    1. Combine shallots, garlic, salt and pepper in a small saucepan.  Put the stewpan on the stove and turn on a strong fire.

      • Turn on the fire only when you are ready to start the second step. If you leave garlic and shallots in a dry, hot saucepan for a long time, they may burn.
    2. Add chicken stock and wine.  Pour both liquids into the saucepan and mix the ingredients well.

      • Add the ingredients quickly until the stew is too hot. If you add the ingredients when the stewpan is too hot, the shallots and garlic may burn, and the liquid ingredients may spill when you add them.
    3. Boil for 15 minutes.  Stir the sauce from time to time to prevent any of the ingredients from sticking to the bottom.

      • Leave the stewpan without a lid during cooking.
    4. Add butter.  Add the oil and mix it gently with other ingredients, stirring the sauce with a whisk.

      • Remove from heat as soon as all the butter has melted.
      • After removing the saucepan from the heat, continue stirring the sauce with a whisk. The oil should completely dissolve and mix, so you should not see streaks of oil in the sauce when you mix.
    5. Garlic chili sauce

      1. Grind pepper and garlic.  Put the bell pepper, hot pepper and garlic on a cutting board and chop the ingredients into small pieces.

        • Sprinkle salt on the cutting board when chopping pepper and garlic. Salt will help absorb the liquid, so the aroma will not be lost.
        • Suitable peppers for this recipe include habanero and fresno peppers. If you decide to use small chili tepin, double the amount to 8.
      2. Combine peppers, garlic, vinegar and salt in a small saucepan.  Bring the ingredients to a boil over high heat.

        • Stir the ingredients from time to time when they reach a boil, but do not stir constantly, because it will be more difficult for the ingredients to heat up.
      3. Stew for 10 minutes.  Reduce heat to medium and lightly darken, stirring occasionally.
