  • There is another way of molding: sprinkle flour on the table, put all the dough there and roll into a sausage. Then cut it into equal washers, give them the desired shape and, if necessary, roll in flour.

    • Preheat a skillet and brush with oil. It is not necessary to lubricate non-stick cookware. Put the cheese cakes there in one layer. If there are many, cook in batches. Fry for 3-4 minutes over medium heat, until the bottom of the curd cakes is covered with a golden crust. Then turn them over, reduce heat slightly and cook about the same amount more.
    • Cheesecakes can be baked in the oven. Place them on a baking sheet lined with silicone mat or quality parchment paper. Bake at 180 ° C for about 15 minutes. Then gently turn the cheesecakes and cook for another 10 minutes.

    Cheesecakes are an insidious dish. Some people always succeed without any problems. And others, as my friend Katya says, are haunted by the curse of cheese. Once upon a time it haunted me too. The cheesecakes were damp on the inside, burnt on the outside, or, even worse, spread over the pan.

    But over time, my hand got full, my favorite recipe picked up, the perfect cottage cheese was found ...

    And my post today is for those who are still haunted by the curse of cheese.

    The composition of the syrniki (if we talk about the classics, not PP-variants), as a rule, is unchanged - cottage cheese, egg, sugar, flour. And even the proportions are approximately the same for all - one egg per pack of cottage cheese and a spoonful of flour and sugar.

    Cottage cheese. In my opinion, the most delicious cheese cakes are obtained from 9% cottage cheese. Moreover, the cottage cheese should be the most common - in a paper briquette. I prefer two brands - Yours Sincerely and Tevye Milkman. If we talk globally about the properties of cottage cheese, then it should be fresh and with a short shelf life (we look at the date of manufacture and terms up to 5 days) and sufficiently dense. Indeed, even among my favorite brands, I sometimes meet wet cottage cheese. Therefore, without hesitation, I sort through the packs, pressing my fingers on the cottage cheese and choose the densest one.

    Egg. By experience, I came to the conclusion that the most delicious cheese cakes for me are obtained with egg yolks, without protein. Firstly, protein has a pretty decent (again, in my opinion) effect on the density of cheesecakes. Secondly, with the yolks, the cheesecakes themselves turn out brighter, like the sun. And the fat content of the product increases. And cheesecakes, in my understanding, are not a dietary dish. A sort of breakfast dessert.

    Flour. Despite the great popularity of PP-cheese pancakes with a variety of other flours, the most delicious for me are still cheese pancakes with VS wheat flour. I take 1 tbsp for a pack of cottage cheese. without a slide for dough and one more for breading.

    Sugar. Since I always eat cheesecakes with a variety of sweet toppings like honey, jam, jelly and just fruits, I don't add sugar to the dough. But I warn you right away, those who are accustomed to sweet dough feel it right away.

    To prepare one portion of curd cakes, we need:
    200 g cottage cheese 9%,
    1 egg yolk
    2 tbsp wheat flour sun,
    fruits, berries, honey, jam, sour cream, etc. for filing.

    1. Knead the curd with a fork.
    2. Add the yolk to it and mix thoroughly.
    3. Add 1 tbsp to the yellowed curd. flour without a slide (and sugar, if using). Mix thoroughly.
    4. Divide the mass into 4 parts, roll dense balls out of them, without cracks.
    5. Pour 1 tbsp into a separate plate. flour.
    6. Dip the balls one by one into the flour, flatten, roll in flour on both sides.
    7. Shake off excess flour and cook in your favorite way.

    Spun cheese pancakes

    Yarn - Russian deep fat. Fry the product in a large amount of oil so that it covers 1/3 of it.

    Spiced cheesecakes are a kind of cheesecakes from your grandmother. Bright, ruddy, with a crust. Taste of childhood.

    How to cook? We take a frying pan with high sides, put it on a lower than medium heat, pour in the oil and wait until it is calcined. If you put it on a high heat, the oil, of course, heats up quickly, but the curd cakes in the pan will burn too. So we have to be patient and wait. To test, throw in a micro slice of white bread. If there are bubbles around it, the oil is ready.

    We spread the cheese cakes in butter, cover with a lid. As soon as they are browned on one side, turn over and fry again under the lid. Thanks to the lid, the cheesecakes will rise slightly. Thus, the syrniki are cooked for about 10-15 minutes.

    There are such syrniki tastes best with jam, since the spicy taste is bright, and it also needs a bright company. Classic or, as in my photo, whipped up. I fry the diced apples in butter for a minute, add a handful of lingonberries, a few cloves and sugar to taste. I cook over medium heat, stirring, no more than five minutes.

    Fried cheesecakes

    If yarn cheesecakes are grandma's option, then fried in butter is my mother's.

    They prepare even easier. Melt the butter at a speed. We let him hiss. We spread the cheese cakes and cook on a low-medium heat, covering with a lid (or not) on both sides until golden brown. The time is approximately the same - 10-15 minutes.

    The taste of such syrniki turns out to be more delicate, therefore, toppings can be any. I have sea buckthorn coolies. Punch the sea buckthorn with a blender, rub through a sieve and mix with powdered sugar. In addition, she served sour cream.

    Cheesecakes in the oven

    Cheesecakes in the oven are a very popular option for their preparation today. I cook in it with my parents. And since I don't have an oven myself, I used the same function of my Tefal grill (second temperature mode), so don't be surprised by the stripes.

    In the oven, cheesecakes are prepared very simply. Preheat the oven to 180 degrees, lay out the syrniki and cook for about 15 minutes, turning once "in the middle of the path".
