  3. We fill the filling with sour cream to add juiciness. I have a large lavash 70x40 cm, I cut it into 2 parts. Lubricate the pita bread with sour cream, beaten with an egg.
  4. We distribute the filling over the pita bread, it is convenient to do this with a culinary scraper or spatula. We roll up the roll. We do the same with the second half of the pita bread.

  3. It is convenient to use a silicone brush. Now we lay out the prepared filling. The layer should turn out as in the photo - no more than 1 cm thick. Sprinkle the minced meat with cheese grated on a fine grater. Here already, the more the better. A little tip: if you are preparing a double or triple portion, then stack the pita bread on top of each other.

While the dough is drooping, you can start rolling out other lumps. When they are all ready, we start frying. To do this, you need to take a voluminous skillet. It must be absolutely clean and dry. We will fry without adding oil. Each side of the pita bread is fried for about one minute.

How to understand that the pita bread should be turned over? Pay attention to the bubbles that will appear during the frying process. The more of them on the surface of the dough, the better the side will be fried. And so that the pita is soft and well subsequently wrapped in a roll, after frying it should be put on a damp towel. When the second pita bread is ready, we also sand it with a towel. It turns out a kind of layer cake: lavash is a damp cloth, lavash is a cloth.
