Borek pie - a lazy recipe from Armenian lavash

A lighter version of Turkish unleavened dough pie. A lazy recipe from Armenian lavash, which will save a huge amount of time, but it turns out to be no less tasty and juicy.

600 grams of ground beef or lamb;

5. Roll up a long roll, grease the edge with an egg so that it sticks better and does not unfold.

6. Lubricate the form and put the resulting rolls in a spiral, you get a pie in the form of a snail. Lubricate it with an egg and send it to bake for about an hour, set the temperature to medium. If the top of the pie starts to brown heavily, you can cover it with foil or parchment.

In cold snacks, pita bread becomes very sour and in this state resembles raw dough. To prevent this from happening, do not use sauces that are too thin. You can simply grease pita bread with melted cheese or a mixture of it with mayonnaise.

If you decide to cook pita bread yourself, then in no case use butter when baking. The cake will lose its elasticity and crumble. Ideally, lavash is baked in a tandoor.

For cold pita bread, it is undesirable to use a lot of oil and fatty meat. Lean cuts, fish, chicken breast, or skinless meat are more suitable.

Lavash dried up and began to crumble? Sprinkle it with clean water (a little) and put it in a plastic bag, it will come off. You can also hold it slightly over a pot of boiling water. The evaporating steam will gently soften the food. And if the lavash is intended for folding a roll or shawarma, then just grease it with sauce, but do not rush to curl it, let it sit until softened.

"Pies" from thin lavash

It is easy to make shawarma, sama, pasties from Armenian lavash. You just need to make a suitable filling, roll it up, fry in a pan in oil.

For shawarma, cabbage is suitable, which needs to be sprinkled with sauce, chicken, cut into pieces and laid out on top of the cabbage, another layer of cabbage. All this filling is laid out in the center of a rectangle cut off from the lavash, rolled up with a tube, having previously bent the ends on the sides so that the filling does not fall out.

For chebureks, minced meat is suitable, which must be pre-fried almost until tender.

The "pies" from thin lavash are very tasty according to this recipe:

  • armenian lavash - 2 pcs.;
  • hard cheese - 0.2 kg;
  • chicken egg - 2 pcs.;
  • mayonnaise - how much will it take;
  • vegetable oil - how much will it take;
  • green onions - 50 g.

Cooking will be like this:

  1. Grate the cheese. It will be tastier if you take hard, but melted is also suitable.
  2. Peel and grate hard-boiled eggs
  3. Chop the onion finely with a knife.
  4. Combine cheese, onions and eggs with mayonnaise. You should get a pasty mass.
  5. Cut each pita bread into 8 pieces.
  6. Place a spoonful of the filling on each part. Roll the pita bread into a triangle.
  7. Fry in oil on both sides until the triangles are browned.

Try to make such "pies" at least once, and they will often begin to guest on your table.

Dishes from Armenian lavash are good because they can be made from almost everything that is at hand, you just have to dream up a little. However, when inventing recipes, there are a few things to keep in mind:

  • do not use too liquid sauces, otherwise the lavash will get wet and creep;
  • for the filling, it is better to take not too fatty foods;
  • do not store dishes from thin pita bread in the open air, as it dries quickly and becomes fragile;
  • try not to overexpose the pita dish in the oven or in a frying pan.

It is better to store pita bread in a bag so that it does not dry out and become brittle. At the same time, the shelf life (usually 72 hours) should not be exceeded, since pita bread can become moldy.

A wonderful friend of my mother, Julietta Armenovna, an Armenian by nationality, always says that more than a thousand dishes can be prepared from lavash. And I willingly believe her. This universal product used in the preparation of snacks, baked goods and even desserts. And with the filling, you can fantasize endlessly!
