Step 1: prepare the lingonberries.

First, we need to sort out the berries and separate the fresh, ripe lingonberries from the spoiled and unripe ones. For thrifty housewives, the last berries can not be thrown away, but compote or jelly can be cooked from them. But not without, of course, that completely spoiled berries will not fix the situation and it is unlikely that they will make a good tasty drink. Therefore, if you come across such, it is better to get rid of them. And put the good berries in a large bowl. Pour ordinary cold water into a container and gently rinse the lingonberries in it. After - we drain the water through a colander, and transfer the washed main ingredient to another large bowl.

Step 2: sterilize the jars.

In order for our Soaked Lingonberry to be stored for a long time, it is necessary to prepare the container. Therefore, we rinse the jars under running warm water. You can add a little baking soda and treat the containers well inside and out. Soda itself is a good alkali and therefore washes away grease and dried dirt from dishes. We rinse the cans until the soda deposit disappears in the containers and the cans begin to "creak". Put a medium saucepan with a little water over a high heat. When the water boils, make a slightly less than medium heat and place a flat sieve or an ordinary oven rack on top of the container. We put the cans on the surface so that they are at a short distance from each other. We sterilize the container within 15 minutes... And when drops of steam begin to flow down the walls of the cans from the inside, turn off the fire. Attention: the jars are very hot, so we use cloth potholders and transfer the containers to the kitchen table, covered with clean cloth towels.

Step 3: prepare the syrup.

Put a large saucepan on the fire and bring purified water to a boil. After - make a medium heat and add sugar to the water with a spoon. You can add more sugar if you like sweeter foods. Stir the water with a spoon until the sugar dissolves. After - turn off the heat and set the pan aside - let the sweet water cool down to room temperature.

Step 4: prepare the Soaked Lingonberries.

As I already said, lingonberries prepared according to this recipe can be stored for a very long time, while retaining their useful properties. Indeed, the composition of this berry-healer includes such minerals as iron, phosphorus, calcium, potassium and magnesium. In addition, it gives us vitamins of groups A, B, C and E. Therefore, it is useful to add lingonberries to dishes and eat just like that for people who have a headache or have a flu or a cold. Also, these berries improve the functioning of the liver, kidneys, stomach and improve vision. So, with a spoon or with clean hands, put the lingonberries in processed jars by about a third or slightly less than half of the container. The sugar syrup is ready. Therefore, we pour it into jars using a scoop. It is important that the liquid only covers the lingonberries. For aroma and pleasant aftertaste, add cinnamon and cloves to the jars. We close the containers tightly with plastic lids. If you wish, you can even make a seam. At the end, put the Soaked Lingonberries in a cool place. For example, if there is a cellar, the workpiece can be stored in such a place. Otherwise, we put cans of lingonberries on the lower shelves of the refrigerator.

Step 5: Serve the Soaked Lingonberries.

Within a month, the berry preparation will be ready. Lingonberries can simply be sprinkled with sugar and served with mint tea. The liquid can be simply drunk like a compote. After all, it turns out to be very tasty and with a pleasant light aroma of cinnamon and cloves. Also, these berries can be added to pies, pies, meat dishes and poultry and fish dishes. Good appetite!

- - If you have at hand not only lingonberry, but also its leaves, do not throw them away. It turns out that even lingonberry leaves have medicinal properties. For example, it is good to drink a decoction of these leaves for diseases of the genitourinary system, diabetes and rheumatism. The leaves can also be brewed like tea. After such a drink, you will feel a surge of strength and vivacity. And we make the preparation simply by drying the lingonberry leaves. To do this, lay them out on a clean surface in a well-ventilated room. And we turn the leaves once every 2-3 days until they are completely dry. The main thing is that they should not be exposed to direct sunlight. After that, we put them in clean plastic or paper bags.

- - Large quantities of soaked lingonberries can also be cooked in barrels.

- - If you want to soak lingonberries without adding spices and sugar, then you need to change the water from time to time. Since the berries contain benzoic acid, lingonberries may not spoil for a long time. Unlike water! When interacting with berries, it can sour. Therefore, it is very important to monitor the process of soaking the lingonberries.

- - And if you want to make Soaked lingonberries with a rich aroma, then peeled pieces of Antonov apples can also be added to the jars.

Wooden barrels and clay pots, street cellars and home underground ...

For many centuries, villagers have known how to prepare lingonberries so that they retain all the vitamins and do not deteriorate.

Nowadays, most live in high-rise buildings and the opportunities are not the same, but it is still possible to keep lingonberries at home.

Thanks to the organic acids (especially benzoic) that are part of the lingonberry, it can be stored for several months without any processing.

At room temperature

You need to prepare a cardboard box and make the maximum number of holes in the walls. We place a sheet of paper on the bottom and lay out lingonberries on it.

They should be red, but not overripe. If there are berries with white barrels, you can put them there, they will then ripen.

You do not need to collect green berries or put them in a common box. They won't blush anyway.

Then we also lay the second layer with paper, the third, etc. and put in a dry, ventilated place. After a month, you need to check and remove rotten berries, if they appear.

In the fridge

Here lingonberries can stand up to three months. We pour the washed and dried berries into a plastic container and place them in the compartment with vegetables and fruits. After a couple of months, you can sort it out and check.

But in such a pristine form, it will not be possible to preserve lingonberries until next summer, so our great-grandmothers used various methods to preserve this beautiful forest berry:

  • urinating
  • freezing
  • sugaring
  • drying
  • boiling
  • hovering
