Cottage cheese with herbs: recipes for an excellent snack. Cottage cheese with garlic and herbs - recipe

26.08.2019 Dishes for children

Classic curd dishes are sweet, with sugar, jam, dried apricots and raisins. However, the options for using the product are not limited to them. Salty, spicy snacks and fillings are also prepared from high-quality, most often homemade, cottage cheese.

To obtain a paste-like mass, mayonnaise of varying degrees of fat content is used. It is he, among other things, that smooths out the pungency of garlic juice, and if mustard or its oil is included in the sauce, then the dishes acquire a completely indescribable flavor.

Cottage cheese with herbs and garlic - general cooking principles

Curd with herbs and garlic - a homogeneous, slightly spicy curd mass. To bring its main components to the required, uniform state, a blender (immersion or with a bowl) may be required. In the absence of this kitchen processor, you can take the most ordinary meat grinder with a very fine grid or a rare metal sieve.

In most cases, such a dish is not subjected to any heat treatment, an exception may be the use of curd mass for filling pies fried in a pan. Therefore, all products for cooking should be taken only of the first freshness.

Cottage cheese is the basis of such a dish. Its consistency, graininess and fat content do not play a special role. Everyone can choose the one they prefer. But it should be borne in mind that the fatter the cottage cheese, the easier it is to stir and the mass will be easier to spread on bread or vegetables. Therefore, sour cream or mayonnaise is added to the low-fat one, and the fat-free one for a dietary dish is interrupted with a blender.

Any greens can be added - dill, parsley, cilantro, mint, basil, etc. It all depends on the type of dish prepared and personal preferences. It is undesirable to put green onions - the dish may taste bitter.

A homogeneous curd mass is brought to the desired taste by adding and seasoning with black pepper.

Cottage cheese with herbs and garlic can be served as an independent dish. This mass is spread on slices of bread, crispbread, fresh or fried vegetables (zucchini). With her, you can make Turkish unleavened pies from thin lavash. It is also perfect for stuffing fresh vegetables (tomatoes) or filling holiday profiteroles. It is very simple and easy enough to prepare a festive snack roll with tomato slices inside.

Cottage cheese with herbs and garlic - cooking tricks - useful tips

Fresh cottage cheese is always white. Too greasy or homemade can have a characteristic slightly yellowish tint.

A quality product is neither too lumpy nor dry, nor does it contain excess whey.

Stale expired cottage cheese has a slight moldy smell and is slimy. It tastes very bad.

Be sure to rinse all greens thoroughly and dry them dry. The remaining water must not get into the cooking dish, otherwise it will quickly deteriorate.

It is better to take fine salt. Its crystals will disperse better in the curd mass, and it will be salted more evenly.

Excessively grainy cottage cheese, before twisting in a meat grinder, it is advisable to grind through a sieve, the mass will be more homogeneous.

Light snacks are always a great table decoration. Delicious, hearty, quick-to-prepare dishes attract the attention of guests. It is no secret that the combination of the simplest products turns out to be very tasty. Cottage cheese, herbs, garlic, tomato and cucumber fit this description. Together, these products make up an independent and mouth-watering dish, although cooking time is very short.

Features of this combination

Cottage cheese, herbs and garlic are a great food combination. All ingredients together carry a huge amount of vitamins. Moreover, in the dish of these products there is a lot of protein, and there are practically no carbohydrates.

The main feature of the combination of cottage cheese, herbs and garlic is that it is a calorie-free dish.Doctors advise making such a snack because it is full of benefits. Curd is a source of calcium. It can be an excellent substitute for meat products, since it contains protein: 100 grams contains 16.5-18 grams of protein.

Satisfying hunger is another important feature of the snack. Cottage cheese, herbs, garlic do not interfere with losing weight even if you want to eat a dish in the evening. The curd mass is quickly absorbed and easily accepted by the body.

You can also add a tomato or cucumber to your snack. This will not spoil the dish at all, on the contrary, it will add freshness. Another plus - the cooking process takes very little time, literally 5-10 minutes.

