ATTENTION cottage cheese!
I have made this mayonnaise 3 times already.
The first time I found curd Valio 0%. He fit the best. Why? Simply because it has a very "smooth" consistency. Mayonnaise is perfect! Conclusion: take a very smooth low-fat cottage cheese, similar to sour cream.
The second time I took 9% cereal mayonnaise. The result is visible in the photo. Although I wiped it, the grains remained.
The third time I took 3.2% yogurt. Also very good (result in the title photo), but the mayonnaise is less thick and more acidic. By the way, I prepared it for a photo, sent it to the refrigerator, and forgot to use it. Now I opened it to check - it did not lose its texture at all, it even thickened (which is typical of yogurt). But I do not advise you to keep homemade mayonnaise for more than one day. A recipe for homemade diet mayonnaise may well exclude the main source of calories - vegetable oil (100 g of fat contains about 900 kcal). So, to prepare a truly diet sauce, take a boiled yolk (1 pc.), About 1 tsp. mustard, 100 g liquid cottage cheese.
Mash the yolk, add mustard and rub them well. Then add liquid cottage cheese in small portions and beat until a completely homogeneous mass is obtained. Salt and season the sauce to taste.
Take thick yogurt without fillers (150 ml) and beat it with 1-2 tsp. mustard. After that, add chopped greens (determine the amount yourself). Season, salt and beat well.
To prepare the sauce, take refined vegetable oil (80 ml) and low-fat sour cream (250 g of this product will be required). To add flavor, use honey (a little), 0.5 tsp. mustard and lemon juice (about 1 tablespoon). Also take salt, turmeric, ground pepper and 1 tsp. apple cider vinegar.
