  • Egg yolk - 1 pc.;

Cook the turkey broth with onions and roots (carrots and parsley). Remove vegetables from the finished broth. Prepare a white sauce in a saucepan: in the heated broth (3/4 cup), add the sifted flour, mix thoroughly, add the butter. Pass meat and vegetables through a meat grinder twice or beat with a blender. Dilute the resulting mixture with broth, combine with white sauce, boil for 10-15 minutes, stirring. Salt.

In the prepared soup, cooled to 70 degrees, enter the lezon - beaten egg yolk with milk. This will give the soup a delicate creamy texture. Sprinkle the finished first dish with chopped parsley.

Puree soup with turkey and vegetables

  Ingredients:
  • Vegetable broth or turkey broth - 1 l;
  • Boiled turkey fillet - 100 g;
  • 2 potatoes;
  • 1 small carrot;
  • 10 inflorescences of broccoli or cauliflower (you can mix);
  • Butter - 1 tsp;
  • Salt;
  • Greens to taste.

Cut vegetables, disassemble cauliflower or broccoli into small inflorescences. In a boiling vegetable or meat broth, place diced potatoes and carrots. Boil root crops until soft. Then send broccoli and / or cauliflower to the broth. Puree the finished vegetables with a blender, adding broth over a tablespoon. Bring the soup to the desired consistency, gradually pouring the broth. Pour the soup into a pot with a thick bottom, add a teaspoon of butter, bring to a boil over low heat, stirring occasionally. Salt to taste. Add chopped greens portionwise to the plate.
