Not so long ago we were in a Ukrainian restaurant and saw an interesting dish on the menu - Greek people. We did not order them there on purpose, but decided to cook them ourselves so that we could try them at home in a relaxed atmosphere.

Saturday morning began with a trip to the market for liver and fat pad. We bought the liver from beef, and the fatty net from lamb.

Now a little about the Greeks themselves. They are a well-fried "envelope" stuffed with buckwheat, liver and fried onions. Buckwheat and liver, as a rule, are dryish, but if wrapped in a fat net, then these ingredients will become juicy and tender.

Greek people can be served as an independent dish, simply garnished with salad or vegetables. Here you have both meat and a side dish :-) You can cook them in advance, and just warm them up before serving. We do not recommend eating Greek people cold - all the same, dishes with the use of a fatty mesh are tastier when hot.

And if you make more fillings, then you can add an egg and flour to it and fry delicious liver pancakes with buckwheat. We did just that. It would be possible to lay out the recipe, but they did not have time to take a picture - they ate everything right there :-)

Ingredients:

  • Fat mesh - 0.5 kg.
  • Buckwheat - 150 gr.
  • Beef liver - 300 gr.
  • Bulb onions - 2 pcs.
  • Vegetable oil for frying;
  • Salt and pepper to taste.

How to cook Greek people:

Step 1

Cook buckwheat in boiling salted water until tender.

Step 2

Finely chop the onion and fry in vegetable oil.

Step 3

My liver, cut out the films and pass through a meat grinder.

Step 4

Wash the fat mesh and dry it with a towel.

Step 5

Making the filling - mix buckwheat, liver and fried onions. Salt, pepper to taste.

Very often for my family, I cook offal dishes, in particular from the liver. We adore any kind of liver. We especially respect beef liver and, of course, tender chicken. But we do not treat pork liver in any way and do not like to use it for cooking, although many housewives, on the contrary, prefer to cook from pork liver. In general, as the saying goes: "There are no comrades for taste and color" ...

Therefore, everyone should cook from the liver they prefer for themselves - today we will use chicken liver to make delicious pancakes. But the pancakes will not be quite ordinary, but with the addition of tasty and very healthy cereal - buckwheat. We can say - these are Greek people, only it is not cooked in the form of cutlets, but in the form of pancakes. It turned out very tasty and I want to say that such pancakes can be fed, for example, to a child who does not really "respect" this cereal. Naturally, as a useful "additive", instead of buckwheat, you can add any cereal to the liver pancakes: boiled rice, pearl barley, and maybe millet or wheat ... It's up to you, but the pancakes will still be very tasty, healthy and satisfying.

Would need:

  • Chicken liver (or any other) - 500 gr.
  • Boiled or steamed buckwheat - 2 cups
  • Milk - 1 glass (or 200-300 gr. Sour cream)
  • Bulb onions - 1 pc.
  • Salt, pepper - to taste
  • Flour - until the consistency of heavy cream is obtained
  • Vegetable oil - for frying pancakes
  • Sour cream, fried onions and carrots - for serving pancakes

How to make Grechanika liver pancakes:

We wash the chicken liver thoroughly and sort out the veins ... Pass it through a meat grinder with the addition of onions. Add milk (or sour cream), salt and pepper to taste, boiled buckwheat and sifted flour. Knead to a state of not thick sour cream and begin to bake the pancakes in a pan with preheated vegetable oil.

Fry on both sides (about 1 minute) until a beautiful golden brown crust is formed.

Put the finished liver pancakes with buckwheat in a prepared stewpan or in a frying pan. You can layer the Greek people with fried onions and carrots.

I really like to do this, but today I just made a vegetable fry and served it in the center on a plate with sour cream, spread liver pancakes around.

Liver pancakes are always tender, melting in the mouth.

Grechaniki with minced meat - a classic recipe

Traditionally, Greek people cook with the addition of any minced meat that was stored in the freezer or cooked the day before. With it, you will get hearty and tasty Greek people.

First, prepare the following ingredients:

  • 400 grams of minced meat - suitable for pork, chicken, beef
  • 250 grams of buckwheat porridge
  • 1 egg
  • 1 onion onion
  • 50 grams of wheat flour
  • 100 grams of vegetable oil
  • Salt, black pepper to taste

When all the ingredients are prepared, you can start cooking classic Greek people with minced meat.

Step 1. Peel the onion and chop finely

Step 2. Put the required amount of minced meat in a bowl and add onions to it. Stir.

Step 3. Beat the egg into the minced meat, add salt, pepper and mix well until smooth.

Step 4. Cook buckwheat. Everything is classic - pour water so that there is more cereal on the phalanx of the finger. After it boils - add salt, make the fire quietest.