It is worth talking about the benefits and the harms. You may hear the opinion that this dairy product is harmful to the body. Don't believe the rumors. The presence of lactose in cottage cheese does not in the least reduce the importance of its important functions. Yes, lactose slows down weight loss, but does not harm the body at all.

Do not be afraid to eat cottage cheese with herbs and garlic in the evening: the calorie content of a dish from these products cannot be higher than 150 kcal.

It all depends on the fat content of the milk component.

Recipes

Consider options for how to make a curd snack with herbs.

Basic recipe

Cottage cheese with herbs and garlic is a homogeneous mass. This dish does not need to be heat treated, so it is necessary to choose products of the first freshness.

As for the herbs, you can use anything except the green onions because they will add bitterness. You can also add a couple of mint leaves. This will only brighten the taste of the snack.

Choose the fat content of the curd according to your preferences. If you want to make a dietary meal, use a product with a fat content of 0-0.5%.

And you can also add cucumber and tomato if the curd is not completely chopped in a blender. Use vegetable oil or sour cream so that the dish does not taste dry. Just a little bit: one tablespoon will be enough.

The main ingredients of the curd snack with herbs:

  • 400 g of cottage cheese;
  • greens (of your choice);
  • 2 large cloves of garlic;
  • slice of lemon.

First, cut the garlic into 4 pieces and place in a blender. Gradually add coarsely chopped greens to it. Next comes the curd and a slice of lemon. Stir all foods for a few minutes. Everything, your dish is ready!

The appetizer can be served in various ways: on slices of bread, on chopped vegetables, in tartlets.

Light dietary snack

Today dietary products are in great demand. People who want to quickly lose weight often start eating very small meals 1-2 times a day. Moreover, they believe that various "protein" bars are many times more useful than cottage cheese, boiled meat, vegetables. They are definitely wrong.

For proper weight loss, it is necessary to use "real", not chemically processed foods. Curd, for example, is the most important element in the diet. However, many people cannot eat it dry. This recipe will help you not only have a tasty and satisfying meal, but also lose those extra pounds. Such a dish is the key to a healthy diet.

To prepare a diet snack you will need:

  • 100 g fat-free cottage cheese;
  • medium-sized cucumber;
  • greens (optional);
  • a small clove of garlic;
  • a few loaves of bread.

First, prepare all the products for use: mash the cottage cheese a little, rinse the herbs, peel the garlic, cut the peel from the cucumber. Then transfer the curd to a blender. Cut the cucumber into rings, then add it to the curd. First chop the garlic with a garlic press, put it in a blender bowl. After that, add the herbs, use salt and pepper to taste.

Beat all ingredients with a blender for 4-7 minutes. The mixture should be homogeneous, "smooth", without lumps. It spreads easily on bread.

Since the appetizer is dietary, it should be served on buckwheat bread. Garnish the "sandwich" with a sprig of dill and a slice of tomato.

An exquisite way of making cottage cheese with herbs

Garlic, cottage cheese and herbs are a very simple but delicious dish. However, I want something "exotic", unusual. To the question of what to add so as not to spoil the taste, you can answer - avocado.

This fruit is very rich in vitamins. Moreover, using it, you do not need to add oil to the mass, since the avocado contains a fatty component. Don't be afraid to experiment with the composition of the snack!

Products that are needed for cooking:

  • one ripe avocado;
  • 100 g of cottage cheese with a fat content of 9%;
  • any greens to choose from;
  • some green onions (half one pod);
  • salt pepper.

You do not need to use garlic in this recipe, because onions replace it.

First, prepare the curd by passing it through a sieve. If this is not possible, then just mash it with a fork. Carefully cut the avocado into two equal parts without touching the pit. Get it out. The pulp of the fruit must be mixed with cottage cheese.

Chop the herbs finely and transfer to a bowl with the rest. Swirl everything in a blender for a few minutes. The filling should be free of lumps. Season with salt and pepper to taste.

The dish needs to be cooled: put it in the refrigerator for 20 minutes for the appetizer to improve its taste. Remember one important point: the filling cannot be prepared in advance.

