  • 800 g of cottage cheese
  • 250 g sour cream
  • 100 g butter

To remove the curd lumps, you need to use a submersible blender and beat the curd mass until smooth. Soak gelatin. After it swells, dissolve it in a water bath. Add to the curd mass at the very end. Curd layer for the future cake is ready.

Putting the cake together.  In a detachable form we put chocolate sponge cake. Pour the curd mass from above. We put the cake in the refrigerator until the curd layer completely hardens, for at least 1.5 hours.

The filling is ready. Now it's time to bake our cake. We take a baking dish, grease it as necessary with oil. I use a silicone mold, so I do not lubricate it, baking is so well removed from the mold. Chocolate dough is divided into two equal parts. We put the first part into the form and level it.


   On top of the chocolate dough we spread the curd filling.


   Spread the rest of the chocolate dough on top.


   Put the mold in the oven and bake at a temperature of 180 degrees for about half an hour. Readiness check with a wooden spatula or toothpick. If after half an hour it’s damp, then bake until cooked, adding time. As soon as the cake is baked, remove the mold from the oven and let it cool slightly. We remove the cake from the mold and decorate as desired.

This is a truly wonderful cake - with curd cream, chocolate, tender, creamy, moderately sweet ... and without gelatin!

It can be served after several hours in the refrigerator, but I advise you to prepare this dessert in advance, in a day. Real jam!

Ingredients

Chocolate cake:

  • 200 g chocolate (with 50% cocoa content)
  • 130 g butter
  • 180 g sugar
  • 200 ml of coffee or water
  • 3 eggs
  • 200 g flour
  • 50 g of starch (or 25 g of flour)
  • 2 teaspoons of baking powder
  • 1 teaspoon without a slide of soda.

Curd cream:

  • 500 g curd cream with sour cream
  • 150 g vanilla sugar
  • 300 ml sour cream for cream.

For syrup:

  • 200 ml of milk
  • 50 g sugar
  • 1 teaspoon of coffee or coffee liquor.

Chocolate Cream:

  • 200 g milk chocolate, broken into pieces
  • 100 ml cream sour cream
  • 35 g butter.

Besides:

  • 2 tablespoons of cocoa powder.

Recipe

We heat the oven to 180 degrees (suitable fire). We cover with baking paper a shape with a diameter of 26 cm.

For cake: mix freshly brewed coffee with sugar and keep on fire until the sugar melts.

Let it boil several times, then add cold butter, diced. Add the chocolate, broken into pieces, and keep a little more on the fire (until the chocolate melts).

Let cool. Then add the eggs to the chilled mixture and mix thoroughly. Finally, add the flour sifted with starch (if you do not have starch, use flour), baking powder and soda.

The resulting dough is poured into the prepared form and covered. We send to bake for about 35 minutes.

We leave the cake to cool in shape, and then cut it into two parts. As a result, we get three thin cakes. Be careful when handling them, because they are fragile (the dough is very tender).

For cream: mix curd cream with powdered sugar using a mixer. Separately, beat cream sour cream (we take the cream very chilled), but not too much, as for decoration.

Add whipped cream to the curd cream and mix thoroughly with a mixer.

If you do not find curd cream with sour cream, use 400 g of Philadelphia cheese + 100 g of sour cream (sour, fermented), or mascarpone, but dilute it with a small amount of yogurt (50 g).

We spread the cake in a mold, grease it with sweetened milk mixed with coffee or coffee liquor.

If you want to treat children, grease the cakes with sweetened milk. Pour out half the cream. then place the second crust, grease with syrup and pour the rest of the cream. Cover with the last cake.

Chocolate cream is the final step: Melt the chocolate along with sour cream and butter in a microwave or in a ladle over low heat.

Let cool and pour on top cake. Put the cake in the cold overnight. Before serving, remove the removable ring form and place the cake on the dish. Sprinkle evenly with cocoa powder and serve.

I really like the contrasting edge of the cake, but you can decorate it with chopped cookies if you want.
