  • Two cloves of garlic, peeled and finely chopped.
  • One tablespoon of flour.
  • Three tablespoons of heavy cream.
  • 125 ml of dessert wine (port, Marsala, Madeira).
  • 250 ml chicken stock or water.
  • Ground black pepper.
  • Two tablespoons of chopped fresh parsley.
  • Salt.

  1. Peel the champignons, cut into slices.
  2. Remove the silver tape from the clipping.
  3. Cut across into pieces 4-5 cm thick, flatten each piece with your hand.
  4. Heat olive oil in a frying pan or saucepan, melt one tablespoon of butter in it. Fry pieces of meat for 2-3 minutes on each side, lightly salt.
  5. As soon as the meat is fried on both sides, remove it on a plate and cover with a foil “house”.
  6. Add the remaining two tablespoons of oil to the pan, fry the finely chopped onions, carefully scraping off any particles adhering to the bottom.
  7. After two minutes send garlic to the "company" to the onion, cook together for a minute, add mushrooms.
  8. For about a minute and a half, do not stir the contents of the saucepan, let the mushrooms settle and release the juice.
  9. Cook for another three minutes, stirring occasionally.
  10. Add flour, stir, cook for two minutes, pour wine, simmer over medium heat. The wine should almost completely evaporate.
  11. Pour the broth, cook for 3-5 minutes, reduce the light, add cream, pepper, chopped parsley, a little salt, mix, put in the fried tenderloin. Simmer for three minutes. The dish is charming with flap rice or any pasta.

  • 150 ml chicken broth or water.

  • Five tablespoons of cream (20%).
  • Two tablespoons of cognac or brandy (optional).
  • A sprig of fresh or a pinch of dry.

  1. Remove the silver foil from the cut, cut into 4 cm thick pieces, spread each piece by hand.
  2. Chop the peeled onion into cubes.

My second cousin Aristotle always said that the best meat for barbecue is pork tenderloin. And the best marinade for her is ordinary onions mixed with rehan (purple basil).

Having lived not a small life already, I was convinced many times of the correctness of his words. Aristotle Venedictis's pork tenderloin shashlik is still a favorite in our family.

Ingredients

  • Pork tenderloin in the required quantities.
  • Onions (half of the mass of meat).
  • A bunch of basil.
  • A couple of tablespoons of olive oil (optional).
  • Ground spices (black pepper, chaman, utskho-suneli).
  • Salt.

How to cook

  1. Remove the husk from the onion, cut into medium half rings, put in a deep bowl, knead it properly with your hands so that enough juice is released.
  2. Prepare the tenderloin as indicated in the previous recipes, cut into pieces 5-6 cm thick.
  3. Salt, sprinkle with spices, send to a container with onions, mix, add olive oil (if desired), shake the meat with your hands, as if massaging it. Leave to marinate for 2-3 hours (more is possible).
  4. String pieces of tenderloin on skewers (shake off the onion and herbs - they can be fried separately), bake the shish kebab over hot coals for about ten to fifteen minutes. Skewers should be turned over frequently. As a side dish, baked vegetables, fresh tomato salad with olive oil and basil are best suited.

Pork dishes dominate our menu. We can bake it in the oven, in various electrical appliances, cook it with vegetables, a side dish, or in the form of a steak with blood and spices.

However, to prepare a delicious dish from this meat, you need to know the simple basics of cooking.

How to cook pork deliciously and skillfully as a hostess

Option 1 - in a frying pan

The easiest thing to cook with pork in a saucepan is a steak. It goes well with any side dish or vegetable salad. It is better to use a special grill pan.

Rinse the meat and dry well with kitchen paper towels. So that the meat does not contain excess moisture. Shred into layers.

Components:

  • Pork neck - 800 g;
  • Small carrots - 1 pc.;
  • Salt to taste;
  • Dry white wine - 1 glass;
  • Spices - for the marinade;
  • Garlic - 3 cloves.

We wash the meat well, cut off excess fat and film, if any. We mix wine, peppercorns and thyme. Dry and immerse in a deep container. Pour in the marinade and leave for two hours. You can use any spices at your discretion.

We remove the collar, dry it and make arbitrary cuts in several places. Rub with spices: black pepper, paprika, salt and basil.

We cut off several long strips of foil, put carrots and garlic chopped into rings on them, and a piece of meat on top. Wrap tightly in foil, tightly without lye and gaps, otherwise the juice will leak out and the dish will turn out to be dry.

We activate the electric oven at 190 ° C. We immerse the meat to bake for one hour. This dish has one specificity: it is delicious hot and cold. It is juicy and soft due to the marinade.

We used dry wine in our recipe, but it can be replaced with lemon juice, or any vinegar. Place the meat on the mirror side of the foil; heat is reflected from it faster.

The readiness of the dish can be checked by pricking it with an ordinary fork: if clear juice flows, then the meat is ready.

Option 3 - in a multicooker

Having in your home kitchen such an innovative electrical appliance as a multicooker, you can diversify your menu without any extra effort. Make spinach stuffed meat rolls.