Use avocado peels when serving. The boat shapes will decorate your table and surprise your guests. Cut a tomato or bell pepper into cubes on top of the filling.

You can also crumble some greens.

Put mayonnaise and sour cream in the resulting snack. Then season with salt and pepper to taste. Mix everything again with a blender.

Cut the tomatoes in half and make small cuts. Shape the tomatoes into a "tulip" shape. Remove all the pulp and fill the empty space with the curd mass.

Spicy cottage cheese with sour cream is best used not for breakfast, but for dinner.

Cottage cheese with herbs in thin Armenian lavash

Lavash has become as common a product as cottage cheese. Moreover, you can make a lot of delicious dishes from it. Using Armenian lavash in the cooking process, you "get rid" of the "torment" with the dough.

This recipe, unfortunately, is not for those who really want to lose those extra pounds. The dish is extremely appetizing and tasty, but high in calories.

You will need the following ingredients:

  • 500 g of cottage cheese with a fat content of 9%;
  • 2 thin Armenian lavash;
  • greens (of your choice);
  • 5 eggs;
  • 150 g sour cream.

Combine cottage cheese, herbs and 2 eggs. Spread the pita bread and spread the mixture evenly over it. Roll each sheet of pita bread into a roll.

This recipe requires heat treatment. Therefore, prepare an oiled baking dish in advance.

Place the filling wrapped in pita bread on a baking sheet. Then whisk the sour cream with 3 eggs, salt and pepper. Lubricate the pita bread with cottage cheese and herbs with the prepared mixture.

You need to bake the dish until the moment when a golden crust forms. Preheat the oven to 180 degrees. The food cooks pretty quickly, so watch it carefully.

After baking, it is necessary to allow the pita bread to cool down. After a while, cut into small pieces and serve.

Alternatively, you can make pita bread stuffed in the form of envelopes. To do this, you need to wrap cottage cheese with herbs in pita bread, but crosswise. The baking time remains the same. The dish tastes like khachapuri.

Pie stuffed with herbs and cottage cheese

If you want to surprise your guests, then this recipe is for you. An open pie with cottage cheese and herbs is very reminiscent of Caucasian cuisine in taste. When a piece of this wonderful dish gets into your mouth, a mountain landscape is immediately drawn in your mind.

  • greens;
  • 100 g sour cream.

Stir the curd with herbs. Then add 2 eggs and whisk the whole mixture. Prepare a baking dish. It should be well oiled.

Spread one sheet of dough on a baking sheet. Spread the resulting filling over it. The second sheet is the "roof" of the pie - they need to cover the curd with herbs. Remember to join the edges.

Make a wide hole in the center of the cake so that it can receive oxygen. Brush the dough with one egg.

The oven must be preheated to 180 degrees. Bake the dish until golden brown. Check the pie with a toothpick; if it is wet, the toothpick will be wet. Enjoy your meal!

Main Ingredients:

  • 150 g of cottage cheese with a fat content of 5%;
  • 20 g dill;
  • 2-3 pickled cucumbers;
  • 20 ml of kefir.

Rinse the greens under running water. Chop the dill. Cucumbers can be cut into cubes. You do not need to cut off the peel. It will add crunch and flavor to the dish.

Curd must be made into a homogeneous mass. Use a blender to do this. Add the rest of the ingredients to the resulting mass and mix thoroughly. Serve the dish in different ways: on slices of bread, in egg white or tomatoes.

However, a salty snack is best combined with thin pita bread.

Each hostess wants her dish to be very tasty, and especially so that guests like it. Unfortunately, it is not always possible to "please" these factors.

There are no specific rules for success. But there is a list of recommendations that will help you prepare an appetizer from cottage cheese and herbs so satisfying and appetizing that your guests will always ask for more.

Cottage cheese

Choose not too fatty cottage cheese. The high fat content of the dairy product produces juice that impairs the taste. The color of fresh good cottage cheese is white. Home may have a characteristic yellow tint.

A quality product should not contain large lumps.And also fresh cottage cheese should not be dry. There is serum in a quality product, but there is not much of it.

