This is a recipe for incredibly delicious salted instant tomatoes from a friend from Israel. I have always considered my recipe for pickling tomatoes the best, since I made it bit by bit for many years, now all my friends and relatives prepare it. But, in order not to offend her friend, she prepared according to her recipe. Tomatoes were incredibly tasty! I highly recommend cooking. Try on a small batch of 1 kilo of tomatoes. I am sure you will not be disappointed!

To make quick salted tomatoes you will need:

Tomatoes (fleshy) - 1 kg;

Water - 1 liter;

Sugar - 2 tbsp. l .;

Salt - 1 tbsp. l .;

Vinegar 9% - 1 ct. l .;

Garlic - 4-5 cloves;

Allspice - 8-10 grains;

Black pepper - 8-10 grains;

Cherry leaves - 10 pcs .;

Black currant leaves - 10 pcs. ;

Hot peppers - 0.4 pcs .;

Mustard seeds - 2 tsp;

Cherry leaves for marinade - 1-2 handfuls.

From this amount of ingredients, 2 liter jars are obtained.

We need tasty, ripe, meaty tomatoes. My them.

Each tomato prick with a sharp fork in four or five places. We do this so that the marinade penetrates the tomatoes faster.


At the bottom of the banks lay out 4-5 leaves of currants and cherries, mustard seeds, bitter pepper.


Fill the clean cans with tomatoes, add garlic, allspice and black pepper.


We measure the water in the pot and bring it to a boil. In the water we send cherry leaves intended for marinade. After 4-5 minutes the aroma of cherry leaves will spread through the kitchen. Remove the leaves from the marinade. And on broth cook marinade. Add sugar and salt. We dissolve them, stirring. Turn off the gas. Pour in vinegar. Cool to a slightly warm state.


Fill the marinade banks. Cover with a lid for 2 hours, then remove the lid, and cover with the top with gauze or a clean piece of cloth. We put the jar on the plate, since at first the marinade can “run away”, it will have to be brought back. Store at room temperature. After 4-5 days, try - instant salted tomatoes are ready. Keep them in the refrigerator for up to two weeks, then they begin to sour. Only they are unlikely to linger so long. You can initially put tomatoes not in jars, but in a usual enameled pan or in a stainless steel pan. But then you need to put a small load on top. I use a plate that I turn upside down.

I admit, there is not always time and desire to mess around in the kitchen for a long time. And you still want to pamper your family with something delicious. Therefore, I simply adore recipes that take away at least the time and effort of housewives. One more thing. Who has already tried salted tomatoes, knows that they are faded longer than the same cucumbers, for example. So, in order to speed up this process as much as possible, you need to pierce them with a toothpick in two or three places. If it is necessary that the tomatoes are salted even faster, then we will do the following. Tomatoes thoroughly wash and, scalded with boiling water, carefully remove the skin. For convenience, you can make a shallow incision.
