In Japan it is called "sushi-su" or "sushidza" in Russian, although this is not correct. It is prepared on the basis of rice vinegar. sugar, salt with or without the addition of kombu algae.

When preparing dressings from other varieties of vinegar, you can focus on other recipes. For apple cider vinegar, take a teaspoon of sugar and half of the same spoonful of salt for one tablespoon, add one and a half tablespoons of hot water and stir until all components are dissolved (you can heat it if necessary). If the quality of rice cooked for sushi, after the test, did not suit you - you should not make sushi or rolls from it (it will be a shame to spoil a lot of expensive fish, the taste of sushi and rolls from poorly cooked rice will be guaranteed to be disgusting). Today you can buy seaweed for sushi and rice vinegar in almost all large retail chains of any city: with the popularization of sushi and rolls, their purchase has ceased to be a problem - you just have to search and you will definitely find the products you need. But rice for sushi does not have to be bought special.

For the preparation of rolls and sushi, you can use any round grain rice. Often, what is sold in stores with the inscription "rice for making sushi" is ordinary round grain, and not at all special Japanese rice. The use of ordinary round grain rice for sushi is possible not in theory, but in practice, tested by many culinary experts.
