Products for the recipe

  • dry yeast 1 tbsp. l .;
  • sugar 1 tsp;
  • milk ½ tbsp.;
  • water ½ tbsp.;
  • salt ¼ st .;
  • wheat flour 4 ½ tbsp.;
  • powdered sugar or fine sugar 1/2 tbsp.;
  • coarse sugar 60 g (for sprinkling);
  • ghee ¾ st.;
  • eggs 3 pcs.

Recipe

  1. The yeast is mixed well with a mixer with a portion of the flour and a teaspoon of sugar.
  2. The milk is mixed with water and warmed to room temperature. Pour into flour with yeast and sugar, mix and let stand for half an hour.
  3. Beat eggs well, add half a glass of sugar and melted butter to them.
  4. The egg-sugar oil mixture is added to the dough.
  5. Pour in, kneading the dough for eight minutes, the remaining two and a half glasses of flour.
  6. The dough should be soft and elastic.
  7. Cover the dough with a towel and leave in a warm place to double in volume. This will take an hour and a half.
  8. The finished dough is kneaded for two minutes, divided into fifteen parts. Roll up round buns and place them on a greased baking sheet and let rise for thirty minutes.
  9. When the buns have doubled in size, turn on the oven. The buns are greased with a beaten egg, sprinkled with sugar and baked in the oven at 200 degrees for about twenty minutes until golden brown.

Products for the recipe

  • milk 240 g;
  • egg 1 pc .;
  • sugar 75 g;
  • butter 100 g;
  • flour 720 g;
  • a pinch of salt;
  • dry yeast ½ tbsp. l.

For sprinkling

  • vanilla sugar 1 p.;
  • egg 1 pc .;
  • sugar 125 g

Preparation

It is necessary to heat the milk to 30 degrees, add yeast, a teaspoon of sugar and two glasses of flour. In a bowl, prepare a dough similar in consistency to sour cream. Cover the bowl with a towel and place in a warm place. The dough should double in half an hour.

Add the remaining sugar, salt, egg and melted butter to the finished dough. Sift the remaining flour and add it to the dough and other products in a bowl.

Having formed a ball from the dough (it will be quite soft), cover it with a towel and put in a warm place for two hours.

When the dough has increased in size two to three times, they begin to form buns. Divide the dough into two parts and roll it into layers half a centimeter thick.

The layers are sprinkled with sugar mixed with vanilla. Roll up into tight rolls. Cut the roll into pieces 4 cm wide. Lay out on sheets covered with food foil or parchment oiled with vegetable oil. Cover with a towel and leave to rise for half an hour.

Add two teaspoons of water to the egg yolk and grease the buns on top. Put in a hot oven (baking temperature 200 degrees) for twenty minutes. When the delicious rolls are browned, they are taken out, allowed to cool slightly and removed from the sheet.

Served with tea for guests, for breakfast, as a sweet dessert.

Products for the recipe

  • salt 1 tsp;
  • pressed yeast 25 g;
  • sugar 1 tbsp.;
  • lean oil 50 g;
  • milk ½ l;
  • vanillin 1 tsp;
  • butter 50 g.

Recipe

  1. From yeast, 1 tablespoon of sugar, 3 tablespoons of milk and two tablespoons of flour, you need to prepare a small dough. Put it in a warm place for 5 or 10 minutes.
  2. Sift the remaining flour into a large bowl, pour the prepared dough into the flour, the remaining milk, add salt, vanillin and five tablespoons of sugar. Make a soft dough. Add vegetable oil at the end of kneading.
  3. Cover the finished dough with a towel and put in a warm place for 1 hour.
  4. When the dough has doubled in size, you can bake buns from it.
  5. Lay oiled parchment on the sheet. Roll out the dough into a layer. Brush with melted butter, sprinkle with the remaining sugar (half a cup). Smooth the sugar over the surface of the layer and make a roll. Cut the roll into pieces of the required thickness, put them on a sheet to raise for twenty minutes.
  6. Turn on the oven five minutes before baking to place the rolls in the hot oven. Bake at 200 degrees (twenty minutes or half an hour). Do not overdry! Finished browned baked goods can be brushed with melted butter on top to keep them soft for longer.
  7. Delicious buns can be prepared in a wide variety of shapes. Weave pigtails from dough, make curls and hearts, flowers of different shapes, letters of the alphabet or funny animals. Milk yeast dough, used for buns, is also suitable for pies and even yeast pies with sweet fillings.

