However, quite often such an experience leads to the fact that the dessert is not very tasty. That is why during its preparation we recommend strictly adhering to prescription rules. In this article, we will present you with several ways to create curd filling. Which one to choose is up to you.

Classic filling for pancakes

Many housewives know how the classic curd filling for pancakes is prepared. After all, with the help of it, even our mothers and grandmothers made delicious desserts. If you do not own this information, then we will provide it right now.

So the products are:

  • village cottage cheese granular (dry) - about 300 g;
  • small egg - 1 pc.;
  • large sugar - 4 large spoons;
  • vanillin - a pinch.

Preparation of ingredients

To make the curd filling for pancakes delicious, you should purchase only a fatty dairy product for its preparation. The ideal option would be rustic cottage cheese. It must be put in a blender and beat on. In this case, you should get a rather thick and lush milk mass.

Filling preparation

After the cottage cheese is beaten with a blender, a small chicken egg and coarse sugar should be added to it. Next, you need to repeat the procedure for mixing the components. As a result, you should get a very fluffy and airy curd paste.

How to stuff products?

Curd filling for pancakes should not be too liquid. Otherwise, it may leak out of the base.

The prepared mass must be laid out on the product, and then wrap the bottom edge onto the filling. Next, you need to similarly bend the left and right sides of the pancake to the middle. Then the product should be rolled up. In this case, you should get a neat rectangular envelope. In the future, the semi-finished product can be removed in the freezer or refrigerator. Before use, it can be heated in the microwave, in the oven or in a frying pan. It is recommended to serve such a delicacy to the table with a cup of coffee or tea.

Delicious cottage cheese banana filling

This version of the filling for pancakes is especially liked by children who are not indifferent to sweet and soft bananas. It should be noted that for its preparation you will need only five minutes.

So, we need:

  • village cottage cheese granular (dry) - about 250 g;
  • large sugar - 2 large spoons;
  • soft banana (can be overripe) - 1 or 2 pcs. (taste);
  • vanillin - a pinch.

Cooking process

To make a delicious banana curd filling, you need to use only ripe and soft fruits for its preparation. After all, if you use an unripe green product, then the milk mass will turn out to be less fragrant.

Thus, to prepare the filling, it is necessary to put it in a bowl and knead it with a crush to a paste state. If you do not want to carry out this process manually, we recommend using a mixer or blender.

In the future, it is necessary to add thick and fresh sour cream to the cottage cheese, as well as a soft banana and coarse sugar. Then add a pinch of vanillin to the mass (optional). After that, all the ingredients need to be kneaded again. As a result, you will get a fragrant curd paste with a pronounced banana flavor.

How to use?

Delicate cottage cheese filling with banana is used to fill pancakes in exactly the same way as in the first recipe. Since it turns out to be quite thick, the sweet mass will not leak out of the product even after it is heated in a microwave oven, oven or in a frying pan.

Spring rolls for breakfast

Sweet cottage cheese filling serves as an excellent pancake filler, which can be served at the table as a delicious and satisfying breakfast. To make the milk mass sweeter, it is recommended to add large dark raisins to it. But first things first.

For the filling we need the following ingredients:

  • cottage cheese granular (dry) rustic - about 250 g;
  • thick sour cream - 2 large spoons;
  • large sugar - 3 large spoons;
  • large dark raisins - about 50 g (to taste);
  • lemon - ¼ fruit.

Cooking method

All sweet curd fillings are prepared according to the same principle. First, the dairy product is whipped with a mixer until smooth, then thick sour cream and coarse sugar are added to it. After mixing the ingredients with a spoon, they should be set aside.

To make the dessert especially fragrant, you need to add a slice of lemon to the filling. But first, you need to grind it in a blender along with the peel. You also need to thoroughly rinse the dark raisins and scald them with boiling water. In the future, dried fruits should be rinsed again and deprived of all moisture.

At the end, crushed lemon and swollen raisins must be put into the sweet curd mass, and then mix everything thoroughly. After that, the filling can be safely used to make delicious stuffed pancakes.

Making with apple and cinnamon

Curd-apple filling is no less popular among children than milk mass with a banana.

For its preparation, we may need the following components:

  • cottage cheese granular (dry) rustic - about 300 g;
  • thick sour cream - 2 large spoons;
  • large sugar - 1 large spoon;
  • sweet juicy apple - 2 pcs.;
  • chopped cinnamon - 1/3 dessert spoon;
  • liquid honey - 2 large spoons.

Preparing the Components

Before preparing such a filling, ripe fruits should be processed. Apples must be peeled and the seed box removed. Next, they need to be grated on a large grater. After that, beat the dry rustic cottage cheese with a blender until a homogeneous mass is obtained.

The process of step-by-step preparation of the filling

Having prepared the dairy product and fruits, they should be combined in one bowl and mixed thoroughly. In the future, you need to add thick sour cream and coarse sugar to the ingredients. Also, for taste and aroma, it is necessary to put chopped cinnamon into the filling and After mixing all the components, you should get a rather sweet and fragrant mass. It is recommended to use it for filling pancakes immediately after cooking. If you keep the curd-apple mass aside, the fruit can turn black and spoil the appearance of the dessert.

