    To prepare the cutlet mass, you need garlic, onions, white bread, eggs, spices and herbs.

    Onions for cutlets can be taken onions, green or red. The onions are peeled and twisted in a meat grinder, or crumbled into thin pieces. Green onions are rinsed and chopped into thin rings.

    Garlic is peeled and squeezed through a garlic press, or chopped on the finest grater.

    The bread or loaf should be stale. It is soaked in milk or water, or grated into crumbs and added to the minced meat.

    The cutlet mass can be made in a different way: put the minced meat in a blender container, add the rest of the ingredients and beat everything together until smooth.

    Eggs are added to the cutlet mince, salted, seasoned with spices and aromatic herbs. In addition to the main ingredients, boiled or raw vegetables, mayonnaise or sour cream are added to it. For juiciness, a little water or broth is poured into the minced meat. Knead everything thoroughly with your hands, lightly beating it against a bowl. It is advisable to put the cutlet mass in the refrigerator for a while.

    Then, with damp hands, form cutlets of the same size from the cutlet mass, and put them on a baking sheet covered with parchment. In some recipes, the cutlets are first fried over high heat until golden brown, and only after that they are baked in the oven for no more than half an hour. If the cutlets are raw, they are baked in the oven for about 15 minutes, and then continue to cook by adding broth, sauce or sour cream.

    The cooking time of cutlets depends on the composition of the minced meat, so it is necessary to strictly adhere to the recipe.

    Cutlets are baked at 180-200 degrees. It is at this temperature that the cutlets are ideally baked inside, remaining juicy, and have an appetizing crispy crust.

    Cutlets can be baked in foil. They are especially juicy with a creamy or tomato sauce. In this case, you get a meat dish with gravy, which is ideal for any side dish.

    Recipe 1. Juicy cutlets in the oven (step by step recipe)

    Ingredients

    half a kilo of pork and beef;

    ghee and vegetable oil;

    300 g boiled potatoes;

    salt;

    bulb;

    freshly ground pepper;

    two cloves of garlic;

    coriander;

    egg;

    75 g semolina;

    75 g finely chopped dill;

    ¼ glasses of cream.

    Cooking method

    1. Wash the beef and pork and cover with a paper tea towel. Trim veins and films. Cut the meat into small chunks and grind until minced with a blender or meat grinder.

    2. Cut the root off the bulb and remove the husk. Cut it into four pieces. Peel off the garlic cloves from the top shell as well. Put the onion and chives in a blender, pour in a couple of tablespoons of water and beat until smooth. Add the garlic and onion gruel to the minced meat. Alternatively, twist the vegetables along with the meat.

    3. Wash potato tubers, put in a saucepan, cover with water and put on fire. Cook until the vegetable is soft. Then drain the broth and cool the potatoes. Remove the thin skin from the tubers.     Ingredients

    half a kilo of minced meat;

    30 ml of sunflower oil;

    a tablespoon of flour;

    3 g of spices;

    200 ml of broth;

    two onion heads;

    two cloves of garlic;

    80 g of tomatoes in their own juice;

    slice of loaf;

    30 ml of milk;

    bay leaf.

    Cooking method

    1. Cut the loaf into small pieces. Put it on a plate and cover with cold milk. Leave it for ten minutes.
