There is no bread in this recipe, it is present only in the name. Apparently, the shape of baked meat is associated with a bread loaf, and it is because of this shape that the dish got its name. Ingredients:
- pork - 350 gr.;
- bacon - 150 gr.;
- beef - 350 gr.;
- ground red pepper - 3 gr.;
- ground black pepper - 3 gr.;
- water - 170 ml.;
- onions - 160 gr.;
- leeks - 45 gr.;
- smoked paprika - 5 gr.;
- nitrite salt - 15 g.;

How to cook from a photo step by step
In a frying pan, heat 25 g of butter and vegetable oil, throw finely chopped onions into the heated oil, pour 2 tablespoons of water or chicken broth, sauté the onion for 8-12 minutes until it becomes completely soft. We transfer to a plate, put in the refrigerator to cool completely.
Grind pork and bacon in a blender until smooth.
Then grind the beef until smooth.
Season the minced meat with ground red and black pepper, add nitrite salt. Instead of nitrite salt, you can take plain or sea salt. Nitrite salt is used to keep the meat pink.
Then pour ice water into the bowl.
Add the cooled fried onion and some finely chopped leeks. Turn on the blender and grind the ingredients for a few minutes until the mass turns into a homogeneous pink mince.
Put the mass in a bowl, add smoked paprika flakes, knead well with a spoon.
Lubricate the form with refined vegetable oil for frying or lard, spread the minced meat.
With a tablespoon, make a drawing on the surface. We heat the oven to a temperature of 170 degrees.

Preheat oven to 180 degrees.
Save vegetables. To do this, heat a frying pan, melt butter and send chopped vegetables to it - onions or white onions, carrots, celery, green onions, garlic. It is better to cut vegetables with a knife without turning the vegetables into minced meat. Saute for about 5 minutes over low heat, under the lid, until the vegetables are soft.
Season with salt and pepper, add Worcestershire sauce to it, stir, then add ketchup or 1 tbsp. l. tomato paste to which chili sauce and coriander seeds are added. Keep it on fire for another 5 minutes and turn it off.
Combine 2 minced meat, an egg, bread crumbs (ready-made bread crumbs can be used), parsley. Add the sautéed vegetables and stir well with your hands.
Grease the dish in which you will bake the meat loaf with vegetable oil. Fill the form with minced meat, distribute, leaving 1 cm in height free. Spread over the rest of the tomato paste and place in the oven for 1 hour.
Bake at 180 degrees.

In this version of the preparation of meat bread, the greatest attention is paid to the bell pepper. It must be washed, greased with vegetable oil, put in a frying pan and baked in the oven for about 15 minutes at 180-200 degrees. Then cool the vegetable, remove the skin from it and cut it in half.