Cooking spicy filling for pancakes

Before you make the curd filling, think about what product you want to end up with: sweet or savory. To prepare the first dessert, you can use any of the above recipes. If you want to get a spicy dish, then pay attention to the following method.

So, to prepare a spicy filling, we need:

  • non-sour cottage cheese 15% fat - about 250 g;
  • sweet pepper - 1 pc.;
  • fresh parsley and dill - in a small bunch;
  • garlic cloves - 2 cloves;
  • salt, ground pepper and sweet paprika - add to taste;
  • pickled champignons - about 180 g.

Preparing the Ingredients

Before forming pancakes with a spicy filling, you should prepare all the components. First of all, you need to wash the sweet pepper and clean it from seeds and stalks. Next, you need to drain all the brine from the pickled champignons and put them in a blender bowl.

Filling preparation

After adding all the ingredients to the mushrooms, grind into a pulp at high speed. After that, you need to add non-acidic fatty cottage cheese, ground pepper, sweet paprika and salt to them. As a result of repeated mixing, you should get a fragrant spicy mass.

Having carried out the described actions, grated cloves of garlic, as well as chopped fresh herbs, should be laid out to the almost finished filling. By the way, it is better to chop parsley and dill with a sharp knife, and not with a blender.

We start pancakes

After making a spicy curd filling, you can start stuffing pancakes. In each product should be put on a full large spoon of a homogeneous mass. You need to wrap it in exactly the same way as it was described in the very first recipe.

It should be noted that such pancakes are very tasty due to the combination of sweet dough and spicy filling.

How to store semi-finished products?

If you made it for the future, you can freeze them. To do this, the semi-finished products should be laid out on a sheet, leaving a distance between them (2-3 cm). After the products have hardened, they can be put in a common bag and stored in this form in the freezer for no more than three months.

In the future, stuffed pancakes should be heated in a frying pan, greased with oil, using a stove or oven. Also, some housewives put frozen convenience foods in the microwave.

Cottage cheese in the filling for pies in the hands of an experienced housewife can undergo such metamorphoses that not everyone will immediately be able to recognize what such an airy, tender, extraordinarily tasty filling is made of. That is, the filling of cottage cheese for pies makes it possible to please every taste. With it, you can cook sweet puff pastry pies or unsweetened ones - fried, baked.

How to choose cottage cheese

There are many options for already existing curd fillings. But this does not mean that they should be limited. There is always an opportunity to improve, change the taste of the filling by adding some special ingredient that no one has thought of using before you. If you are not yet ready for a flight of creative thought and experiments in the preparation of fillings, take advantage of what others have already come up with, experienced and appreciated.

It is difficult to cook something tasty if the basis is a poor quality product. No additives can brighten up the taste of cottage cheese if it was initially chosen incorrectly and has an overly sour taste and pungent odor. Therefore, be careful when choosing it.

  1. When buying cottage cheese in a store, pay attention to the packaging itself and what is written on it. The packaging must not be crushed. Look at the date of manufacture and try to get a fresh product, not one that is expiring. The natural product should contain only milk and sourdough. For a sweet filling, cottage cheese with a high percentage of fat content is better suited. For salty - any, but the one that is fatter is more delicious. Choose a product from a manufacturer you know. Whose reputation is beyond doubt.
  2. If you choose cottage cheese to buy in the market, pay attention to its color and smell. It should be white or cream, with a pleasant, slightly acidic aroma. Cottage cheese should not be too dry or, on the contrary, contain a large amount of whey. Try a small piece before buying - if it is moderately sour and soft enough - you can take it. Too crumbly cottage cheese is not the best choice.

Open yeast dough pie with curd filling: step by step with photo

Open pies and cheesecakes made from yeast dough with cottage cheese have been my favorite since childhood. I have kept this love to this day and all my household members adore such pastries. Today we will walk you through the entire process of making this delicious pie step by step. I hope that my knowledge and experience will be useful to someone and then this amazing aroma will soar in someone else's kitchen.

I baked this recipe for the first time and was very pleased with it, the dough turned out to be very lush and tasty. It used to happen that the children left the crumbs “for later”, but here every piece was immediately eaten without a trace.

To make an open yeast dough pie with curd filling, you will need:

For the dough: flour - 750 g milk - 250 g eggs - 3 pcs. (- 1 yolk for grease) sugar - 150 g margarine - 100 g butter - 25 g dry yeast - 8 g salt - 1 teaspoon without top vanillin - at the tip of a teaspoon vegetable oil - 2 tbsp. spoons for filling: cottage cheese - 800 g eggs - 2 pcs. sugar - 150 g vanillin - 0.5 tsp

When kneading and proofing the dough, a TM-31 thermomix was used. In its absence, all these actions can be performed using a bread machine, blender, mixer or our hands. When kneading yeast dough, it is very important that all products have room temperature. Eggs should preferably be taken out of the refrigerator in advance.

