Many thanks to Tanyusha Kalinichenko for the tip. I saw an interesting recipe in her diary and decided to see how it looks "live" And here's the result: two completely different recipes for a wonderful and tasty salad. So..

"Mushroom stump" salad # 1

Ingredients
-4 carrots (boil)
-3 potatoes (boil)
-3 green apples (sour)
-4 hard boiled eggs
-150g boiled mushrooms (I have champignons in my own juice)
-300g boiled chicken fillet
-10 walnuts
-mayonnaise to taste
-salt to taste
-leaves of lettuce and olives (optional for decoration)
Preparation:
Peel and coarsely grate carrots, eggs and potatoes. Salt vegetables and eggs to taste.
Cut the chicken fillet into cubes, add salt.
Cut the apple into slices and dip in salted water (this will prevent them from darkening).
Chop the kernels with a knife.
Put lettuce leaves on a portioned plate, set a culinary ring (for lack of it, you can use a cut-off can or a cut-off liter plastic bottle).
Lay out the salad in layers (their order can be broken):

carrot,

mayonnaise,

eggs,

potatoes,

mayonnaise,

chicken,

apple,

chopped mushrooms

and chopped nuts.
Remove the culinary ring and decorate the salad
Place the salad in the refrigerator for a couple of hours before serving.

Ingredients:

For pancakes:
Milk - 250 ml.
Eggs - 2 pcs.
Flour.
Salt.
Paprika - 1 - 2 tsp
Onions - 1 medium onion.
Greens (parsley) - to taste.
For the salad:
Boiled potatoes - 2 tubers.
Boiled carrots - 2-3 pcs.
Eggs - 3 pcs.
Pickled mushrooms (honey agarics)
Ham - 200 - 300 gr.
Mayonnaise.
Greens (dill, parsley)
For registration:
Soft processed cheese.
Egg - 2 pcs.
Pickled honey mushrooms.
Greens (dill, parsley).
Preparation:

First, we bake pancakes:
Knead the pancake dough from the egg, milk and flour. Add paprika, finely chopped greens (to taste, it was not added here) and onions. We bake. We oil every pancake. From the resulting dough, about 6 pancakes are obtained.
Cooking the filling:
- Rub the boiled potatoes on a coarse grater, add chopped dill and mayonnaise;
- Rub the boiled carrots on a grater and mix with mayonnaise;
- Finely chop the eggs (or grate) and also mix with mayonnaise;
- Finely chop the mushrooms and mix with herbs. You can add a little mayonnaise;
- Cut the ham into cubes or strips. Add mayonnaise.
Let's start forming the "hemp":
- We grow cling film or bags along the table. Cut the pancakes in half and put them on a film with an overlap (we arrange the pancakes face down and overlap, so that those that are larger at the end, if you twist the stump from right to left, then the end is left)). We coat each pancake with soft cheese;
- We spread the filling along the "pancake path" in rows in random order;
- After all the filling is laid out, we begin to twist everything with a roll (each filling must be pressed more tightly to the pancake) The easiest way to spin the roll is according to the principle of a rug in sushi - carefully pulling and bending the bag;
- Put the resulting "stump" on a plate. Cut off the protruding ends of the pancakes - they will be useful to us for the roots.
Now let's get down to the design:
From the remnants of the filling we form "roots". We decorate them with the remains of pancakes. To avoid seeing the joints and "seams" coat the "hemp" surface with soft cheese. Not much!!! It acts as a binder. A kind of putty. We decorate the "stump" with mushrooms and herbs. If you wish, you can also make a fly agaric with a tomato))

Cooking method

For pancakes:

  1. Knead the pancake dough from milk, eggs and flour, and bake 6 pancakes, grease them with butter.

For filling:

  1. Grate boiled potatoes on a coarse grater, add mayonnaise, finely chopped dill. Grate boiled carrots, mix with mayonnaise. Also grate boiled eggs.
  2. Chop mushrooms finely, add chopped herbs and mayonnaise.
  3. Cut the chicken into cubes, add mayonnaise.

We collect the salad:

  1. Spread cling film. Then cut the pancakes in half, brush on one side with melted cheese.
  2. Put the resulting pancake halves overlapping on the film with a cut in one direction. Now you can lay out the filling in any order along this "pancake path". A little of the filling should be left for decoration.
  3. Raise one side of the film, roll the "lane" into a roll. After that, the stump can be placed end-to-end on a plate, while at the top there should be equal slices of pancakes. The protruding ends of the pancakes can be cut off and used to create stump roots. To better stick together the seams, they must be greased with soft cheese. The roots can be made from the leftover filling and covered with pancake scraps on top. You can decorate the stump with mushrooms, and make grass out of greenery.
  4. Mushrooms can be placed next to the stump for decoration.

Salad "Penek" is called so for a reason: after all, outwardly it really resembles a tree stump from a fairy forest, and fabulousness can be added to it with the help of decorations in the form of ready-made pickled honey agarics or homemade mushrooms of fly agarics, dill herb, curly parsley moss or spruce twigs that can be depicted with rosemary.

Penek salad is prepared on the basis of ordinary pancakes, which are cut and rolled in a certain way. And the filling for it can be absolutely any. You can choose any mixed salad with mayonnaise as the filling, but at the same time it should be slightly viscous so that it is convenient to shape the dish. if the salad is crumbly, the stump may not retain its original shape after you cut it in a common dish. By the way, you can make pancakes sweet and make the same sweet filling - in this case, you will have a good dessert for a children's feast.