Expired cottage cheese smells like mold. You can also experience sour notes. Of course, such cottage cheese cannot be eaten.

If you have purchased grainy curd, do not despair. It can be turned into a homogeneous mass as follows: rub the curd through a sieve before mixing the ingredients with a blender.

Greens

Always choose greens to your taste. It must be rinsed and dried before cooking. The water needs to be removed because it will spoil the freshness of the dish.

Salt

Use fine salt. It will be absorbed much faster and more evenly.

The main thing is to cook with pleasure. This "ingredient" will enhance any snack!

Most often, cottage cheese is used as a dessert: sugar, berries, jams or fruits are added to it. But professional chefs and housewives have proven that the product is perfect as a savory snack, decorating any festive table.

Cottage cheese is widely used in the recipes of various cuisines of the world as a delicious and healthy product. It contains trace elements and vitamins in large quantities. There are many famous dishes that use cottage cheese as a component. And if this product is usually associated with sweet desserts by some, this article focuses more on dishes that use salty and seasoned spices. Cottage cheese with herbs and garlic is just such a dish.

Appetizer and filling

It is characterized by a sharp taste, pleasant aroma, the ability to spread on croutons or dried bread. Preparing such an appetizer (cottage cheese with herbs and garlic) is quite simple. Cooking takes just a few minutes.

We need: half a kilogram of cottage cheese, half a glass of low-fat sour cream, a bunch of green onions, a bunch of greens (dill, cilantro, parsley, basil), a couple of cloves and pepper.

Preparation

We prepare cottage cheese with herbs and garlic according to the following scheme. Knead the main product thoroughly with a fork, pouring in sour cream (you can use a blender to form a fluffy homogeneous mass). Finely chop all the greens. Mix with the mass prepared in a blender or manually. Squeeze the garlic with a press and mix with the main part. Salt and pepper to taste. If we want to get a cream paste that can be easily spread on a toast, it will not be superfluous to beat the whole mixture in a blender again. This cream can be packaged in jars and kept in the refrigerator. It is very convenient, for example, to use ready-made pasta in the morning for delicious sandwiches, but in this case, we recommend putting less garlic there. If served as a salad, then it is better not to beat in a blender, but to knead it by hand.

Cottage cheese with herbs in lavash

Thin Armenian lavash has taken root in our kitchens. With its help, you can prepare a lot of quick interesting dishes. Such dishes include cottage cheese with herbs and garlic, baked in. In addition, the main advantage is the absence of fiddling with the dough, since the Armenian product successfully replaces it.

Ingredients: half a kilo of low-fat cottage cheese, two (thin), five eggs, half a glass of sour cream, assorted greens.

Preparation

Mix greens, cottage cheese, two eggs until smooth. Distribute the cooked mass evenly on the sheets of pita bread. We roll each lavash into a roll with cottage cheese and herbs. Put the rolls on a greased baking dish. Beat the sour cream with the remaining eggs, add salt and pepper to taste. We coat each rolled roll with cottage cheese, eggs and herbs with the resulting mass on top. We bake the dish in an oven heated to 180 degrees until golden brown (the product cooks very quickly - look, do not miss it, so that the dish does not burn). Take the finished baked goods out of the oven and let cool. Next - cut into portioned rolls and serve, laid out on a large plate.

Envelopes

Alternatively, you can make small rectangular envelopes from pita bread. Put the same filling inside and carefully wrap it crosswise. Spread on top. Bake under the same conditions, briefly. These envelopes taste like small khachapuri.

Can be prepared with the same filling. To do this, we buy puff pastry in the store, defrost it and roll it into thin sheets. Of course, if there is such a desire, you can make the dough yourself (here we are already using the most familiar and proven method). With the filling made according to the above recipe, we spread one sheet, and with the second we cover, connecting the edges. In the middle we leave a rather large hole so that the cake can breathe. Coat the top of the cake with a beaten egg. We bake in the oven at medium temperature until tender (check with a match).

Tortillas

This dish can also be categorized as fast food. You will need: three glasses of flour, a glass of water, a couple of tablespoons of vegetable oil, three eggs, a pinch of soda, salt, 300 grams of loose cottage cheese, herbs.

