I really like to watch foreign culinary shows. Exotic and rare products, unusual recipes, elegant presentation of dishes. Sometimes I try to cook something from what I saw at home, like chicken chops. I also learn a lot of new and interesting things. I recently discovered Panna Cotta dairy dessert. The dish is considered to be from Italy, Panna cotta means “cooked cream”. Those who do not like jelly are unlikely to like it, but I liked the dessert.
I was looking for the recipe on the Internet. I did it in two ways: with and without an egg. The egg adds a creamy color and flavor to the dessert, but it's not bad without it. Panna cotta is served with sauce, it enriches the taste of the dish.
Panna cotta Recipe with the addition of eggs.
I counted calories while cooking. I bring to your attention a recipe with a calculated calorie content.
Panna cotta Calorie Recipe
Net per serving - the amount of finished product in one serving per 150 g.
Quantity - the number of products for 6 portions of 150 gr.
Kk per 100 g - calorie content per 100 g. product from the reference book and product labels;
Kk in a dish - the calorie content of the ingredients in the finished dish.
Total: the calorie content of one portion of Panna cotta dessert is 499 KK. This is without sauce.
Milk is mixed with cream. Gelatin is added to one glass of the mixture for swelling. We put the rest of the mixture in a water bath, add sugar and spices, stir until dissolved. I chose ground cinnamon and cardamom according to my taste, as well as vanilla sugar. Then we combine the two mixtures, stir until the gelatin is completely dissolved, without bringing to a boil. We filter, pour into molds and send to the refrigerator for solidification.
If we do it with an egg, beat the yolk with a small amount of milk mixture and pour it into a saucepan in a thin stream, stirring vigorously. The cream and milk in the saucepan must be warm, not hot, otherwise the egg mixture will curdle.
The sauce is made from any fruit or berries with sugar. I made an orange one. I cut an orange, poured 4 tablespoons of sugar and cooked over low heat until the sugar was completely dissolved and thickened, then filtered. This sauce will appeal to those with a sweet tooth. Panna cotta is very sweet, in my opinion, it is better to make a sauce of sour berries or fruits (cherries, currants ...) for it.
If desired, lay out the panna cotta from the molds, pour over the sauce. Top with fresh fruit or berries. Dessert is suitable for both children and adults.

Dissolve gelatin in 1 tbsp. water and leave to swell. Pour milk into a small saucepan, add coffee and bring to a boil, remove from heat.
Whisk the yolk with sugar and add to the hot milk. Put the resulting mixture over low heat, heat, stirring constantly and not boiling. When the mixture begins to thicken, remove it from the heat and dissolve the gelatin in it. Leave to cool.
Pour sour cream (or cream) into the cooled mixture, mix. Pour the mixture into molds or cups. Refrigerate for 5 hours. In order for the cooled dessert to easily separate from the molds, put them in hot water for half a minute. Garnish with cocoa, grated chocolate and orange peel.

Such a delicate creamy dessert came to us from the north of Italy and quickly won the hearts of those with a sweet tooth all over the world. The panna cotta recipe necessarily includes cream, vanilla (or vanillin) and granulated sugar. In addition to the classic version, you can cook interesting varieties of it - with strawberries, coffee, chocolate and even citrus fruits.
The name of the panna cotta dessert is translated as "boiled cream" or "boiled cream". In its composition and method of preparation, it resembles pudding or ice cream, which is more familiar to us. But the taste is more tender. This dessert is also well suited for a festive table. Especially if you decorate it with the original.
The cream in the treat under discussion is mixed with sugar, vanilla and other delicious ingredients.
The only drawback of the delicious panna cotta is its high calorie content - 298 Kcal per 100 g. For this reason, it is rarely prepared by young ladies who are worried about their figure.
Ingredients: 310 ml very heavy cream, 90 g cane sugar (brown), pack of gelatin, 60 ml unflavored cognac, a pinch of vanilla.
The classic panna cotta recipe can be improved to your liking. For example, use melted chocolate together with cognac.
Ingredients: half a liter of very heavy cream (for whipping), 80 ml of purified water, 14 g of gelatin, 2 small. tablespoons of instant coffee, 60 g of granulated sugar, 110 g of high-quality dark chocolate.
The resulting coffee panna cotta is sent cool until it is completely cooled and solidified. The dessert is decorated with ground nuts.
Ingredients: 2 tsp agar agar, 610 ml of low-fat milk (0.5%), 6 yolks of large eggs, 2 g of vanilla in pods, stevia in drops (4 drops), 320 ml of purified water, 4 small. tablespoons of cornstarch.
Ready-made dietary panna cotta is served with tea after hardening.
Ingredients: 1 tbsp. fat milk and the same amount of cream (for whipping), 14 g of instant gelatin, 90 g each granulated sugar and dark chocolate, a pinch of vanilla sugar.
The finished chocolate panna cotta is garnished with coconut flakes.
Ingredients: 160 ml heavy cream, 90 ml milk, 70 g regular sugar and 2 pinches of vanilla, 220 g fresh strawberries, 11 g gelatin, 60 ml boiling water.
Ice-cream bowls with strawberry panna cotta go cool until they solidify.
Ingredients: 3 tangerines, 310 ml heavy cream, 2 tbsp. l. sugar, 15 g of high-quality gelatin, 50 ml of boiling water, 2 drops of vanilla essence. How to make citrus panna cotta is described below.
Such a flaky dessert is again removed for the cold. You can also use orange juice instead of tangerine juice.
Ingredients: 620 ml of medium-fat cream, 140 ml of milk, 6 g of vanilla sugar, 11 g of gelatin, 60 ml of purified water, 65 g of granulated sugar.
First, they are cooled at room temperature, then covered with cling film and put away in the cold.
