.

Tip: Prepare this salad a few hours before serving. Squids, crab sticks are soaked, cucumbers will release juice. It all works for the taste of the salad.

Before serving, give the salad a beautiful look with a special mold. Decorate with leafy greens and serve.

Enjoy your meal!

  1. Video - How to cook squid

Squid is characterized by a high content of proteins, vitamins of group C and microelements. Dishes from it will be useful for children and the elderly. But, for their preparation, it is very important to properly cook squid.

How to choose and defrost squid?

In order to cook delicious squid, you must follow how simple the rules are:

  1. When choosing a squid to cook, you need to pay attention to the fact that the carcasses should be easily separated from each other. If this is not the case and the squids are stuck together, this means that they have already been thawed. Dishes made from re-frozen squid will taste bitter. The color of the meat must be necessarily white, and the film that covers the carcasses must be light pink or even purple.
  2. It is best to defrost the squid to cook it simply in the air. Thus, more beneficial substances and properties are preserved. In case you are limited in time, put the frozen squid carcass in cold water. In no case should hot water be used for this purpose.
  3. The head, tentacles, and also the body of the squid are eaten. Before cooking squid, it is necessary to peel off the film, remove the insides and chitinous plates. The skin is removed very easily: the carcass is pressed against a cutting board and pry off the skin with a fingernail. The squid skin should be removed with a "stocking". The peeled squid carcass must be thoroughly rinsed under running cold water, both inside and out.

How to cook squid correctly?

There are several ways to cook squid. The basic rule is that the duration of boiling squid should not exceed 3 minutes. If you cook squid meat for longer, it will become tough and tasteless. The first way to cook squid is as follows: add salt to boiled water, dip the peeled squid carcass in a saucepan and remove it from the heat. After 10 minutes, the squid will be ready. The second method of cooking squid is even easier: dip the squid carcass in boiling water, count to 15, and then remove the meat with a slotted spoon. A little secret to cooking squid is this: if you overcooked the carcasses initially, it's easy to fix. You need to cook the squid for 30 to 40 minutes. The meat will become soft again, but at the same time it will lose half of its volume and weight.

The squid prepared in this way can be used as a main dish, sprinkled with some kind of white sauce. Also, a boiled squid carcass is an excellent basis for a variety of salads.

Squid meat recipe in batter

Fried squid is also an excellent base for many dishes. In order to prepare a squid appetizer, you need to defrost and peel the carcass, cut it into rings. Dip the squid rings in batter (0.5 kg. Flour, 0.5 liters of beer, 2 eggs, salt to taste) and deep-fry them.