Components:

  • Pork tenderloin - 550 g;
  • Spinach - 1 bunch;
  • Ground pepper, salt - to taste;
  • Onions - 1 head;
  • Carrots - 1 pc.;
  • Olive oil - for frying.
  • Egg - 1 pc.;
  • Purified water - 2 l.;
  • Cabbage - 150 g;
  • Basil - a few twigs.

Rinse the spinach well, dry it and cut off the long tails. Blast in boiling water for about a minute. Remove and spread to dry on a dry towel.

Peel the vegetables, add water and boil the broth. Cut the meat into pieces with a fillet knife and scroll twice through an electric meat grinder. Season with salt and spices. Chop the boiled egg into cubes, spinach into strips and mix. Strain the vegetable stock into a bowl.

Form a flat cake from the minced meat, put a little filling in the center and mold into a roll. Activate the appliance for the frying function, pour in vegetable oil.

Fry the semi-finished products on all sides, pour in one glass of vegetable broth, add chopped basil and switch the unit to the stewing function. Cook for another hour.

How to cook delicious homemade pork pilaf

In the classic version, pilaf is prepared from the meat of young lamb, but more and more often it began to be replaced with pork. This meat has a delicate structure and consistency, therefore, the dish is aromatic and rich.

Components:

  • Rice - 500 g;
  • Carrots - 1 pc.;
  • Onions - 1 pc.;
  • Barberry, coriander, white pepper, salt - to taste;
  • Garlic - 3 cloves;
  • Sunflower oil - 100 ml;
  • Pork neck - 450 g;
  • Water - 230 g.

Pour the rice into a glass deep bowl and fill it with salted water and leave for two hours. Choose a high-quality long-grain cereal, and steamed is not suitable for our purposes.

Pre-soaking is done to get a richer flavor. Peel the onions and carrots, cut into large pieces. Chop the garlic with a knife.

For pilaf, the meat of a young pig is best suited. It needs to be washed well and cut into pieces across the grain.

Pour vegetable oil into the pot, heat well and fry the vegetables, add spices and meat. You need to do this on a strong flame.

After five minutes, mix everything, add rice and fill with water. Which needs to be preheated. Bring to a boil, only then cover with a lid, reduce the flame and simmer for half an hour.

If you see that the water has evaporated and the cereal is still hard, add more liquid and cook until tender.

How easy it is to make delicious pork goulash

A dish like goulash occupies one of the main places in our menu. It is made from a pork neck.

The meat from this place has fat layers and is quite soft. Goulash can be made with tomato-sour cream or creamy gravy, add vegetables and mushrooms.

It goes well with any side dish.

Components:

  • Neck - 700 g;
  • Flour - 1 tbsp. l;
  • Carrots - 1 pc.;
  • Onions - 1 pc.;
  • Tomato sauce - 3 tbsp. l;
  • Champignons - 300 g;
  • Vegetable (ordinary) oil - for frying;
  • Salt, spices - to taste;
  • Homemade mayonnaise - 3 tbsp l .;
  • Chilled water - 1 glass.

We clean the wax and chop it into strips. We wash the mushrooms and cut them into thin slices. Pour vegetable oil into the pan and fry the prepared onions and carrots. When they become transparent, add champignons and cook until the moisture evaporates.

We wash the meat well, cut it along and across the fibers into small cubes. Toss with vegetables, stir and add spices and add some salt.

Dilute the tomato sauce with water, mix in mayonnaise and pour the dressing into the cooking dish. After half an hour, add flour and stir. Reduce the flame and extinguish for another half hour.

Fresh parsley or dill will add a spicy taste to the dish. If you come across lean, lean meat, goulash can be cooked with lard or lard.

Pork book with vegetables in the oven

A simple, yet festive dish of pork balyk with vegetables will be a worthy decoration for a buffet table.

Components:

  • Sour cream - 200 ml;

Tomatoes, onions, my pepper, peel and chop into slices. In the intervals between the layers of the balyk, we lay all the vegetables in two pieces. We activate the electric oven at 190 ° C.

We spread a glass balyk on the brazier, stretch the foil on top, fasten the edges tightly and immerse it to bake for one hour. Five minutes before the end of cooking, remove the foil so that the meat acquires a beautiful crust.

Pork chops in batter with sesame seeds

Healthy and tasty chops are made by using bran and sesame seeds as breading.

Components:

  • Pork tenderloin - 450 g;
  • Egg - 2 pcs.;
  • Bran - 5 tbsp. l .;
  • Sesame seeds - 3 tbsp l .;
  • Salt, spices - to taste;
  • Sunflower oil - 100 ml.

Cut the washed and well-dried meat into steaks. We put it in a food bag so that the spray does not cover the kitchen, and beat it to a fine state with a kitchen hammer. Sprinkle with spices, add some salt and lay out in a stack.

In a plate, mix the bran with sesame seeds. We drive eggs into a deep bowl. Pour oil into a frying pan and heat well. Dip the chop in an egg, roll in the flour mixture and fry until a beautiful brownish color.
