We disassemble eggs into yolks and whites. First beat the whites separately, only after the soft peaks have turned out, we begin to add a third of the sugar norm from the recipe. It is better to introduce sugar gradually, pouring it in a trickle while the mixer is running.

Now let's deal with bulk ingredients, which must be sifted and mixed well. After that, beat the yolks with the remaining sugar and slowly begin to introduce the dry mixture. Only after the whole dry mixture is poured into the biscuit blank, beat the dough for another 1-2 minutes and add the proteins prepared in advance. They must be introduced in 2 tablespoons, stirring thoroughly with a plastic spatula after each injection.

Preheat the oven to 180-190 degrees, spread the parchment into the baking dish and pour the dough. We send our biscuit to the oven for 25-30 minutes. Do not constantly check its readiness by opening the door. Biscuit dough doesn't like being disturbed at the time of baking, so it can easily deflate and settle. And instead of a beautiful airy crust, you get a thin chocolate pancake.

When you put the cake in the oven, remove the cherries from the freezer and place the mug with berries in warm water. This will defrost the cherries quickly. You can cook a biscuit, as always, with dividing the eggs into components, but since we do not need a too high cake, we will not engage in this procedure. A crust made from whole eggs will be more than enough.

We put the oven to preheat and line the bottom of the mold with parchment for baking. By the way, the form should be taken only detachable, since the cake will be collected in it. It is very difficult to get a finished cake out of an ordinary, non-split form, or rather, almost impossible.

  • sugar - 200 g;

Preparation

Let's prepare the cherry first. If using frozen cherries, first defrost them at room temperature and let the juice drain. If using compote cherries, simply discard them in a colander and let the liquid drain. If the cherry is fresh, then be sure to cover it with sugar and bring it to a boil in a saucepan over low heat. And then we also discard it in a colander to stack the juice.

Now let's start preparing the dough. Combine flour, salt, sugar, vanillin and soda, mix. We spread the butter and chop everything with a knife to make butter crumbs. Add sour cream to it and knead the dough. It turns out to be quite dense, but plastic. So that all the tubes come out of the same size, you can make a template out of paper or cardboard - a rectangle 30 cm long and 10 cm wide.We divide the dough into 15 pieces, roll out each of them and cut out according to the prepared template.

On each piece of dough, closer to the edge, lay out a row of cherries and roll up the roll. We pinch the seam and edges well so that the juice does not flow out. Cover the baking sheet with parchment, lay out our rolls with the seam down and bake at a temperature of about 180 degrees for about 20 minutes. While the tubes are cooling down, let's turn to the cream. First, beat the sour cream until smooth, then add sugar and vanilla sugar and beat again.

For now, my frozen cherry comes in handy. We boil it with a glass of sugar and a little water. You can do this in advance, or take ready-made jam. I have nowhere to rush, I will have time for everything. I boil the cherries until the juice becomes viscous. Do not pour too much water! Cool it down.

We cut the rested cake into 2-3 parts, as it is more convenient for you. If your shape is tall and narrow, cut it into 3. Saturate each cake (from 2 sides) with cherry syrup. If the syrup is thick, dilute it with water or cognac.

We take out the cream from the refrigerator. Lubricate the cake with it. We take out a few cherries, place them on top of the cream. Cherries can be pruned. Put the second on the first cake, spread it again with cream, put the berries. Cover with the third. Now gently brush the sides of the cake with a spatula. So it will be much more elegant.
