Prepare the dressing: mash the garlic passed through a press into a paste with chili peppers. When working with the latter, be careful: hot peppers can burn the skin. Add the juice of half a lemon, sugar and salt. Stir and let the dressing sit for 10-15 minutes.

At this time, boil and cut the squid into rings, chop the cabbage, peel and cut the onion into half rings, chop the ginger. If fresh ginger root is not available, use ground ginger.
