I've seen a lot of pies in my life - and apple pies and all kinds of others. But the recipe for this cake has settled in my cookbook forever - very tasty, unusual and tender. Delicate cottage cheese and apple pie, with an amazing taste, will not leave anyone indifferent! And the simplicity of preparation and the availability of ingredients will allow you to enjoy both the process and the result. The pie is a successful combination of crumbly shortcrust pastry, soft, delicate vanilla curd, sweet apples with a cinnamon hint and a top layer of meringue.


For dough (mold diameter 30x18):
1.5 tbsp. flour
2 tbsp. l. granulated sugar
100 g margarine
50 g sour cream
1 yolk
¼ Art. l. soda
For the curd layer
250 g of soft homogeneous cottage cheese (if cottage cheese is granular, rub through a sieve)
1/3 Art. Sahara
1 yolk
vanillin
For apple layer
4-5 medium apples
cinnamon
For meringue (or soufflé)
2 squirrels from large eggs

Preheat the oven to 180-190 °. Combine yolk, granulated sugar, melted cream margarine, sour cream, baking powder; mix until smooth.


Sift flour into the mixture, knead soft shortbread dough.


We distribute the dough in shape, make low sides, pierce with a fork.

To prepare the curd mass, grind the cottage cheese with granulated sugar, yolk, vanilla, condensed milk (optional).


We distribute the curd mass over the sandy one.


We peel the apples from the peel (optional) and from the seeds, cut into thin slices.


Spread the apple slices evenly over the curd layer, sprinkle with cinnamon.


We bake for 25-30 minutes.


In the meantime, prepare the meringue: beat the whites, sprinkle with lemon juice, gradually add granulated sugar. A couple of tablespoons of sugar is enough for a soufflé, and more sugar for a meringue. In any case, whisk the whites to firm, firm peaks on a slow mixer speed.


We spread the protein mass on top of the finished cake and bake for another 10 or 15 minutes (reduce the heat to 170 °).


Let the finished cake cool.
Cut the cooled pie into portions.

  • sour cream - 60 g;
  • sugar - 50 g;
  • starch - 40 g;
  • cinnamon - 0.5 teaspoon spoons.

Cooking time - 1 hour 30 minutes.

First, you need to prepare all the necessary products. You can take cottage cheese of any fat content, sour cream - 15-20% fat.

Cut the cooled butter into pieces. Separate the yolks from the whites. Add the yolks and sugar to the butter and grind well.

Sift the flour through a sieve, mix with baking soda and a pinch of salt and gradually add to the butter-sugar mixture. To knead the dough better, you can add 1 tablespoon of cold water.

Knead the dough and put it in the refrigerator for 20 minutes.

In the meantime, you can prepare the filling. To do this, wash the raisins thoroughly with hot water, then pour boiled water and leave for 20 minutes. Wash the apples, peel and seeds, then cut into small thin slices.

To prepare the filling, you need to grind the cottage cheese with sugar, sour cream and starch. It is desirable to sift the starch through a sieve.

Then beat the whites with a mixer into a stable foam and add them to the curd mass. Mix everything thoroughly.

For baking this cake, it is best to use a detachable form of 22-24 cm in size. Grease the bottom of this form with butter. Take the dough out of the refrigerator, smooth it over the bottom of the mold and make the sides at least 3 cm high. Throw the raisins in a colander and dry a little (blot with a paper napkin), then spread evenly on the dough.

Put apples on top and sprinkle with cinnamon.

A quick and tasty shortcrust cake with cottage cheese

To prepare this recipe, you will need the following products:

  • Flour - 3 cups
  • 2-4 eggs
  • A pack of butter. Of course, you can replace butter with margarine, but if you love your family and take care of their health, then it is better to buy butter. I would also like to advise you to buy butter with a higher fat content, since the higher the fat content of the oil, the tastier and more airy the shortbread cake with cottage cheese is.
  • Sugar - 150 grams (but I always add to taste, as they say, by eye).
  • You can also add baking soda at the tip of a teaspoon, but not required. I did it with and without baking soda and I didn't feel the difference.

For the filling you need to take:

  • Cottage cheese - 2 packs, or 400 grams by weight.
  • Sugar - 150 grams (I also add to taste)
  • Sour cream (or cream) - 3-4 tablespoons.
  • You can also take any berries or apples to your taste.

Recipe for making shortbread cake with cottage cheese

At the very beginning, when I was preparing this pie with cottage cheese, I took the butter right from the refrigerator. The butter was cold and I kneaded the dough for a very long time to the desired consistency. Well, what can I do, the young one was not experienced, but now I take the oil out of the refrigerator in advance in the evening so that it becomes soft. And after 30-40 minutes, my family gets a delicious cottage cheese pie for breakfast (I get up very early, so I have time to prepare it for breakfast).

Sift the flour through a fine sieve, add sugar to it and mix well.

Then, add butter to the flour with sugar and stir thoroughly so that it turns out not dough, but crumb.

Then add eggs and stir well. It should make a crumb. If the mass looks like dough, then add a little more flour.

After the dough is ready, we proceed to preparing the filling. There is nothing complicated here, we just combine cottage cheese, sugar and sour cream and mix well.

So, now we need a baking sheet, on the bottom of which I cover the foil, but this is not necessary, it's just more convenient for me, and I don't like to tear off pieces of burnt baking from the baking sheet later (yes, it happens).

Put half of the dough on the finished baking sheet. If you are making a pie with cottage cheese and apples, then put the next layer with apples and sprinkle with a little sugar.

