      I pour dry rice, polished, steamed into hot oil. Fry over medium heat, stirring occasionally, for about 2 minutes. Gradually, the rice will turn white and absorb the fat, become transparent, and then yellowish-golden.

      I add salt and all the spices: curry or turmeric for color, sweet paprika, pepper for pungency and aroma (you can choose spices and their amount to your taste). I stir and fry for another half minute. During this time, the aroma of the seasonings will be better revealed, it will be absorbed into the rice. It is important not to overexpose so that the spices do not burn, otherwise they will taste bitter.

      I pour in exactly 2 glasses of cold water and bring to a boil. I cook over medium heat without a lid (!) Until the rice has absorbed all the liquid. On average, the process takes about 15 minutes.

      Reduce heat to low, cover pan with lid and let cook for 20 minutes. No need to stir! I remove the pan from the heat and leave it under a closed lid for another 10 minutes to steam the rice. I open and loosen slightly.

      How do I use it? Can be used as a base for preparing other dishes. Indian rice is a bit fat for me, so I usually mix it with a Mexican vegetable mixture or a steamed vegetable mix. It goes well with seafood, in particular shrimp.
