Why do I love Russian cuisine so much? For summer sorrel patties! I was looking forward to the summer sorrel harvest to bake delicious sorrel pies. I could not resist the first bunch and started cooking with one foot in the garden.

I will not "lift" a long dough on dough, but I will knead a quick semi-layered dough on dairy products and flour. I will make pies with sweet sorrel filling. They are very juicy and extremely tasty with sugar (in fact, this is the main secret of the juicy filling of sorrel pies). I'll take a couple of pies for testing to the neighbors.

So, the sorrel pies in the oven ...

First, I take food for the test. I have flour, sour cream, milk, mayonnaise, butter, sugar, salt, and baking soda on my list. There is not so much of everything as it might seem at first glance.

I will chop the butter into pieces with a knife. First you need to slightly defrost.

I combine butter with flour and bulk ingredients. At this stage, I take 2 full glasses of flour.

I rub it into crumbs with my hands.

I add sour cream, mayonnaise and milk - just a little bit.

I begin to knead the dough. It shouldn't stick to your hands. If you need more flour, I'll add.

At the exit I have a soft semi-layered dough. I send the dough to the freezer while the filling is preparing.

For the filling, I'll take fresh sorrel and sugar. The sorrel must be washed and dried.

Then chop, but do not grind.

Season with sugar.

Knead well with your hands.

I take the dough out of the freezer and immediately begin to form the pies. I divide the dough into balls. Dip them in flour.

I roll it into flat cakes.

In the middle I spread the sweet filling with sorrel.

I sculpt boat pies. While sculpting, I dip my hands in flour.

I grease the baking sheet of the country oven with butter. Preheat the oven to 200 ° C.

I bake sorrel pies in the oven for 30 minutes, until golden brown.

Country homemade sorrel pies are ready!

I took it to treat the neighbors.

Sorrel filling for patties - the secret of a juicy filling

First of all, you need to choose the right sorrel. You can take frozen, but fresh herbs are better.

When buying on the market or in a store, you should pay attention to its appearance:

  • It is necessary to take only those greens, the leaves of which have a uniform, saturated color.
  • Sorrel has a fresh aroma with a slight sourness, there should be no foreign odors.

If the greens grow in the garden, then they must be harvested shortly before use.

Then you need to prepare it: there are two ways.

To begin with, the sorrel must be sorted out, cleaned of debris and foreign herbs, rinsed and discarded in a colander so that the water is glass. The stems are very tough, so it is best to remove them. They are also recommended to be dipped in boiling water for a couple of minutes, then they will be softer and suitable for filling.

  1. Finely chop the clean greens and mix with the indicated products.
  2. Crumble sorrel and pour boiling water over for 1 minute. Drain the water, squeeze the leaves and then add the rest of the products.

It is worth noting that sorrel greatly decreases in volume during cooking, so do not be alarmed when a small bowl of greens turns out from a mountain of leaves.

Filling for sorrel patties - secrets of a juicy filling

To bake perfect pies the first time around, you need to pay more attention to the sorrel filling. It is important to select large, uniform, bright, dense sorrel leaves with a perceptible aroma. The following tips will help you keep your filling juicy.

  1. The washed leaves must be dried: if water remains in the filling, the dough will unstick during the frying process, and the juice will flow out.
  2. To prevent the filling from losing its juiciness, it is enough to add a teaspoon of cornstarch to the sorrel.
  3. The juicy filling is also obtained thanks to the sugar. Even if you're making savory patties, you can mix sorrel with a little granulated sugar.
  4. Don't be afraid to overdo it with the amount of sorrel. The filling should be put in a thicker layer, since during heat treatment the volume of greens is greatly reduced.
  5. Delicate pies with aromatic sour filling will be a great addition to the main meal or a great snack!
