Products to be prepared:

  • a quarter liter of milk;
  • a quarter of a liter of water;
  • ¼ cup candied fruit;
  • 4 eggs;
  • a couple of tablespoons of sugar + 100 g for cream;
  • ¼ packs of butter;
  • a couple of lemons.

Pour the indicated amount of milk and water into the stewpan, throw a small pinch of salt and bring to a boil. Pour the washed cereal and boil over low heat until cooked. This will take about 20 minutes.

Break two eggs into a bowl, separating the yolks from the proteins. Combine the yolks with sugar and beat at high speed until creamy. Add porridge to the resulting cream and again interrupt everything in a blender, then pour the candied fruit and mix. We transfer the proteins to a dry bowl of the combine, add a small pinch of salt and beat them in a lush foam. Carefully introduce into the dough.

We grease the baking tins with oil, sprinkle with breadcrumbs or powdered sugar if desired and spread the buckwheat mass. We put on a baking sheet with water (the water level should reach the middle of the mold) and cover with foil.

On a note! You can make a separate foil lid for each mold, but it’s more convenient to cover everything with one big sheet!

We send our future buckwheat pudding to an oven preheated to 180 ° C and bake for 20 minutes.

While the dessert is being prepared, we are engaged in lemon cream. We carefully wash the lemons under running water, remove the zest from them and squeeze the juice. Remove the finished cream from the stove, add a teaspoon of butter and mix.
