Imagine my surprise when I bought and cleaned them for the first time. It turns out that everything is very simple. But you still need to know some subtleties.
Squids are useful because they are 20% protein. But it is this quality that presupposes some features of their preparation. The fact is that during prolonged cooking, the protein curls up, which makes the squid tough as rubber and unusable. Therefore, in order to cook soft squids for salad, you need to adhere to the following rules:
4. Inside the squid fillet, be sure to remove the cartilaginous chitinous chord. Simply separate it from the carcass and remove any hard particles with your hands.
5. After you have cleaned the squid, boil them in salt water. In this case, after boiling, cook for no more than 2 minutes, even better 1.5 minutes. At the same time, do not leave the pan, but strictly monitor the time.
6. After the time has elapsed, remove the squid from the pan and place in a colander.
7. For 1 kg of fresh squid you will need 2 liters of water and 2 tbsp. l. salt.
8. For more flavor when cooking, add 2 tbsp. l. sugar, bay leaf, black peppercorns and 1 tbsp. l. vinegar.
9. Another reliable way to cook soft squid for salad is to pour boiling water over them 2-3 times. This method is considered more reliable, since there is no danger of digesting the squid. This filling is quite enough to prepare the squid for consumption.
10. If you have missed the moment, have digested the squid for more than 2 minutes and they become tough, do not despair - they can be saved. In volume, they greatly decrease, but after 30 minutes of cooking they will again become soft.

Pour 2 liters of water into a large saucepan and boil beans in it, add garlic. Bring to a boil, then continue to cook over moderate heat for about 30 minutes, season with salt and cook for about 10 minutes more. Drain the water from the beans, leaving 1 ½ cup of liquid in stock. In a large deep frying pan, heat all the oil, put squid and sage in it. Fry over medium heat, stirring occasionally, until the squids turn white (it takes about 5 minutes). Add tomatoes, chopped red pepper and salt. Stew over medium-low heat, stir, the sauce should thicken slightly (about 20 minutes). Add beans and set aside liquid to the mixture in a frying pan and stew for 10 minutes (the squids will be tender, and the sauce will become thick), pour parsley. Prepared bread is laid out on plates. A salad is laid out on each slice.
A suitable dish for fasting is a salad with herring and beans. But you can eat it on ordinary days. This recipe requires the following ingredients:
