  1. Defrost squids - pour boiling water over it and hold in it for several minutes. Of course, you can use fresh squids. In hot water, squids are easily cleaned from films. Cook squids exactly 2 minutes in salt water. Pour cold water and cut into strips.

4. Fry onions and mushrooms in vegetable oil.

  Korean squid and carrot salad without mayonnaise

Squids, as we see, are combined with many different products. An interesting “friendship” is obtained with squid with Korean carrots. A rather fresh squid is perfectly complemented by a sharp carrot.

We will need:

  • squid - 500 gr.
  • korean carrots - 250 gr.
  • garlic - 3 cloves
  • ground black pepper - 1 tsp.
  • seasoning for Korean carrots - 1 tsp.
  • vinegar 9% - 2 tsp.

As you can see, squid salads are prepared simply. Although I must admit that I hadn’t cooked them before, it seemed to me that processing squids was a complicated matter. Imagine my surprise when I first bought and cleaned them. It turns out that everything is very simple. But some subtleties still need to know.

How to cook squid for salad, so that they are soft

Squids are useful in that they are 20% protein. But it is this quality that suggests some of the features of their preparation. The fact is that with prolonged cooking, the protein is folded, which makes squid stiff like rubber and unsuitable for use. Therefore, in order to cook soft squid for salad, you must adhere to the following rules:

  1. Choose when buying a carcass of white color, pay attention to the freshness of the smell. Carcases should not stick together.
  2. You need to clean the squid before cooking as carefully as possible so that there are no films left. Otherwise, solid lumps may form on the surface of the carcasses.
  3. The easiest way to clean the squid from the films is to fill the carcasses with hot water and leave for several minutes. The film then easily lags behind and is removed.

4. Inside the squid fillet, be sure to remove the cartilaginous chitin chord. Just separate it from the carcass and remove all hard particles with your hands.

5. After the squids are cleaned, boil them in salt water. In this case, after boiling, cook no more than 2 minutes, even better 1.5 minutes. At the same time, do not leave the pan, but strictly monitor the time.

6. After the time has passed, squids should be immediately removed from the pan and put in a colander.

7. For 1 kg of fresh squid, you need 2 liters of water and 2 tbsp. l salt.

8. For a greater flavor when cooking, add 2 tbsp. To the pan. l sugar, bay leaf, black pepper peas and 1 tbsp. l vinegar.

9. Another reliable way to prepare soft squid for salad is to pour boiling water 2-3 times on them. This method is considered more reliable, since there is no danger of digesting squid. This fill is enough to cook squids for use.

10. If you missed a moment, digested the squid for more than 2 minutes and they became tough, do not despair - they can be saved. They greatly decrease in volume, but after 30 minutes of cooking they will again become soft.
