Products:

    • Dried soy asparagus - 100 gr.
  • Onion - 1 head
  • Carrots - 1 pc.
  • Vegetable oil - 40-50 gr.
  • Garlic - 2-3 cloves
  • Cilantro greens - optional
  • Red and black ground pepper - to taste
  • Soy sauce - 1 tbsp spoon

Preparation:

First, pre-soak dried soy asparagus in cold water in a deep bowl. Leave it on for 4-5 hours. Make sure the water completely covers all of the noodles.

Soaked asparagus will be whiter in color and will increase in volume by 1, 5 - 2 times. Rinse it well and cut it into sizes convenient for your dish.

Chop onions and carrots. If you wish, you can add green beans to our asparagus.
Fry the onions, carrots in oil, add young green beans if desired and fry all together for 5 minutes.

Then add asparagus to our roast, salt, mix well, reduce heat and simmer for 5 minutes under the lid.
Now season the asparagus, for this add black and red ground pepper, garlic, chopped cilantro, soy sauce to it. Mix everything well and cover with a lid for 5 minutes so that the dish absorbs the aroma of spices and herbs. Turn off the stove.

  • 100 g butter;

Preparation:

  1. Rinse the asparagus, cut the peel from the stems.
  2. Cut off the base of the plant.
  3. If necessary, cut the asparagus into equal pieces.
  4. Pour some water into the pan, simmer the plant for 5 minutes. During this time, the water should boil away. Then add oil and fry the asparagus.
  5. While the asparagus is cooking, you can prepare the sauce.
  6. Prepare a water bath in advance - place a bowl on a saucepan with boiling water. Put butter in it.
  7. Add 3 egg yolks. Rub the ingredients with a spoon. Season with salt and pepper.
  8. Steam, stirring constantly, until the mixture thickens. Pour the prepared sauce over the fried asparagus.

Asparagus with cheese sauce and ham

You can fry frozen asparagus, but it is recommended to defrost it at room temperature beforehand. Add smoky flavor to the vegetable dish - ham will help.

Ingredients:

  • green asparagus;
  • salt;
  • olive oil for frying;
  • 50 gr. hard cheese;
  • 1 onion;
  • 50 ml. cream;
  • 2 tablespoons flour;
  • 100 g ham.

Preparation:

  1. Peel the asparagus stalks and cut off the base.
  2. Separately pour the onion, chopped into small cubes, into the pan. Fry in oil.
  3. Add flour, fry again.
  4. Pour in the cream. Cook the sauce, stirring constantly, for 5 minutes.
  5. Grate the cheese. Cut the ham into cubes.
  6. Sprinkle the ham on the asparagus.
  7. When the sauce is ready, add the cheese to it - it should melt.
  8. Pour the sauce over the asparagus.

Asparagus in mustard sauce

You can create a savory dish by adding mustard to the asparagus. It can be an excellent side dish with a steak or served with a light vegetable salad.

Ingredients:

  • green asparagus;
  • salt;
  • 2 garlic prongs;
  • a pinch of sugar;
  • 1 tbsp wine vinegar
  • 1 tablespoon olive oil;
  • 1 tablespoon of Dijon mustard
  • tarragon.

Preparation:

  1. Rinse the asparagus, peel the stem, and cut off the base.
  2. Place in the pan. Pour in some water and salt. Simmer for 5 minutes. When the water boils off, pour in the oil, fry on both sides.
  3. Pour the oil into a separate container, add sugar and squeeze the garlic. Warm up. This can be done in the microwave. The garlic should soften. Then remove it from the oil and crush it until mushy.
  4. Add this garlic to the asparagus, stir it.
  5. Add vinegar, mustard and tarragon to the oil. Stir. Pour the sauce over the asparagus.

At least the dinner turned out wonderful

Asparagus rinse thoroughly and remove excess water with a paper towel. Probably, everyone already knows without me that the lower part of the asparagus should be removed due to its hardness.

How do you know how much to cut? Very simple! You need to take the asparagus slightly below the middle (but not quite at the base) and bend it. It will break immediately and exactly where it needs to be! Throw out the tip, and the main part can be used as a "template" for cutting the rest of the asparagus (well, or you can break off all the ends in this way).

Heat a frying pan (over medium heat), spread butter, add olive oil... Olive oil is needed to keep the butter from burning. When sl. the butter will melt, add sugar(literally 2 pinches) and salt(taste). We spread the asparagus, fry in oil for 2 minutes (do not add heat).

Advice. It is desirable, but not necessary, that the pan is large in diameter. Then the asparagus will not be one on top of the other, which guarantees high-quality roasting.

Next, add water and cover the pan with a lid. Simmer for 3 minutes. Then we remove the lid, add the heat to maximum and simmer (or are we already frying?) The asparagus for 1 minute, until there is practically no liquid left.

I served asparagus with fried salmon, boiled potatoes (I chose smaller ones on purpose) and lemon-butter sauce. The sauce, to my shame, was ready, so I can't give you a recipe. In Germany it is called Zitronen Butter Sauce by Knorr. Whoever has the opportunity to buy and who does not faint at the sight of ready-made sauces - I advise you to buy! It goes very well with asparagus. But I say with confidence that asparagus will be good even without the sauce (I tried it)! I took the sauce only because of my man, it tastes better for him

Green asparagus is a rather expensive product, and if we decide to buy it and make fried asparagus, we want everything to be fresh.

How can you tell fresh from old asparagus? It's very simple. In the photo on the left - good asparagus, and on the right - already a little dried up, which is not good. Visually, everything is perfectly visible: the first has a smooth stem, and the second has a slightly wrinkled, which indicates a lack of moisture, possibly improper storage conditions, and so on.

Unfortunately, whatever one may say, but in our bundle several wrinkled stems will necessarily be lost. You just have to watch that there are a minimum of them.


Cut off a couple of centimeters of the ends of the asparagus. The ends are hard and even after heat treatment will remain so, so do not feel sorry for them, feel free to cut them off.


According to the rules for cooking asparagus, a special saucepan is sold, which is narrow and long. Why exactly this? The bottom of the asparagus is harder and takes longer to cook. But I rarely buy asparagus, therefore I do without such a saucepan. We have to deviate from the rules and get out with a simple, most ordinary, but wide pan.

In advance, you need to boil the kettle, put the asparagus in a saucepan and pour boiling water over it. Cook for 5, at most 7 minutes. You cannot digest it - it will fall apart.
If you don't have a wide pan, just cut the asparagus in 2 pieces. In this case, first throw in the bottom half, and after 2-3 minutes the top half.
Be sure to salt the water. Asparagus loves salt!


Peel and chop the garlic. In a frying pan, melt the butter, add a spoonful of vegetable oil, throw in the garlic.

Drain the water from the asparagus and immediately put it in the pan.
Fry for several minutes over medium-high heat, gently shaking the pan, thereby turning the asparagus stalks.

Serve with lemon juice. It is quite possible that you will need to add salt on top. Pepper if desired. For aroma, you can sprinkle with lemon zest. Another option for a change is grated hard, flavored cheese.

It's very simple, but it's good for fried asparagus, you don't need to overload it with flavors and long heat treatment.