Cooking method

  1. Add 2 teaspoons of sugar and yeast to warm milk, mix. Leave it for 7-10 minutes to wake up the yeast

2. Sift the flour through a sieve so that the baked goods are fluffy.

3. Add a pinch of salt and 70 g of sugar to the flour. Pour the egg into a bowl and mix it a little. Add 1 teaspoon of vanilla extract to the egg.

4. Make a small depression in the flour and pour in the liquid ingredients: yeast with milk, egg with vanilla. Knead the dough with our hands (fingers).

5. After a while, pour melted butter into the dough. And we continue to collect the dough into one lump.

7. We continue to knead the dough on the table with both hands. Knead the dough until it sticks to the table or hands. You don't need to add flour.

This recipe for sugar buns has been passed down from generation to generation in our family. They are made from yeast dough. At first glance, everything is simple. Mixed, waited, baked in the oven. But no, there are a number of nuances without which you will not be able to get anything good. The main thing, of course, in this matter is to know how to make dough for buns so that they turn out lush, ruddy and fragrant - that's just like this pie with jam. Well, let's get started?

Sweet homemade buns

  • 1 glass of milk;
  • 5 glasses of wheat flour (plus a little more when you knead the dough);
  • 3 eggs;
  • half a glass of sugar for the dough and another quarter for dusting;
  • 1 teaspoon salt
  • 100 grams of margarine;
  • 20 grams of dry yeast;
  • vegetable oil;

In this recipe with a photo, I will show you two ways to make a certain shape of buns from the dough. I am personally more impressed by hearts, but for lovers of flora, I will also tell you about making roses. Moreover, the difference is small.

Sugar bun yeast dough

  1. I start by taking eggs and margarine out of the refrigerator an hour before making the rolls. You need to warm them up to room temperature. Also, just before kneading the dough, I warm up the milk so that it is warm, but does not burn. Otherwise the yeast will cook. Completing all of these activities will provide me with a quick and significant rise in the yeast dough for sugar buns, which in turn will lead to the best result and the baked goods will turn out fluffy and tasty.
  • Pour warm milk into a suitable bowl and salt.
  • Then I add ½ cup of sugar.
  • I drive in three eggs. I add softened margarine. If, nevertheless, you wrap yourself up and forget to get it out of the refrigerator, as happened to me, just put the margarine in the microwave for 30 seconds. It will become soft and can be used for making dough without any problems.
  • Now I add yeast.
  • I stir the milk mass with a spoon, breaking the margarine into smaller pieces.
  • First, I pour in only three glasses of flour and knead the yeast dough.
  • It is still liquid now. That's right. Then I will correct this matter.
  • Cover with a towel, put the dough in a warm place.
  • It rises just before our eyes. Now I'm adding two additional glasses of flour. I leave it again for the dough to rise.
  • Then I spread it on a flat surface sprinkled with flour. The dough is still watery.
  • The time has come to work with pens. Gradually adding flour, I knead until it starts to click under my hands, it is good to keep the shape and at the same time be soft - not rubber.

How to make buns, hearts and roses

  1. Finally I start sculpting sugar buns. To do this, I cut a small piece of dough and roll it out in the shape of a circle.
  • Lubricate with vegetable oil.
  • I roll it like the one in the photo with a roll.
  • Next, to make a rosette bun, I make an incision in the center of the dough sausage.
  • And then I turn it inside out.
  • To make a heart, I cut the same roll from one end into two parts.
  • I wrap the resulting legs to the non-split part of the sausage. So we got a bun shaped like a symbol of love.
  • I put the pastry blanks on a baking sheet greased with vegetable oil. Do not make a great distance between them, but do not put too tightly. When the buns are baked in the oven, they will begin to grow in size. So, let them rise mostly upward than expand on the sides, becoming like cakes.