Step 5. Add buckwheat porridge to the minced meat, add the sifted flour and mix. Let the minced meat brew for 10-20 minutes.

Step 6. Pour sunflower oil into a frying pan, heat up and lay out with a spoonful of buckwheat. Shaping can be done by hand before placing in the pan, or with a wooden spatula during frying.

Step 7. When frying, make sure that the cutlets do not stick together. They should be fried evenly on both sides, so be careful not to burn and turn over in time.

Step 8. Grechaniki can be stewed a little. To do this, turn the heat down and cover them with a lid.

Greek people with liver in a grid

Buckwheat and liver are two very popular and demanded ingredients on the table of Ukrainian families. In addition to their nutritional value, they are also very useful. That is why, since ancient times, buckwheat and liver have been combined into one simple and very tasty dish - Greek people. Let's learn how to cook them.

To do this, you need the following ingredients:

  • 1 kilogram of pork liver
  • One and a half glasses of buckwheat
  • 6 onions
  • 800 grams of oil seal
  • 1 teaspoon garlic powder
  • Salt, pepper to taste

Cooking progress:

Step 1. Boil buckwheat until cooked. To do this, rinse the cereal, place it in a saucepan and fill it with water so that it covers the buckwheat on the phalanx of your finger. Bring water to a boil, add salt and reduce heat.

Step 2. While the porridge is cooking, twist the liver in a meat grinder.

Step 3. Peel the onion and chop finely. Saute it in a skillet for a few minutes until golden brown. Very little cooking oil can be added.

Step 4. In a bowl, combine the minced liver, onion and buckwheat. Season with garlic powder, salt, pepper and season to taste.

Step 5. Now comes the tricky part. We take the fatty mesh (oil seal), cut it into rectangles. Place the mince stock on one edge and close it with the second edge to make it look like a sheet.

Step 6. Twist all the Greek people - these are our blanks before frying.

Step 7. Pour oil into a frying pan, put on fire. When it's warmed up, lay out the buckwheat in one layer and close the lid. Fry until golden brown on both sides.

Step 8. When the Greek people are cooked through, place them on a large platter and serve along with the vegetable salad. You should not cook a side dish of porridge, as the meal will turn out to be too hearty and heavy.

For fans of chicken meat, we have prepared a recipe for Greek people based on poultry meat. But buckwheat is still considered the basis for minced meat - it gives the dish a special taste.

Ingredients for cooking minced chicken Greek people:

  • 200 grams of buckwheat
  • 200 grams of chicken fillet
  • 100 grams of bread crumbs
  • 1 egg
  • 1 onion onion
  • 1 clove of garlic
  • Vegetable oil for frying
  • Salt, pepper to taste

To cook Greek chicken at home, you should do a few simple culinary manipulations.

Step 1. Buckwheat should be boiled until cooked. To do this, rinse the cereal, place it in a saucepan and fill it with water. Bring to a boil, season with salt, reduce heat and cover. The water should completely evaporate - then the cereal is ready.

Traditionally, Greek people cook with buckwheat and any minced meat to taste. But for those who do not eat meat, fast or simply do not like it, there is a special recipe for Greek people without meat.

To prepare them, you need the following ingredients:

  • 1 cup buckwheat
  • 1 potato
  • 1 carrot
  • 1 chicken egg
  • 1 onion onion
  • 3 tablespoons flour
  • 4 tablespoons vegetable oil
  • Salt, pepper, spices to taste

The course of cooking Greek people without meat:

Step 1. We sort out, wash and cook buckwheat until cooked. Do not forget to add salt to the porridge during cooking.

Step 2. In this recipe, meat will be replaced by vegetables. Therefore, finely chop the onion, rub the carrots on a coarse grater.

Step 3. Put onions and carrots in a greased frying pan, sauté until golden brown.

Step 4. The potatoes need to be washed, peeled, grated and squeezed out of excess juice.

Step 5. If the buckwheat is ready, let it cool and crush it in a saucepan with a wooden spoon. Add the egg and mix.

Greek people in tomato sauce in the oven

To cook delicious and healthy Greek people in the oven, you should prepare the following set of ingredients:

  • 800 grams of chicken fillet or any other meat
  • 240 grams of buckwheat
  • 1 large onion
  • 3 eggs
  • 4 tablespoons tomato paste
  • Salt, pepper, spices to taste
  • Vegetable oil for frying

The course of cooking Greek people with tomato sauce in the oven:

Step 1. Buckwheat should be boiled until fully cooked - the cereal should be soft, crumbly, and the water from the pan should completely evaporate.

Step 2. Twist the meat in a meat grinder with onions, salt and pepper.

