3. Lubricate the baking dish with oil, sprinkle with flour (or line with parchment paper, foil, as you are used to). We distribute the dough in a form so that the sides are formed 4-5 cm high.


4. Prepare the fill for the berries: beat the sour cream with egg and sugar. Pour the blueberries into sour cream and mix gently.


5. Put the filling in the form, put the cake in the oven preheated to 190 degrees for 35 minutes.


6. Before serving, be sure to wait until the cake has cooled.

The process of making this blueberry pie is very simple: make the dough, add berries to it and send to the oven. I like this recipe because the berries look very appetizing when served.


For cooking, we need:

  • Butter - 80 g.
  • Eggs - 3 pcs.
  • Flour - 250-280 g.
  • Sugar - 150 g.
  • Baking powder - 1 teaspoon
  • Yogurt - 200 g.

1. First, knead the dough. Sift the flour through a sieve, add 1 tsp to the flour. dry yeast and mix.

2. Add warm milk, egg, vegetable oil, salt and sugar and knead for 10 minutes an elastic soft dough that does not stick to your hands, then place in a dry, clean container, cover and let it sit for 1 hour in a warm place.

3. After an hour, the dough should rise 2 times, and when you press your finger, the pit does not tighten.

4. We will bake two pies, therefore, we divide the dough into 2 parts, one large and the second half half and divide these parts in half, and we should get 2 large and 2 small pieces of dough. We roll most of them into a 1 cm thick cake, take half the blueberries, arrange them in the center, and sprinkle with sugar and starch.

5. We roll out the smaller part of the dough in the form of an oval and cut it with a roller for mesh.

2. Grind the ingredients into crumbs.

3. Add the yolk to the oil crumbs, mix. If the crumb turns dry, you need to add 1 tablespoon of cold water and mix still (I did not add water).


4. Collect the crumbs of butter in a lump. And send to the refrigerator for 15 minutes.

5. Important! No need to knead the dough! Simply assemble quickly into a single lump until the butter begins to melt.

6. After 15 minutes, we take out the dough from the refrigerator. We roll out the dough into a layer 3 mm thick, then put it in a baking dish. We pierce the dough with a fork and send it again for 30 minutes.

We bake the dough with beans in an oven preheated to 180 degrees for 15 minutes. After 15 minutes, remove the load and paper and finish the dough for another 10 minutes.

  • Blueberries - 2 tbsp.
  • Sugar - 3 l
  • Starch (potato) 2 tbsp. l

Cooking

Before you start kneading the dough, you need to get the frozen blueberries from the freezer. Let the berries melt completely, then drain the liquid. Or throw in a colander, excess water still drains while you are doing the test.

So, let's start preparing the dough for our pie. Break 1 egg into a deep bowl and add half a glass of granulated sugar and beat lightly.


Melt the butter and pour it into the egg-sugar mass, mix with a whisk.


Pour the baking powder - mix, then add sour cream and mix again until a homogeneous consistency.

Pour flour in portions and knead the dough. First, knead the dough with a spoon, as soon as the dough becomes tight, put it on the table, and continue to knead the dough with your hands. If necessary, you can add more flour (it took me 2.5 cups). The dough should be very soft, supple.


The dough is ready. Divide the dough by 1/3 and temporarily set aside.


Roll out a large layer. It should be easy to roll out, the only thing can tear slightly, just consider this and work more carefully with the dough.


Lubricate the baking dish with butter (I have a shape with a diameter of 22 cm.). We spread the dough on the bottom of the mold so that we get the sides.

Let's start preparing the filling. Add starch and sugar to blueberries, mix and spread, on the bottom, evenly leveling.

We roll out the remaining smallest piece of dough and put it on top of the filling. Wrap the sides from the first layer down and press them to the upper layer of dough. We make a hole in the middle of the pie.

We send the cake to the oven preheated to 190 C and bake for about 1 hour until the crust appears.

The baking time is individual, so focus on the color of the dough - bake until a golden blush.

Take the cake out of the oven. Let it cool, then cut into portions and serve.

How to cook?

Step 1. First you need to defrost the dough. This moment is also quite important, everything needs to be done correctly. The fact is that the yeast dough begins to rise as soon as it unfrosts completely, and our task is to roll the dough to this point. In addition, the structure of the puff pastry is very delicate and it must not be damaged in any way - otherwise the dough will not be stratified, it will not rise and the result will be completely different from what we want to achieve. Therefore, lay the formation on a clean surface lightly sprinkled with flour, and check every 15 minutes. When the dough is already soft enough, but still cold, even slightly frostbitten, you need to start rolling.

Step 2. Pour the berries with cold water and carefully, so as not to damage them, rinse. Then, discard the berry into a colander or large sieve to drain all the liquid - the filling will be very juicy.

Step 3. Pour the washed berries into a deep bowl, cover them with sugar, a pinch of salt and add vanillin. Take a piece of butter, you can even take frozen, it should be very cold. Rub it on a coarse grater and add it to the filling - this will make its taste soft and creamy.

At the same stage, starch will need to be added. We cannot use this ingredient, because blueberries are a very juicy berry and if this moisture is not condensed into a creamy state (this will make starch), the whole cake will fall apart and turn out to be very “liquid”. Starch will be able to preserve the richness of the dish, but at the same time “grab” the filling. We use corn starch because it does not have a third-party flavor and is much better suited for baking. If you can’t get it, you can use potato.

Gently mix the filling with a spatula, try not to damage the berries. After that, put the filling in the refrigerator so that the oil does not melt.

Step 4. At this point, the dough should just melt. Sprinkle it with flour on both sides, take a large rolling pin and carefully, with confident movements, begin to roll it out. Remember that in no case is it possible to damage the structure of the test, therefore the movements should be directed only in one direction. Rolling too thin is also not necessary, about 3-5 centimeters will be enough.

Step 5. For such a pie, we need a deep form, which is usually used for biscuit pies. Fill the shape with a layer of dough along with the sides, smooth the dough so that its shape follows the shape of the dishes. Use a sharp knife to cut off excess pieces of dough sticking out to the sides.
  Now, cover the dish with a kitchen towel or cling film and place in a warm place for about an hour - the dough should rise during this time.

Step 6. In the meantime, take another small piece of dough (or trimmings if they are large enough) and roll it out thinly. From this test we will form a pattern. The easiest option is to cut it into strips with a thickness of about 1-1.5 centimeters and lay it with a net on the surface of the product. But there are many other options. For example, you can create some beautiful figures or completely cover the cake and only in the middle cut out a heart, an asterisk or any other simple pattern. This step is optional, the cake will be good without it - but the serve becomes much more beautiful with a pattern.

Step 7. When the dough rises, peel off the film and lay the filling into the pie with an even layer. Garnish it with separate pieces of dough on top and, if necessary, fix them with the base of the pie.
  Beat an egg with a teaspoon of sugar and, using a kitchen brush, brush the edges of the cake with the egg to make it brown.

Frozen blueberries - 400 grams;

  cottage cheese 5% fat - 300 grams;

  wheat flour - 3 tablespoons.
