  • cottage cheese (I have 5%) - 400 g,
  • sugar - 4 tbsp. l.,
  • salt - 0.5 tsp.,

  • flour - 300 g

  • vegetable oil (for frying) - about 500 ml.

How to cook curd balls

The dough for such cottage cheese balls is kneaded very quickly, it does not need to settle, because frying oil can be set to warm up immediately, as you proceed to knead the dough. For frying, it is better to take a small container with a thick bottom and high sides. I have a 2.5 liter saucepan. It is necessary to take oil so that the balls completely drown in it, I took 0.5 liters.

After we put the cottage cheese in a bowl, fill it with sugar, add salt and knead the mass until smooth. If your cottage cheese is soft, stir it well with a spoon. It is better to kill granular cottage cheese with a blender - then the surface of the finished balls will be flat and smooth, and the crumb uniform and without small curd patches.


Then we introduce eggs and vanilla into the sweet curd mass. Knead one more time, this time just a spoon.


Lastly, add flour and baking powder to the dough. Both are necessarily sifted. If the baking powder is not at hand, replace it with 0.5 tsp. soda slaked with a little lemon juice or vinegar. In this case, we first introduce soda into the dough, knead it quickly, then add the sifted flour. In any case, adding flour is better gradually, because depending on its quality and consistency of cottage cheese, the flour can go a little more or a little less.


Ready-made curd dough is homogeneous, soft, sticky, but at the same time quite dense. If you put it in a spoon, it easily rests on it and does not fall down.


The oil should already be warming up at this point, you can immediately start frying the balls. To do this, we form balls of the size of a small walnut from dough, wetting our hands with water, or using spoons for convenience. It is not necessary to make balls perfectly round and even - when frying they increase in size, becoming lush and smooth.


Dip the formed balls in oil and fry until a pleasant appetizing golden color, making sure that when immersed, the balls do not stick together and do not stick to the bottom of the pan.


Removing the finished balls from the oil directly on what is able to absorb excess fat. I have a small pile of ordinary paper towels.


Serve the cooled balls with jam, honey, condensed milk or just sprinkled with powdered sugar. Very tasty!

Add all the flour there at once and knead with your hands. It turns out a specific curd dough, but it does not stick to your hands. I leave this dough to rest for 15-20 minutes, so that the gluten “disperses” (if you know another word, write, I forgot it). When the dough is "rested", pour the vegetable oil into a stainless deep-frying pan and put on medium heat. We will fry it on medium heat so that the curd balls have time to fry inside, over the entire volume.
  Roll out the dough into sausages, then cut into small pads. Roll the balls from the pillows. I do this beforehand so as not to make a fuss in front of hot oil.

For the preparation of deep-fried curd balls we will need the following products: wheat flour (I have the highest grade, but the first one or a mixture of them will do), cottage cheese of any fat content (I use 5%), medium-sized chicken eggs (45-50 grams each), granulated sugar, baking soda and a little salt to balance the taste. In addition, for frying we take refined vegetable oil - in my case, sunflower oil.



Then in another bowl (in which you will knead the dough) we combine a couple of chicken eggs and 100 grams of granulated sugar. If you wish, you can make future curd balls more fragrant by adding a pinch of vanillin at this stage or replacing 1 tablespoon of granulated sugar with vanilla sugar. I didn’t add, because I sprinkled the finished balls with vanilla powder (I just chopped a tablespoon of homemade vanilla sugar in a coffee grinder).


Beat eggs with sugar with a mixer or whisk until the mass turns white, increases in volume, and the sweet crystals completely dissolve. After that, add 250 grams of cottage cheese to the mixture. The amount of wheat flour depends on its consistency - the drier the cottage cheese, the less flour is needed.


Once again, beat everything well so that the cottage cheese is combined with the egg mass as best as possible. It happens that cottage cheese with large grains, then it is advisable to wipe it through a sieve in advance, otherwise in the finished balls these grains will become stiff and will be felt.



In just a minute, all the products will combine and you will get a soft, delicate and practically non-sticky dough. If the dough sticks very strongly to your hands, add a little more flour (it depends on its moisture and the consistency of cottage cheese).


Let the dough lie down for about 5 minutes, and in the meantime, prepare everything for frying the billets. To do this, it is best to choose some deep and narrow enough dishes to reduce oil consumption for deep-frying to a minimum. Pour odorless vegetable oil into a saucepan or stew-pan, warm it thoroughly. There should be enough oil so that future curd donuts do not lie on the bottom of the dishes, but float freely in it.


While the butter is warming, we divide the dough into small pieces of the same size and roll each into a ball - no larger than a walnut in size. Since the dough sticks a little, when molding, you can slightly moisten your hands with water.


The oil warmed up - ideally it is believed that it is best to 160 degrees, but I warm a little less. Honestly, I'm not particularly strong in the intricacies of deep-fried cooking, but I can say one thing for sure. If the oil is not heated enough, the flour preparations will absorb it too much, and when overheated, the crust of balls will burn, and inside the crumb will remain raw (not a fact, of course, but it is quite possible). We put several billets into the hot oil (so that they float freely and do not touch each other) and fry over medium heat.