The next layer consists of cottage cheese, so we spread all the cottage cheese, and pour the rest of the shortbread dough on top.

The oven must be preheated in advance and our future pie with cottage cheese should be put in it for 20-30 minutes (in general, until cooked).

Well that's all, when your children and husband wake up, a delicious breakfast awaits them. Of course, such a breakfast cannot be called useful, but who prevents you from preparing such a shortbread pie with cottage cheese just for dessert.

It takes me 5-7 minutes to prepare the dough and filling, and while the cake is baking, I devote time to myself. As a result, I am happy and the family is well fed.

A sand cake is indispensable when you need to quickly prepare something delicious for tea. For baking, you need the simplest and most affordable products. In addition, the proposed recipe allows the hostess to serve a new dish of cottage cheese to the family table, if the casserole or cheese cakes have time to get a little tired.

List of ingredients for the dough:

  1. 100 g butter (margarine);
  2. 2.5 cups flour;
  3. 1 egg;
  4. 1 tbsp sour cream;
  5. 1 cup of sugar;
  6. salt on the tip of a knife;
  7. vanillin to taste;
  8. 2 tsp baking powder.

For filling:

  1. 500 g of cottage cheese;
  2. 1 egg;
  3. 3 tbsp decoys;

In order to knead the dough, you need softened butter (margarine), so you need to remove it from the refrigerator in advance. Grind soft butter with granulated sugar. The mass will be more homogeneous if the sand is replaced with the same amount of powdered sugar.

Use your hands to combine the crumbling mass into one lump. After a few minutes, you will have a fairly soft dough. Wrap a third of this dough tightly in plastic wrap and put it in the freezer for 30-40 minutes.

For baking, you need a rectangular shape with dimensions of 16x25 cm. Grease the shape with vegetable oil and cover the bottom with parchment paper to make it easier to extract the finished cake. You can take a round detachable form with a diameter of 24-26 cm. Spread two-thirds of the prepared dough over the bottom of the form. You need to do this with your hands, as the dough is too soft to roll out with a rolling pin.

On top of the dough layer, lay the apples, freed from the core and cut into thin slices. Prepare the filling by mixing cottage cheese with sugar, semolina, egg and sour cream. Spread the curd filling over the apple layer.

The rest of the dough, which by this time should have cooled well, remove from the freezer, grate on a coarse grater and sprinkle the curd layer with the resulting shavings.

Bake the cake for about 45 minutes at 175 °. The cake should brown well during this time. Let it cool, then remove from the mold and cut into portions. Enjoy your tea!

I don't bake homemade cakes very often at home. Why? Yes, everyone on a healthy diet, we try to eat as little flour and sweet as possible. But sometimes there are times when guests come, and they themselves want something so nasty….

And I myself would bake and bake something homemade only because of the aromas. Oh, how I like it when the house smells of baked goods, when a special aroma is already felt from the doorway. A special atmosphere is immediately felt at home. Probably many people have the same attitude to baking, right?

Why do I like my signature pie so much?

It is prepared very quickly, the products are all the simplest, it always turns out great (there was no case when it did not work out). And, of course, I always know WHAT I will put in the pie. And this is always much better than buying something in the store. And it turns out it is quite inexpensive.

This is a shortbread cake, its base is shortbread, and everything is filled with a filling of cottage cheese and apples on top. Some call it a jellied, loose sandy pie. I heard that someone calls such a cake "Royal cheesecake". Here is the cake recipe itself with step by step photos.

The cake is for about 6-8 people. Cooking takes 20 minutes plus baking time. The calorie content of a portion is approximately 300 kcal.

For the test you will need:

2 cups of flour;
1 teaspoon baking powder
0.5 cups granulated sugar;
Half a packet of butter (recipe lists margarine, but I never bake with it).

For the filling we need:

2 eggs;
250 grams of fat-free cottage cheese;
0.5 cups granulated sugar;
100 grams of sour cream;
2-3 apples;
Vanilla sugar.

How to cook

First, we prepare the sand base. To do this, sift wheat flour of the highest grade through a sieve, add baking powder and granulated sugar.

Rub the cold butter on a coarse grater and mix with the base (flour, granulated sugar and baking powder) until crumbs are obtained. You can use a spoon first, but it is better to grind everything right away with clean hands.

Put part of the dough (almost all) on a greased baking dish. The shape can be round or rectangular.

We leave part of the dough for later to sprinkle on top of the filling.

Add granulated sugar to them, continue to beat, then add low-fat cottage cheese, sour cream, vanilla sugar. I don't like too much vanilla flavor (I usually use half a bag, but it depends on your preference, you can add a whole small bag of vanilla sugar).

Peel the apples. I take 2-3 apples, depending on the size. We rub them on a coarse grater. Mix everything thoroughly again, beat a little with a mixer at low speed.

Sprinkle on top with the remaining crumb of shortcrust pastry. There is no need to leave a lot of crumbs, as it turns out then not very beautiful.

We put our pie in an oven preheated to 180 degrees. We bake for about 30 minutes.

Tip: to check the doneness of the pie, pierce it with a wooden toothpick. If it's dry, the cake is ready, it's time to get it out.

Some subtleties to note

I always pay attention to cottage cheese, because the taste of the pie often depends on it. Do not take fatty and too grainy cottage cheese. Better to use fat-free and softer. Checked more than once. The taste is much softer. Apples are best taken sweeter.
