Stuffed zucchini - they love to eat everything, because it is a reminder of summer, and if it is, it is a hearty and healthy dish. Minced meat for zucchini can be different: only with minced meat and onions, carrots can be added to minced meat, only minced vegetable is possible.
If the zucchini is young, they do not peel it, and if it is overgrown, you need to peel the skin. The form for the filling from the zucchini is made according to the wishes of the hostess: rings, half, the shape of the boats, the shape of the cups.
In this article, I want to show how you can make different recipes for zucchini dishes deliciously and feed your family.
The dish is prepared quickly - like stuffed cabbage.
Prepare minced meat to your taste (pork, beef, mixed) - 350 g. Put 1 glass of boiled rice and 1 egg in the minced meat, salt and pepper to taste.
Grate 1 onion on a coarse grater.
Now mix everything well.
Since the zucchini is young, you do not need to remove the skin from them. We cut the molds in the form of rings or washers up to 3 cm thick.
Take out the middle of the molds with a knife
and, if necessary, with a spoon.
The holes can be cut partially and leave the bottom.
We begin to prepare stuffed zucchini. Put the prepared mixture tightly into the molds with a spoon and help with your hands.
We put the stuffed zucchini in a pan in layers, like stuffed cabbage.
Pour in plain water and salt. Let the zucchini simmer in the water for a while, and we'll make the dressing sauce.
Cut one onion into cubes, rub one carrot on a coarse grater and fry in vegetable oil.
Add frozen tomato cubes (you can cut a fresh tomato or put tomato paste) and continue to fry.
Add 3-4 tablespoons of sour cream and stir the whole mass in the pan again. Sour cream improves the taste. Season the sauce with a little salt. When the sour cream is gone, the sauce is ready.
Add the sauce to the pan with zucchini, spread it evenly over the surface with a spatula and
under a half-closed lid, we continue to simmer the zucchini for 40 minutes.
The dish with zucchini and minced meat is ready. You can taste it.
Note that the minced meat holds well and does not fall out of the zucchini shape.

Beat the eggs.
Pour a little milk into the beaten eggs and stir.

1. Wash the courgettes and cut them in half as shown. Then take a small spoon and scrape the pulp out of them, it is better if you do not peel through, but leave a small bottom. The walls should not be too thick or too thin (about 0.5 cm).
2. Preparation of the filling. Combine the diced onion, rice, minced meat, 1 tbsp. a spoonful of tomato paste, lemon juice, chopped dill, 3 tablespoons of olive oil, 2 teaspoons of salt and black pepper in a bowl.
3. Stuff the zucchini with this mixture, but not too tightly, as the rice will swell during the cooking process. Place the filled courgette halves vertically in a large ovenproof saucepan or baking dish.
4. Slice the tomato and put the slice on top, thus covering the minced meat.
5. Dilute 1 tbsp. l. tomato paste with water in a glass and pour it on the bottom of the dish where the courgettes are. Then pour in a little water so that the water is no higher than the middle. Cover with a lid or foil and place on the very bottom of the oven, you need to cook the dish for 1.5 hours until tender.

1. Wash the zucchini, cut them in half lengthwise and scrape the pulp and pits from the middle with a spoon (as in the photo).
2. Let's move on to the minced meat. Finely chop the onion, add it to the minced meat and beat an egg into the mixture, add salt and pepper. Fill the squash boats with the minced meat.
3. Bake. Preheat the oven to 200 degrees. Place the boats in a baking pan or any other high-rimmed pan with chicken stock. You need to bake for 20-30 minutes until tender. Sprinkle grated cheese on top 5 minutes until tender.

Cooking a dish:Preheat the oven to 220-250 degrees. Cut the zucchini lengthwise to make the boats. Using a teaspoon, pick out the middle, but in such a way that the walls are 0.5 cm thick. Sprinkle inside with salt and pepper. We spread the resulting boats on a baking sheet or oiled parchment paper.
Let's move on to the filling. We do not discard the core that you cut out, but finely chop it. And mix with finely chopped onions, tomatoes and mix. Squeeze the garlic here, rub the cheese, add parsley, salt and pepper. We mix everything. We spread the resulting mixture in the middle of the boats.
We put it in the oven. We bake for 15-20 minutes before the zucchini becomes soft! The dish is ready!

Now we are preparing the filling. Finely chop the onion and sauté it in a pan until soft. The spinach should be defrosted and stewed with onions for about 5 minutes. Allow the spinach to cool. Next, mix the cooked rice, chopped ham and spinach in a bowl, add salt, pepper and spices. Fill the zucchini halves with the minced meat. Put them on a baking sheet or in a baking dish, sprinkle with cheese on top.
Bake in a preheated oven at 220 degrees for 35-40 minutes until tender.
A great vegetarian diet meal. To make 6 servings with vegetables you will need:
1. Wash all the vegetables, cut off the tops of the zucchini and scrub the middle so that the thickness of the inside is 0.5 cm. Finely chop the pulp, it is useful for minced meat.
2. Cut the eggplants and tomatoes into cubes. Peel and finely chop the onion. Finely chop a piece of bread, you can use a coffee grinder to make crumbs out of it. Chop the greens and add to the vegetables. Place all vegetables in a large bowl and season with olive oil, salt and pepper.
3. Stuff the zucchini with vegetables, top with a cut-off hat and place the zucchini in a baking dish

Preheat the oven to 240 degrees. First, prepare the zucchini, cut them in half and take out the core from each half.
Next, we move on to the filling. My mushrooms and chop finely. Peel the onion and garlic and finely. Then pour a little oil into a preheated pan, put the onion and garlic, after 3 minutes add the mushrooms. Fry mushrooms for 10 minutes.

Both types of cooking zucchini are great (both boats and shoots). I just want to add a small touch from myself, I use the pulp taken from the zucchini right there, adding it to the minced meat, i.e. stuffing. It turns out juicy and tasty. If you have no choice, then we will cook from what we have, just cut the peel from the zucchini and remove the seeds.
I cook stuffed zucchini according to the classic version - only with minced meat, onions and carrots, you can add mushrooms and bell peppers - if you wish. I prefer to use minced pork and beef, it is juicier, it is better to scroll the minced meat in a meat grinder twice to get minced meat with a fine texture.
So, for cooking zucchini stuffed with minced meat baked in the oven, we will prepare all the products.
We select the zucchini of the same size, so it will be more convenient to put them in a baking dish later. Cut the zucchini in half lengthwise and remove the pulp along with the seeds with a spoon, leaving a very thin wall. Cut off a little peel from the back side to give the boat stability.