How to make frosting

  • 1 yolk;
  • a tablespoon of milk;

  3. Fifteen minutes later, as soon as the sugar mine has risen, I put them in the oven and bake for 30 minutes, constantly controlling the degree of blush.
  4. I set the temperature in the oven to 190 degrees.
  5. At the end, I coat the finished rolls with thawed butter.

Now let's start rolling out the dough. Separate about a third of the dough and roll it out on the table in a thin layer.


Lubricate the resulting layer with the previously prepared filling.


Next, we twist the dough layer into a roll.

and lay them out in a previously heated and oiled baking dish, slightly lifting the middle.


We leave the buns on the switched on oven for 10-15 minutes so that they rise. And then we rearrange them into the oven itself and bake at a temperature of 200-220 degrees (depending on which oven you have). Usually, the baking time takes no more than 15 minutes, but it is better to watch it periodically, as they can burn very quickly.

The buns are ready, grease them with vegetable oil on top and serve.

    Today I would like to tell you about the preparation of "buns", buns with sugar, with which I spent all my childhood. Then, walking in the yard, happiness consisted in a sugar bun in the shape of a heart and a warm glass of milk. It's amazing how things change over time, but the tastes remain the same.

    This is undoubtedly one of the most famous dishes of Soviet cuisine, which is easy to prepare at home. As always, I took the recipe from my beloved grandmother. The preparation is simple, but there are some "subtleties". Join us! The most important thing is to make a sweet yeast dough. I give a simple recipe, the buns are incredibly tasty!

    1. Mix dry yeast (you can use "live" 50 gr.) With salt and sugar, pour milk.

    Leave the yeast to “activate” for 5 minutes. By the way, if you don't have milk, use a glass of warm water, the difference is not significant. I often dilute half a glass of milk with water.


    And here is how our yeast was activated after 5 minutes ...


    Now add the ghee and mix thoroughly.

    2. Add flour in a trickle, stirring constantly so that there are no lumps.


    3. We leave the dough for 30 minutes, during this time it should "take shape" and become more tender (come up). Nuance: stir the dough every 10 minutes, preferably with your hands, so it will be saturated with oxygen and grow faster each time. The main plus is that the dough rises much faster.

    4. When the dough is ready make small balls and leave to rise for 10 minutes.

    5. We form hearts. To do this, roll out the dough and grease it with sunflower oil on top.

    We roll it into rolls and fold it in half so that the seam is inside. We squeeze the ends with our fingers and make a cut in the middle. Then we turn out both parts of the heart and our bun is ready. Lubricate with yolk and sprinkle with sugar.

    6. Bake in the oven at temp. 200 gr. - 20-25 minutes.

      An alternative recipe for making dough using a mixer:

      In a separate bowl, combine yeast, a pinch of sugar and half a glass of warm milk, and let sit for 10 minutes. In a mixer bowl, mix the rest of the milk (more than half a glass), add melted butter, sugar, salt (amount according to the recipe), whisk. Add a glass of flour, beat again, add the yeast mixture and 1 more glass of flour. Change the attachments for kneading hooks. Add flour 1 spoon at a time, until the dough is firm and practically does not stick to your hands. The dough should be soft with a smooth texture.

      Immediately form the buns, put them on parchment and leave them in the oven for 1 hour. It is better to preheat the cabinet to 50 degrees and then turn off the oven, the dough loves warmth.

      After an hour, grease the buns with yolk and sprinkle with sugar, put in the oven, and then set the temperature to 190 degrees, bake for 15-20 minutes, depending on the size of the buns.