Ingredients: 210 ml of fat milk, 140 g of granulated sugar, a couple of drops of vanilla essence, lemon, 55 ml of rum, 620 ml of heavy cream, a bag of gelatin.
To easily remove the delicacy from the containers, you need to immerse them in hot water for a few seconds.
Ingredients: a glass of cream 10% fat and 2 cups 33% fat, a small piece of lemon zest, 1 tbsp. l. vanilla extract, 80 g sugar, 9 g gelatin, 50 ml water, 130 g fresh or frozen raspberries, 2 tbsp. l. powdered sugar, 1 tbsp. l. freshly squeezed lemon juice.
The finished panna cotta is poured with berry sauce and decorated with fresh mint leaves.
Ingredients: 4 leaves of gelatin (10 g), a glass of heavy cream, kefir and milk, 90 g of granulated sugar, zest from 1 orange, vanilla pod.
The resulting delicacy is decorated with fresh berries.
Ingredients: 680 ml each of milk and heavy cream, 25 g of high-quality gelatin. 1 vanilla pod, 170 g granulated sugar, 230 g fresh and 130 g frozen strawberries.
The finished panna cotta is poured with strawberry sauce and immediately served as a dessert.
For the preparation of panna cotta, very heavy cream is always taken.
But their fat content should not exceed 35%, otherwise the product will turn into fat when heated.
So that no dense lumps come across in the dessert, the gelatinous mass is always filtered before adding to the creamy mixture.
Panna cotta can be served with any berry or fruit sauces. You can effectively decorate it with grated nuts, fresh berries and pieces of fruit, coconut, seeds. You can simply pour condensed milk or melted chocolate on the treat.
If we talk about Italian cuisine, then we can say that it is saturated with the sun! And only in Italy food and sun are so harmoniously combined with each other.
It is best to start your acquaintance with the kitchen with panna cotta.
The recipe for this dessert is the oldest of all and it began its existence back in the Roman Empire. However, in those days, it looked more like a dessert. Well, there were no refrigerators in those years! In the modern world, panna cotta has become popular in the United States thanks to immigrants from Italy who cannot live without their favorite dessert. Even the famous one has tender feelings for panna-cotta, according to him, she reminds him of home.
Most dessert lovers can be roughly divided into 2 categories:
1) lovers of tiramisu;
2) the worshipers of panna cotta.
Initially, panna cotta was prepared exclusively from dairy products without adding in those distant ancient times, it was too expensive, and not everyone could afford it. Since the calorie content of 100 g panna cotta is 298 kcal, ladies can rarely pamper themselves with such a dessert. But sometimes you really want to arrange a royal dinner for yourself, and it is impossible to imagine it without panna cotta. Therefore, forget about your figure for a while and feel the taste of the royal Italian dessert.
Now confectioners are experimenting with recipes. Panna-cotta did not remain unchanged either. Nowadays, the calorie content of panna cotta is quite minimized. Dear ladies, do not think about the scales and feel free to enjoy the taste of milk dessert!
Not every one of us can afford to enjoy this dessert in a restaurant or cafe. And sometimes you really want to cook something with your own hands. It's not for nothing that people say that everything that is prepared for themselves and in their own kitchen is always tastier. For those who want to show their culinary skills, the following recipe is offered:
Sugar - 50 g;
Vanillin (added to taste);
35% cream - 500 ml;
Leaf gelatin - 4 g.
The cream, vanillin and sugar mixed in a saucepan must be brought to a boil. After that, you need to reduce the heat and cook this mass for 3-5 minutes. Remember to stir constantly, as the cream can burn and this burning taste cannot be eliminated!
Gelatin must be soaked according to the instructions on the package. After it is completely soaked, it must be squeezed out and put into our creamy hot mixture. After that, mix thoroughly and quickly so that the gelatin is completely dissolved in this mass.
Every housewife in the kitchen should have forms, no matter what. For example, you can use silicone. There is no need to lubricate them. Pour the prepared mixture into molds, then put them in the refrigerator for 8 hours. It would be ideal if they stay there all night. In the morning, we need to rid our delicate panna cotta of its shape. To do this, we need a shallow container with hot water and a plate where we will eventually put our dessert. First, we dip the panna cotta pan into a container of water, then turn it over onto a plate. Due to the high temperature, ours will leave his "house" and will be in the center of the plate. That, in fact, is all. You can decorate the dessert according to your taste and imagination.
The photo shows panna cotta cooked at home.
If done correctly, heavenly delight is guaranteed. As you can see, the calorie content of panna cotta according to this recipe is quite high, so do not get too carried away with it if you care about your figure.
The classic panna cotta differs from the above only in the form of presentation. It is prepared in the same way, but before serving it is poured with chocolate or fruit sauce, decorated with fresh raspberries, blueberries or strawberries. And all this beauty is complemented by mint leaves. Although such a dessert is very tasty and satisfying without sauces.
Let's share another unusual panna cotta recipe. When people hear the phrase "coconut panna cotta", then in their imagination they see this dessert abundantly sprinkled. But in fact, there are no shavings there. Where does the coconut come from? It's all about one ingredient - coconut milk.
To create such a dessert, we use the same recipe for making panna cotta at home, only add 300 ml to cream, sugar and vanilla.Since the amount of our bulk has increased due to the secret ingredient, do not forget to double the amount of gelatin and sugar.
Well, if you are already a fan of the coconut flavor, then you can sprinkle the finished panna kota with a little coconut.
To lower the calorie content of panna cotta, you need to use not very heavy cream. The taste of this, of course, will change, but your figure after eating such a dessert will remain unchanged.
Don't be afraid to experiment in the kitchen! Cook with pleasure for yourself and your loved ones!