A detailed step-by-step recipe with a photo of the preparation of the Penek salad with honey agarics

First, you need to boil the chicken fillet, adding salt and bay leaf to the water, and also wash and boil the carrots until tender.

Then you need to make a dough for pancakes: mix eggs with milk and sunflower oil. Add salt, sugar and mix everything into a homogeneous dough, beat with a whisk or hand blender.

Gradually add pre-sifted flour and soda quenched in vinegar and stir everything well. In addition to baking soda and vinegar, you can use your usual baking powder.

Add some spices to the dough to taste. For example, curry, saffron, or turmeric are good ingredients to give the pancakes a brighter color. The consistency of the dough should be like liquid sour cream or kefir.

Pour some oil into a large pan (this should be done only before frying the first pancake). When the oil is hot, pour out the dough and fry the pancake on both sides.

It should be borne in mind that the larger the diameter of the pan, the higher the stump will turn out.

Place the finished pancakes in a slide on a flat plate. You can brush the edges with a lump of butter to soften them. You should make at least 5 pancakes.

Now you can start preparing the filling for the "Stump" salad

Mushrooms must be peeled, washed and finely chopped.

Fresh champignons are great for hemp, but if they are not available, then feel free to use pickled mushrooms. The most successful option is those collected with their own hands in the forest - such mushrooms are the most fragrant.

Peel the onion and cut into small pieces. We will fry these ingredients for hemp, but you can use another cooking option - pickled onions, this is very tasty. It is better to take a red salad onion.

Pour some oil into a frying pan and fry the onions. Then add mushrooms to the onion and fry them until tender. During the cooking process, the mushrooms need to be slightly salted, you can add spices.

Instead of fried champignons, you can use, for example, or, which also need to be finely chopped.

Peel and grate the carrots. Add some mayonnaise and stir. Chopped garlic can be added to taste.

Finely chop the chicken fillet and mix with mayonnaise.

Grate hard cheese on a fine grater, add mayonnaise and mix. You can also add garlic to the cheese to taste.

We form the "Penek" salad

When the pancakes and filling are ready, you can start assembling the hemp. To do this, the first pancake must be cut in half. Cut the second, shifting the cutting line 1 cm from the middle. Cut the third and fourth pancakes, leaving 2 cm from the middle.

Leave one pancake for making "roots".

Cover the table or other suitable surface with cling film. On it you need to lay out a strip of pancakes, starting with smaller ones and ending with large ones. Pancakes should be overlapped. Grease the edge of the bottom pancake with melted cheese and glue the next pancake to it.

Apply the filling in strips: on top (at the cut - this is the top of the hemp) - carrots, then mushrooms, chicken, cheese. Leave a little filling for the "roots" (3-5 tablespoons - as appropriate).

The filling in "Stump" can be laid not only in layers, as in the photo, but also mixed. In this case, we first lay out the carrots, which mainly play the role of decorating the stump, making it brighter, then - the mixed filling.

If your filling is sweet, then grease the pancakes with the cream recommended in the preface, put the fruits cut into thin slices on top and roll into a roll. You can decorate this version of hemp with mint, tarragon.

Roll up the pancakes. Hold the filling so that the stump comes out neat. If the carrots come out slightly at the top, trim them with a spatula. When folding the roll, do not squeeze it too hard with your hands.

Cut the fifth pancake in half. After mixing the remaining filling, fill these halves with it and roll the hemp "roots" out of them.

Place the "stump" on a flat dish, place the "roots" next to it. It is better to use a large serving dish, then you can richly decorate the stump.

Decorate the "Pynek" salad with herbs and pickled mushrooms. If you wish, you can boil a few quail eggs and make "fly agarics" out of them. It is advisable to decorate just before serving, so that the greens do not wilt and the pancakes do not wind up. If cooking ahead of time, cover the finished stump with a food bag or plastic wrap.

boiled potatoes - 3-4 medium-sized tubers
boiled carrots (I fried raw) - 2-3 pieces
boiled eggs - 5 pieces
pickled honey mushrooms - I have a jar of 300 ml
fresh champignons - 150 g (you can do without them, but I added and did not regret it at all!)
ham - 200-300 g
mayonnaise
greens - dill, parsley
For registration:
soft processed cheese - about 400 g (I have 2 jars of 180 g each)
pickled mushrooms
greens - dill, parsley, green onions

Let's start kneading the pancake dough. Mix eggs, salt, paprika and chopped onion.


Add chopped dill, flour and milk. I must say that I also added baking soda on the tip of a teaspoon. Mix well.



The dough seemed thick to me and I added a little more milk and a little vegetable oil. She baked pancakes in a dry frying pan. Rolled over perfectly! (I was a little worried - I never baked pancakes with onions :-) But in vain! The dough turned out to be very obedient) I got 9 pancakes.


And we continue the process :-) Grated eggs + mayonnaise, mix



We will also eat potatoes + mayonnaise, mix. Diced ham + mayonnaise, mix. Cut the champignons, fry



and mix with chopped mushrooms and herbs

We begin to lay the pancakes with an overlap, having previously greased them with melted cheese. I got a lane of six pancakes. trim the bottom edge of the pancakes.
