The average calorie content of cheese is 355 kilocalories per 100 grams. However, it would be wrong to take this number into account to calculate the number of calories consumed per day. The fact is that the energy value of different varieties is very different. The calorie content of cheddar reaches 402 kcal, while tofu - only 76 kcal.

Therefore, we will consider in detail the most popular types of cheeses, tell you about their characteristics and energy value.

Adyghe

Like feta cheese, mascarpone and ricotta, Adyghe cheese belongs to the category of soft varieties. However, it also has its own distinctive feature. Outwardly, the product resembles cottage cheese, the taste is similar to yogurt. The process of making such cheese requires pasteurization at a high temperature. Cow's (less often - sheep's or goat's) milk is slowly heated to a temperature of + 95 ° С. For comparison: hard cheeses are produced at temperatures no higher than + 70 ° C.

After heating the milk, it combines with the whey. The product curls up, forming clots in the upper layer of the whey. A special basket is used to collect these lumps. Then they serve as raw materials for the formation of Adyghe cheese heads. Only then are they salted. The production method described above allows you to preserve all the beneficial properties of the ingredients and reduce the fat content in the final product. How many calories are in Adyghe cheese? Relatively little compared to other varieties. The calorie content of the Adyghe cheese is 264 kcal per 100 g.

Russian

Russian cheese is one of the popular varieties. It has been present on domestic counters for more than a decade. The stores offer a wide range of Russian cheese from various manufacturers. However, the taste is about the same regardless of the label. The product is widely used in cooking for salads, main courses, pizza, cheese casseroles. How many calories are in Russian cheese? Nutritionists estimate about 364 calories per 100 grams. The high calorie content of Russian cheese indicates that the consumption of the product during the diet should be strictly dosed.

This variety, in contrast to blue cheeses, targeted at a narrow circle of consumers, has a pronounced taste with a slight sourness. The product is far from the most expensive, so the demand for it remains high. The finished Russian cheese has a yellowish tint, and many small eyes are noticeable on the cut. The fat content of the product is 30%.

Fused

Processed cheese production technologies are very different from other types of this popular dairy product. It is known that hard varieties are made from milk. To get the same processed cheese, you should mix several other required components. Various rennet varieties, butter, cottage cheese, special cheese for melting, a small amount of powdered milk, as well as all kinds of fillers and seasonings - all of these products are included in the list of ingredients required to prepare a delicate delicacy.

They are thoroughly mixed in the correct proportions and melted at the right temperature, resulting in a homogeneous mass - the same processed cheese. In stores, you can find hundreds of types of products produced by different manufacturers, however, it is customary to distinguish 4 main varieties of this delicious product. These are sausage, lumpy, pasty, sweet processed cheeses.

With the first, everything is clear: it resembles an ordinary doctor's sausage in shape and is often prepared with the addition of black pepper or caraway seeds. Sliced \u200b\u200bprocessed cheese has a hard cheese flavor. It retains its shape perfectly during the cutting process. Spreadable processed cheeses are packed in plastic boxes, the product contains a lot of fat. The sweet product includes raisins, honey, sugar, cocoa, syrups or other delicacies. The calorie content of processed cheese of different types is different, but on average it reaches 300 kcal per 100 grams.

Dutch

Dutch cheese is quickly digested and energizes the body. It is extremely rich in beneficial vitamins, minerals and other elements that we need. This hard cheese has a milky flavor, complemented by spicy and sourness. The main ingredient used to prepare this natural product is fresh cow's milk. There are no plant analogues or artificial impurities in the product.

The technology for making Dutch cheese has been known for a century and a half. The product is prepared under sterile conditions, the process of maturation of the heads lasts 1-2 months. When choosing Dutch cheese, pay attention to the color. Natural product is white or light yellow, evenly colored. If you see a bright yellow tint, this indicates the use of a dye. The calorie content of Dutch cheese reaches 352 kilocalories per 100 grams of weight.

Suluguni

For the production of suluguni, it is permissible to use cow, goat, sheep or buffalo milk. However, experts believe that a product made from a mixture of different milk tastes good. Suluguni is easy to recognize by its brine sour milk taste, which is difficult to confuse with other cheese. It does not always have a perfectly white color, the shade is close to light yellow. The calorie content of suluguni cheese is 286 kcal per 100 g.

The light yellow product is considered a real delicacy, therefore its cost is higher in comparison with white. Buffalo milk gives the cheese such an unusual shade. But in our country, it is difficult to find delicious suluguni. Industrial enterprises use a mixture of cow, goat and sheep milk. Note that the technology for the production of Georgian suluguni cheeses is almost identical to the process of creating Italian Provolone cheeses.

