  5. The dough is laid out with a tablespoon.
  6. The pancakes are first baked from one side until bubbles form on top, then turned over.

Advice! The heating of the stove should be adjusted depending on the thickness of the bottom of the pan: to obtain splendor, pancakes should be cooked by baking from the inside.

  6. Fry for 3-4 minutes on each side until tender.

Advice! To make the pancakes taste good to those with a sweet tooth, you can add another tablespoon of sugar while kneading the dough.

  5. After half an hour, when bubbles form on the surface of the dough, a frying pan is placed on the stove.
  6. Put the dough into the heated butter with a spoon.
  7. Pancakes are fried on both sides over medium heat.

Thus, there are many recipes for lush and very tasty pancakes, with which every culinary specialist can experiment according to his desire and taste preferences.

Hearty and tasty pancakes are loved by both children and adults. There are many recipes for making pancakes, everyone can choose to their taste. Today we will prepare fluffy kefir pancakes in a hurry. To get lush pancakes, you need to follow some simple tips.

But let's not argue for a long time, but let's get down to cooking. We will prepare products for making quick and delicious lush pancakes on kefir according to the list, they are the simplest. Glass - 200 ml.

We need kefir warm, we will warm it on the stove or in the microwave. In the meantime, break the egg into a bowl, add sugar, mix.

Add salt and soda to warm kefir.

Pour kefir with salt and soda into the egg mixture. Soda instantly reacts with the acidic environment of kefir.

Mix well and sift flour into a bowl. I recommend not adding all the flour at once, you may need it a little less, since the properties of flour are different. And the size of the egg matters. I have a selected egg weighing 65 g.

Here we have such a thick dough.

Leave it on for 5 minutes, but for now, heat the pan with vegetable oil. Lay out the dough with a spoon (I used dessert). The fire should be medium so that the pancakes have time to bake. Cover the pan with a lid. Turn it over to the other side and fry the pancakes without a lid for 3-4 minutes.

Lush kefir pancakes, whipped up in a hurry, are ready for tasting, get out the jam, sour cream or condensed milk as soon as possible and invite your family to help themselves.

Fritters have long been considered delicious and satisfying food. They are served both for breakfast and as a dessert for lunch or dinner. Some people bake pancakes exclusively with yeast, believing that this is the only way to make truly fluffy pancakes. However, it takes a certain amount of time to prepare them, because these pancakes are lush because their dough rises thanks to the yeast. This is why many people prefer other recipes for fluffy, quicker pancakes.

For example, wonderful fluffy pancakes can be obtained from kefir or yogurt dough. They cook very quickly, and they turn out to be no worse than yeast ones. Another option for fluffy pancakes is pancakes made from dough made with baking soda or baking powder. In this case, the secret to fluffiness lies in the fact that when using these components carbon dioxide is released, and the dough also rises. In short, the principle of making lush pancakes is always the same - to prepare a lush dough that can "breathe" and rise. Only then, as in the case of yeast dough, the pancakes will turn out to be really fluffy and will remain so not only in the pan, but also on the table.

Lush pancakes - food preparation

To obtain fluffy pancakes, the quality of the flour is of great importance. Moreover, it must be sifted at least 3 times so that the flour is saturated with oxygen and our pancakes rise better.

The fat content of kefir or yogurt, which we will use in recipes, does not matter much, there are no special requirements for these products. However, some housewives argue that the more sour the kefir or yogurt, the more magnificent and tasty the pancakes are.

Lush pancakes - the best recipes

Recipe 1: Lush curdled milk pancakes with raisins

They say that the most lush pancakes are made with yogurt. By adding raisins to the dough, you get a very tasty and nutritious sweet dish. If desired, raisins can be replaced with dried apricots, apples or any other fruit to your liking.

Ingredients:

200 gr. yogurt or kefir;
200 gr. flour;
1 egg;
50 gr. Sahara;
100 g raisins;
rast. frying oil.

Cooking method:

1. Pour the yogurt or kefir into a saucepan or bowl (it is better to take a deep and comfortable one to prevent the dough from splashing on the sides). We drive in an egg and add vanillin, stir everything well.

2. Rinse the raisins well and soak for about half an hour. Then, after draining the water, dry it with a paper towel.

3. Add flour to a bowl and knead the dough. Then, continuing to knead, we send the raisins there. We need to get such a dough in terms of density that we can spread it with a spoon in the pan.

4. Warm up a pan with sunflower oil well, bake our pancakes on it so that they become golden brown.
Serve with sour cream.

Recipe 2: Lush pancakes with cottage cheese and cheese

Having made pancakes with cheese filling, we will get a very tasty and original dish. Although, if there is no cheese for the filling, these pancakes themselves on curd dough always come out invariably tasty and fluffy.

Ingredients:

200 gr. cottage cheese;
150 gr. kefir;
2 eggs;
100 g flour;
150 gr. cheese;
2 cloves of garlic;
50 gr. sour cream;
0.5 tsp soda;
salt and dill to taste.

Cooking method:

1. For the filling, rub the cheese on a fine grater, chop the garlic and finely chop the dill. Add sour cream, mix everything. The filling should be very thick.

2. For the dough, mix flour with a mixer with eggs, cottage cheese, kefir and soda. So that when frying the pancakes absorb less oil, it is better to take the components for the dough not from the refrigerator, but at room temperature. As a result, we should also have a thick dough.

3. Warm up the pan well, pour vegetable oil there and spoon the dough on it, on top of each portion of which we put the filling, on top again the dough. Then we fry like regular pancakes.

Recipe 3: Lush kefir pancakes without eggs

Some people think that the more eggs are placed in the pancakes, the fuller they will be. In fact, if you try to cook these fluffy pancakes without eggs at all, you will understand that the secret of fluffiness is not in eggs at all. And in what? Try to guess by making these fluffy, soft and delicious pancakes.

Ingredients:

200 gr. kefir;
200 gr. flour;
50 gr. Sahara;
30 gr. rast. butter in the dough;
1 tsp soda;
rast. frying oil.

Cooking method:

1. Mixing kefir with salt and sugar in a deep bowl, add flour and soda there. The amount of flour in the recipe is approximate, it is determined by the thickness of the kefir and the quality of the flour. Quickly knead the dough from the ingredients taken, avoiding the appearance of lumps. Better to do this with a whisk or fork.

2. Having received the dough as thick as sour cream, put a frying pan with vegetable oil on the fire so that it warms up well. Better to take a pan with a thick bottom. When it is ready for baking pancakes, add vegetable oil to the dough, mix quickly and begin to put small pancakes in the pan. Fry them over low heat, covering the pan with a lid.

Fluffy pancakes without yeast can only be made from a fairly thick dough. It should resemble very thick sour cream in its consistency.

If you are used to frying in little or no fat, such as in a non-stick skillet, then you better opt for thin pancakes. Real lush pancakes can only be cooked in a sufficient amount of vegetable oil, otherwise they will not bake and at the same time they will also burn. Alternatively, you can try using an oven for these purposes.

Some cooks also advise the following. If you are preparing fluffy pancakes with soda, then it should be put into the dough at the beginning of cooking, adding citric acid diluted with water at the end (one third of a teaspoon of acid per 1 tablespoon of water). When dissolved citric acid is introduced into the dough, flour cannot be added to it so that the pancakes do not settle, then they will turn out no worse than yeast ones.