Step 3. We add buckwheat to the meat - the proportions can be different, it all depends on your personal preferences.

Step 5. Form small patties with wet hands and place on a baking tray.

Step 6. Cooking the sauce: dilute the tomato paste with a glass of water, add salt, pepper and suneli hop seasoning. Fill with Greekman sauce. Therefore, take a form with high sides.

Step 7. We put our Greek people in the oven for 40 minutes at a temperature of 180 degrees.

Steamed Greek people in a multicooker or double boiler

If you are looking for something dietary, healthy and low in calories - this recipe is for you. After all, the most high-calorie thing in Greek people is frying them in a pan in sunflower oil. We suggest steaming buckwheat cutlets, so they remain juicy, aromatic and healthy.

Ingredients (for 3 servings):

  • 500 grams of minced chicken
  • 4 tablespoons buckwheat
  • 1 onion onion
  • 1 egg
  • 3 tablespoons bread crumbs
  • Fresh greens
  • Salt, pepper to taste

Steaming Greek people:

Step 1. First you need to boil buckwheat. Wash the cereal, place it in a saucepan and cover with water. Put on fire and simmer until the water evaporates. Try buckwheat, it should be crumbly and soft.

Step 2. Chop the onions finely. It can also be grated.

Step 3. In a deep bowl, combine the minced meat, buckwheat, breadcrumbs and chicken egg, salt and pepper and mix well. If desired, you can add more finely chopped greens.

Step 4. Make balls of minced meat with wet hands and put them in the bowl of a double boiler. They will cook for about 30-40 minutes, depending on the size. For example, it is best for children to make meatball-sized Greek people.

Step 5. When Greek people are ready, they should be served with sour cream or vegetable salad.

Greek people in sour cream sauce

The sauce gives Greek people a special piquant taste, and also makes them juicy and even more nutritious.

To cook Greek people in sour cream sauce, you will need the following ingredients:

  • 800 grams of pork
  • 1 cup buckwheat
  • 150 grams of sour cream
  • 1 chicken egg
  • 2 onions
  • 2 tablespoons flour
  • Salt, pepper, herbs to taste
  • Cooking oil for frying (approximately 100 milliliters)
  • 5 cups of water

Cooking progress:

Step 1. We start with buckwheat. The groats need to be sorted out, rinsed and boiled. The water should completely evaporate from the pan.

Step 2. Now we are preparing the minced meat. The meat should be washed well, cut into small pieces along with the onions. We twist all this, add salt, pepper and spices.

Step 3. When the buckwheat is ready, knead it with a wooden spoon until smooth and add to the minced meat.

Step 4. Break the egg into a homogeneous mixture and knead.

Step 5. Form small patties with wet hands and dip each in flour. Press lightly on top with your hand to make a cutlet.

Step 6. Pour a small amount of vegetable oil into the pan. We warm up and lay out our Greek people so that they do not find each other. They should be fried over high heat on both sides, until golden brown.

Step 7. Then, put them in a saucepan. Cooking sour cream sauce: for this, in a plate, mix sour cream, water, salt, pepper and a mixture of herbs. Mix all this well and pour in Greek people.

Step 8. To make Greek people even more juicy, pour the remaining sour cream on top and close the lid. Simmer over medium heat for about half an hour.

Greek people are ready! They can be served with a side dish of porridge or pasta, as well as with a vegetable salad.

Greek people with mushrooms

Here's a recipe that's perfect for vegetarians or fasting people. In it, minced meat is replaced by mushrooms, and the taste does not get any worse from this!

Ingredients for cooking Greek people with mushrooms:

  • 100 grams of buckwheat
  • 250 milliliters of water
  • 200 grams of fresh champignons
  • 1 onion onion
  • Half a glass of flour
  • Salt, pepper, vegetable oil
  • Fresh herbs to taste

Cooking progress:

Step 1. We cook buckwheat. To do this, we sort out, wash the cereal, put it in a saucepan and fill it with water. Cook porridge under a closed lid over low heat. The water should completely evaporate, and the cereal should be soft and crumbly.

Step 2. Cut the onions as small as possible and fry them until golden brown in a little vegetable oil. While the onion is fried, cut the mushrooms into thin slices. Salt, pepper and mix with onions.

Step 3. Add finely chopped greens to the onion-mushroom mixture and grind everything in a blender. Or twist it several times in a meat grinder.

Step 4. Add the resulting mixture to buckwheat, mix until smooth. We make small cutlets from it and roll in flour.

Step 5. We put a frying pan on the fire, heat it, pour oil and fry the buckwheat with mushrooms over high heat on each side until a golden crust is obtained.

Lean Greek people with mushrooms are ready! You can serve them with a side dish or as a separate independent dish.