Mozzarella

Most of our compatriots have learned about mozzarella thanks to pizzerias. Surprisingly, without this fermented milk cheese, an appetizing and aromatic pizza begins to resemble a regular filled tortilla. In pizzerias, the most popular is the unleavened version of the product made from cow's milk. There are other varieties of mozzarella: the smoked-smelling Mozzarella affumicata or Mozzarella di Bufala, which is made from buffalo milk. You will not find such varieties on our market. Calorie content of mozzarella cheese: 280 kcal per 100 gr. product.

Feta cheese is included in the popular Greek salad, the other ingredients of which are green salad, fresh cucumbers and tomatoes

This product is not suitable for dietary nutrition: the fat content is too high (up to 50%). In extreme cases, it is allowed to consume 50-100 grams no more than once a week. The calorie content of traditional feta cheese is 264 kilocalories.

Mascarpone

Mascarpone cheese is a close relative of a well-known product to us - cottage cheese. Due to its characteristic taste and soft creamy consistency, the product resembles high-quality homemade sour cream. It has a delicate creamy shade, similar to the color of baked milk. The calorie content of mascarpone cheese is high: at least 412 kcal!

The process of making the product is interesting. Cream with a fat content of 25% or 30% is heated in a water bath to a temperature of + 90 ° C. Then tartaric acid is added to the container, as well as lemon juice, which accelerate the folding process of milk protein. The mass is cooled and suspended in a cool place in small linen bags to get rid of excess moisture.

Mascarpone is included in the category of perishable foods, so it is advisable to eat the product immediately after cooking. But if you put the cheese in a vacuum package, the shelf life will increase. An open product can be stored in the refrigerator for only 2-3 days.

Philadelphia

Philadelphia is a soft cheese that does not require ripening. For the preparation of the product, milk is used, to which cream and sourdoughs are added. These ingredients form an exquisite flavor composition. The calorie content of Philadelphia cheese is high - 342 kilocalories. This indicator is due to the high fat content of the product. Therefore, you should not consume it in unlimited quantities if you follow the calorie intake.

Modern manufacturers add all kinds of fillers to the product - sauces, dried vegetables, spices and even berries. This is done to expand the flavor and aroma of the cheese. The soft creamy taste of the product, the pieces of which seem to "melt" in the mouth, will conquer even sophisticated connoisseurs. As the cheese ripens, the flavor of the cheese increases, it becomes drier. In Holland, spices are often added to this variety - cumin, herbs or mustard. The energy value of Gouda cheese is 356 kcal per 100 grams.

Tofu

Tofu is often called a tasteless cheese, but it is this property that turns this variety into an indispensable component of hundreds of dishes. It increases the volume and adds valuable trace elements and other useful substances to the finished dish. This property is of particular importance during the period of fasting, when the diet lacks amino acids obtained by the body from animal products.

Tofu, like a sponge, absorbs the aroma and taste of other components of the dish. When added to chili sauce, it will taste similar. And when the product is mixed with cocoa and sugar, the tofu will become sweet. Such a mixture is a variant of a low-calorie filling for confectionery products.

Tofu cheese comes in a variety of textures. Hard product resembles mozzarella cheese, it is used for baked dishes, frying and smoking. The pigtail cheese color can be whitish or light yellow. You should not buy bright colored cheese - this is a sure sign of the presence of dyes. The energy value of 100 grams of the product is 320 kilocalories.

Maasdam

Maasdam is one of the most popular varieties in the world. The Dutch consider it the third best cheese on the list (after Gouda and Edamer). Refers to the category of natural aging products. It has a delicate sweetish taste, a yellowish tint and large eyes, which have become such a visiting card of the variety. Nutritional value of massdam cheese is 350 kcal per 100 grams.

Cheese belongs to the category of food products that are obtained from milk and at the same time use lactic acid bacteria and clotting enzymes. The benefits of cheese have been known for seventy centuries. Today this delicious product is present in the kitchen of almost every person.

The gastronomic value and taste, as well as the calorie content of the cheese, largely depend on the type of cheese and on the correct combination of foods and drinks that are served with such a delicacy. The usual cheese sandwiches do not reveal the aroma and full-fledged taste of the cheese. For example, many soft and hard cheese varieties are great for sweet and juicy fruits. The best option is cheese canapes with fruit. It is good to add this product to green summer salads, as the cheese in this case gives the salads a certain sharpness and density.