Making cakes with cottage cheese

We drive one egg into the flour, put soda, vegetable oil. We make the dough and set it aside to rest. We prepare the filling: finely chop the boiled eggs, finely chop the greens. Combine with cottage cheese. We mix. We make thin small cakes from the dough (roll out with a rolling pin). Place the filling in the center of each cake and pinch the edges, making the cake flat. In a skillet in hot oil, quickly fry our cakes on both sides until golden brown. We take out on napkins to remove excess fat. Such a quick-cooked dish can be eaten immediately, hot, or you can put it in the refrigerator and serve, for example, for breakfast with sour cream sauce. It turns out very tasty. Especially children like to carry small "buns" from under the arm so that they simply do not have time to cook them!

  6. But do not forget that you also cook for guests, let the pungency be moderate.
  7. Separate about a teaspoon of curd mass and make even balls the size of a small walnut. If you have time, put the future curd snack in the refrigerator for half an hour.

Cottage cheese appetizer with garlic and herbs

Ingredients:

  • 100-150 grams of cottage cheese (I have a rustic one)
  • 1-2 cloves of garlic
  • 1 teaspoon sour cream
  • 3-4 sprigs of dill
  • sprig of green basil (optional)
  • salt to taste
  • ground black pepper to taste

Preparation:

  1. Everything is very simple to prepare. The ingredients are simple and very affordable. But it seems to me that the most important thing is cottage cheese. Delicious curd 100% success. If the cottage cheese is not tasty, sour, or has been in the refrigerator for a long time, I don't think such a snack will be tasty. You understand.
  2. Therefore, it is better to take a rustic and delicious cottage cheese. You can, of course, buy in packs in a store if you are sure of its quality. I buy very rarely from the store, mainly for cottage cheese casserole.
  3. I have sour cream in the store. But if you have a rustic one, that's just great.
  4. I don't have scales on vacation, so I dumped the cottage cheese into a bowl. Approximately 100-150 grams. I think if you like a cottage cheese appetizer with garlic and herbs, I will cook it again. Maybe even a double portion.
  5. I took one medium clove of garlic. But as it turned out later, two cloves could be added. Therefore, you can add garlic to taste. The garlic needs to be squeezed out through a press, or you can chop it finely with a knife, which I did.
  6. I also took three sprigs of dill and green basil. I added it because basil goes well with tomatoes. And I will serve the appetizer on tomato halves.
  7. I finely chopped the greens. There is also an option to chop the herbs in a blender, but I prefer to cut very finely with a knife.
  8. Then I mix everything and the appetizer is ready. I added chopped herbs, garlic, sour cream, salt, black pepper to the curd. Be sure to try the curd. Add salt and pepper to your liking.
  9. Then I rolled balls out of cottage cheese. Cut the small pink tomatoes in half. Put the tomato halves on a dish or plate. Above is a circle of cottage cheese with herbs and garlic. Decorated with greens.
  10. Also, as an option, these balls can be rolled in paprika and then they will be of a beautiful red color.
  11. Or you can - in finely chopped dill, then the balls will be green.
  12. I have a friend who always prefers cottage cheese with honey for dinner or breakfast. Their whole family loves cottage cheese. So, after talking with her, I also began to use cottage cheese with honey. We bought honey in the Crimea, from friends. Very tasty. To be honest, such delicious honey, I ate only at my grandfather's in the apiary. Well, this year we have stocked up with honey.
  13. Now I want to say my opinion about the cottage cheese snack. I really liked this appetizer, my husband liked it too.
  14. The children refused to try because of the presence of garlic in it. For adults, this is a great appetizer and you can create your own serving by showing your imagination.
  15. It seems to me that this dish is light and at the same time satisfying. And with a tomato it's just super. True, tomatoes need to be salted a little. And yet, be sure when you cook the balls of cottage cheese, put them in the refrigerator for 30-40 minutes.
  16. So, if you have not tried the cottage cheese appetizer, then I recommend trying it. Moreover, the recipe with photographs and it will not be difficult for you to prepare it.