1. We prepare products according to the recipe. Wash eggs with warm soapy water.

2. Heat about 100 ml of milk to a temperature of 35 - 45 * C, add yeast, add a pinch of sugar, mix and leave for 15 - 20 minutes so that they begin to live.

3. Break 2 eggs into the thermomix bowl. In the third, we separate the yolk from the protein. Leave the yolk for lubrication, and the protein goes into the dough. Add sugar.

4. Beat at medium speed for 2 minutes until foamy.

5. Melt the butter and margarine on the stove or in the microwave. Pour into the egg-sugar mixture.

6. We heat the milk to 50 * C and also pour it into the bowl.

7. Our yeast in the process of life formed just such a hat.

8. Pour them into the total mass.

9. Pour salt and vanillin.

10. Sift the flour into the bowl, leaving a little for cutting the dough.

11. Knead the dough in the thermomix for 5 minutes. Then we warm up for 5 minutes at a temperature of 37 * C. If you knead the dough with your hands, then it will take us 10-15 minutes to knead it well. The dough will be a little sticky, no big deal. Do not add a lot of flour, it is better to moisten your hands with vegetable oil. Leave the dough in a warm place for 40-50 minutes to rest.

12. Our dough has risen. It became more obedient, less sticky.

13. We take it out of the bowl and crush it with our hands dipped in vegetable oil. It is during the punch-down that we introduce 1.5 - 2 tbsp into the dough. tablespoons of vegetable oil. Cover the dough and leave for 30 - 40 minutes for a second approach.

14. Our dough has increased in volume and you can start cutting.

15. Divide the dough into two parts. We roll out most of it to the size of the baking sheet, and leave a small piece for decorations.

16. To form the sides, we bend the edge of the dough up and inward, and press it.

17. We transfer the pie blank to a greased baking sheet and lay it seam down. If you use a silicone mat or special paper for baking, then you need to grease only the edges of the baking sheet.

18. We get such a neat side that will not open either during proofing or baking. We cover the dough with a towel, and we ourselves will deal with the filling.

19. Break eggs into a cup of cottage cheese, add sugar, add vanillin. We mix everything well.

20. We get such a homogeneous mass, without lumps. If the cottage cheese is dry and lumpy, then it is better to rub it through a sieve.

21. After the dough on the baking sheet has rested a little, we will lightly walk over it with our hands again. Lightly knead, forming and fixing neat sides. We also crush the bottom of the pie a little.

22. Spread the filling and level it. Add 2 tbsp to the egg yolk. tablespoons of water, beat a little with a fork. Grease the edges of the pie so that our decorations stick well.

23. Thinly roll out the remaining piece of dough and form various decorations in the form of braids, flagella, leaves and flowers.

24. We decorate the surface of the pie and close the joints of the filling and sides.

What could be tastier than homemade cakes? Yes, if it is also pies with cottage cheese, apple and cinnamon! Fragrant, fresh, tasty, they call the whole family to the table.

And let nutritionists tell us that baking is not a very healthy food, we know that a pie with cottage cheese, meat or a lean pie with mushrooms and potatoes is a meal that is not only possible, but you need to allow yourself sometimes!

But not every hostess knows how to properly prepare the curd filling for pies. It seems to be nothing complicated and wise, but there are certain rules, following which you can get excellent minced curd. This is where we'll start!

Making fillings for cottage cheese pies: recipes that have been tested for decades

To begin with, we will determine that the filling for cottage cheese pies is sweet and salty. Salty is prepared for small snack pies, usually made from puff pastry or lean dough.

But the sweet curd filling for pies is suitable for pies, cheesecakes and other pastries. As for the salty filling, the best recipe is this: for 0.5 kg of fatty cottage cheese, take a pinch of salt, 1-3 tbsp. l. sour cream and mix well. Add 1 raw egg, freshly chopped greens, stir and you can bake puff pastry pies with delicious filling.

Sweet curd filling for pies is prepared with various additions:

  • sugar;
  • condensed milk;
  • jam;
  • jams.

You can use what you have at home. But don't forget the following tips:

  1. For 1 kg of medium-fat cottage cheese, you need to add 1-2 raw chicken eggs;
  2. The fatter the cottage cheese, the tastier the filling;
  3. Cottage cheese or curd product for stuffing should not be raw. If this happened and the curd “went away” with whey, put it on gauze in a sieve and let it drain;
  4. Sweet components of loose and solid nature (sugar, dryish honey, candied jam) must be mixed with liquid or semi-liquid ingredients: cream, sour cream, thick natural yogurt. But don't overdo it!

And, most importantly, minced meat in pies with cottage cheese must be kneaded very carefully. Grains, lumps of cottage cheese or unmixed pieces with a raw egg are not at all tasty in ready-made pastries.

Advice! It doesn’t matter if the filling for pies is made from cottage cheese or something else, the consistency should be thick enough. Cottage cheese can be thickened, for example, semolina. A pinch of cereal added to minced meat will help bind all the ingredients.