Cheese is an important source of protein, calcium and phosphorus, a product that appears almost daily on the tables of Russians. It has a wide range of uses, from the main ingredient in sandwiches to the finishing touch in casseroles, pizzas and side dishes. Given the high assortment on store shelves, differing in taste, fat content, cost and calorie content of cheese, everyone has the opportunity to choose an option to their liking. Even people whose body does not produce the necessary enzymes for the assimilation of dairy and sour milk products can afford a small piece to replenish the necessary norm of trace elements. And also those who follow their figure. But here, of course, it is worth knowing how many calories are in the cheese, and how to choose the right variety that is least harmful to slimness.

How many calories are in cheese

The energy value of cheese, depending on the variety, fluctuates with an impressive amplitude: the calorie content of Russian cheese is almost a hundred kcal higher than that of the Adyghe cheese. And there are also variations within the species: the calorie content of processed cheeses can vary within 45 kcal, depending on the content and fat content. On average, if you do not consider the product by types and varieties, the calorie content of cheese for a 100-gram piece will be 350 kcal. Given its satiety, such calorie content is not critical for losing weight, but it is still not worth overusing it. Even taking into account the fact that calories in cheese are safer than calories in cakes and sweets due to the naturalness of the former and the almost complete absence of carbohydrates in it, an excess of any, even the most healthy food, does not end well.

The ratio of proteins and fats looks like 30% to 70%, and precisely because of the prevalence of the latter, it is not recommended to lean heavily on cheese during weight loss. Calories, although not the worst, can slow down the process significantly. Nevertheless, with severe hunger, you can afford a couple of slices even after X hour: due to the fact that the feeling of fullness from cheese comes quickly enough, this amount is enough to last until sleep without overloading the gastrointestinal tract with unnecessary work.

The dependence of the calorie content of cheese on the variety and processing

Now it's worth examining special cases in order to highlight the least dangerous varieties for slenderness and find out how to reduce the risk of gaining weight if the calorie content of the most favorite cheeses is off scale. Today there are more than a hundred species and varieties, among which the most famous and accessible to the average inhabitant of most cities can be distinguished.

The calorie content of Russian cheese - one of the most popular today due to the relatively low percentage of fat (30%) and high availability for most segments of the population - is only 350 kcal per 100 g. And for fifty percent Russian cheese, the calorie content will reach 360 kcal for the same weight ... This is almost ideal for pizza and other dishes where it needs to be heat-treated, but from the point of view of fitness nutrition, unfortunately, not the best. Especially in comparison with feta cheese or suluguni, which also refer to pizza cheeses, but contain only 260 and 290 kcal, respectively.

Adyghe cheese has a much lower calorie content than Russian cheese with the same fat content: only 264 kcal. This is one of the most popular and light soft cheeses: the calorie content of most of them exceeds 300 kcal. It tastes somewhat like cottage cheese with hints of whey. Given the high percentage of assimilation of fats and proteins, as well as the low calorie content of Adyghe cheese, it is often included in the diet of athletes, in fitness nutrition and in the diet of people with gastrointestinal problems. However, if you are lactose intolerant, it is best to exclude this option from the menu.

The calorie content of processed cheese primarily depends on its type, although in any case it is such a golden mean between the previous varieties. In smoked sausage cheese, its calories almost reach the Adyghe: 275 kcal, but the latter is clearly more beneficial. Due to the fact that smoking technology is not always followed, as well as due to the high cholesterol content, sausage cheese is included in the category of products that are undesirable for frequent use.

The calorie content of processed cheeses in trays ranges from 288-305 kcal per 100 g and may depend on the filling: in addition to classic cheeses, there are options with paprika, dill, mushrooms and even nuts. The processed cheese in the trays is distinguished by a particularly delicate taste, variety of combinations and ease of use: it is often used to create sandwiches. Don't worry about eating it for breakfast: the calorie content of the cheese is canceled out by its low consumption.

The lightest varieties

Even when losing weight or just keeping your figure in shape, you should not give up cheese. Calories in it are not so harmful, so it is better to have another snack with a sandwich with a small piece of this dairy product, rather than the same one, but with sausage. When drawing up your meal plan, knowing how many calories are in cheese, you can scrupulously calculate the daily allowance, as well as remember which combinations increase the risk of hitting the figure. Or choose easier varieties. First, they include tofu - soy cheese, the calorie content of which does not exceed 80 kcal, and the fat content reaches only 4%. It is also worth adding to this "Ricotta" with 140 kcal and the familiar cheese-pigtail "Chechil" with the same figure. But since the latter belongs to the smoked group, its benefits for the body are questionable. Of the more familiar to the eye, the list of the least high-calorie cheeses includes low-fat one-percent "Mozzarella" (149 kcal), feta and feta cheese (160 kcal). And as mentioned earlier, the optimal ratio of the familiar taste and fat content is carried by the Adyghe cheese, the calorie content of which, although higher than the lightest, is kept within reasonable limits.
