The flesh is cut into thin strips (the stalk is removed) and laid out on a baking sheet so that the slices lie without touching each other. A baking sheet is placed in a place protected from the sun where there are no drafts. For uniform drying, the eggplant should be turned over, and the drying process will take about 5-6 days. To prevent dust and other debris from falling onto the eggplant during drying, cover the baking sheet with gauze in one layer.

The methods for slicing eggplant before drying depends on what dishes will be prepared from such a workpiece.

  • Diced.

Dry eggplant for the winter - video

We prepare sledges in summer and dry eggplants in autumn. Not every housewife is ready to engage in conservation all day, and there is already not enough space for freezing. And what about the mainstream diet? You can’t hold vitamins with vinegar! Drying is considered one of the best ways to preserve not only taste, but also beneficial substances. In this article, you will learn how to properly dry eggplants for the winter at home.

There are three main ways to dry eggplant:

  • On a thread;
  • In the oven;
  • In the electric dryer.

Of course, if you have a separate freezer, and you can freeze kilograms of eggplant for the winter, then you will save your time. But my freezer is already clogged with zucchini, so let's start drying.

"Little blue" as boletus - on a string

In this recipe I will tell you how to dry eggplant on a thread. Eggplants resemble mushrooms to their taste and texture. And when we hang the eggplant garlands, then the external resemblance will be obvious.

For cooking, we need eggplant. I don’t understand grades and cannot distinguish “diamond” from “early Czech”, therefore I choose the smallest vegetables for drying. In such fruits there are fewer seeds, they will be less bitter.

Advice! To get rid of bitterness, soak the blue circles in salty cold water for 15 minutes. After - dry on a paper towel.

  1. The next step is to thinly cut the skin. If you have a vegetable knife, then you can quickly do the cleaning.
  2. Trim your butt and nose.
  3. The final stage remained - heat treatment. Pour the eggplant with boiling water and leave for 5 minutes.
  4. Remove the vegetables from the water and throw on a sieve to drain excess water.
  5. When the eggplants have cooled, use a regular needle and thread to string false mushrooms at a distance of 3 cm from each other. We will dry in the kitchen or in a warm place for a week.

Eggplant mushroom caps of boletus remind eggplant. Such "mushrooms" can be used when cooking soups and stews.

Dry in the oven

This drying method is practically no different from the previous recipe. Only here we do not use salt.

  1. Cut the peeled vegetables into circles and distribute on a string.
  2. We put eggplant beads on a dry baking sheet and send it to the oven for 10-15 minutes at a temperature of 160 degrees.
  3. Hang in a dry place for 3-4 days.

When the vegetables are dried, collect them in a glass jar and tightly close the lid.

Dried eggplant "under the meat" in an electric dryer

Another very interesting option for cooking blue vegetables in an electric dryer. In the previous recipe, we created mushrooms, and in this - meat!

Wash and clean the eggplants. Cut into thin strips with a knife or vegetable cutter. Prepare the marinade:

  • Vegetable oil - 100 ml;
  • Honey - 2 tsp;
  • Soy sauce - 70 ml;
  • Pepper, paprika, spices.

Season the slices with marinade and leave for 2 hours at room temperature.

We lay the strips on the dryer levels, set the temperature to 40 degrees and dry for 24 hours. We get thin crispy strips that resemble bacon. Only calories are fewer and more benefits. Vegetable chips are in perfect harmony with beer.

Which is better to dry or freeze eggplant

I will say this, any method of harvesting for the winter is good. Part of the nutrients is lost both during freezing and drying. The first method is quick, but drying requires patience. But personally, I like dried eggplant more!

Dry eggplant can be added to soups, stews or steamed. If you want to fry them, then soak them for 5 minutes in water before cooking.

  1. Grind the dried vegetables and get a seasoning with an unusual taste.
  2. Using a blender, prepare vegetable powder, add water and use as a cosmetic face mask.
  3. A spoonful of dried blue ones per day helps to cope with alcohol and nicotine addiction.

Now you know how to dry eggplant for the winter at home and choose a recipe to taste. Bon Appetit!
