For shortcrust pastry

  • Butter - 110 g
  • Sugar - 30 g
  • Egg - 1 pc.
  • Egg white - 1 pc.
  • Flour - 175 g

For custard

  • Egg - 1 pc.
  • Sugar - 1 tbsp. l.
  • Cream (10% fat) - 150 ml
  • Vanilla extract - ½ tsp

1. For the dough, grind softened butter and sugar (by hand or in a food processor) until the mixture turns white. Add the egg and beat for a few more minutes. Reduce whisking speed and add flour. Stir until smooth. Wrap the dough in foil and refrigerate for 1 hour.

2. Peel and core the apples, cut into pieces. Place in a baking dish, sprinkle with sugar and clove.

3. Roll out the dough into a 3 mm thick layer and cut a few strips out of it in order to firmly glue them to the sides of the mold that have been pre-moistened with water. Cut a circle out of the dough with a diameter slightly larger than the mold, moisten the edges of the circle with water and cover the mold. Press firmly against the sides. Trim off any excess dough and press the dough in a circle with a fork.

4. Brush the surface of the dough with egg white. Make decorations from the rest of the dough and spread over the surface of the cake. Cut a small hole in the center. Lubricate the surface with the protein again.

5. Bake the pie for 30 minutes in an oven preheated to 180 ° C.

6. For cream, mix sugar and egg in a jug, add cream and vanilla. Pour the cream into the hole in the cake and bake for another 25-30 minutes, until the cream sets.

7. Sprinkle with icing sugar on the slightly cooled cake.

Ingredients

2. Place the rest of the butter in another mug and microwave for 10–20 seconds until melted. Add egg, milk and vanilla, beat thoroughly with a fork or whisk.

3. Pour sugar, flour, salt and ground cinnamon into the mixture, beat again with a fork until smooth. Stir the grated apple into the dough and gently pour into the mug with apple slices.

4. Bake in the microwave for 2 minutes. 20 sec. at a power of 600 W, 2 min. at 800 W or 1 min. 40 sec. at 1000 W. Let the cake cool slightly.

5. Carefully place the charlotte on a platter. Drizzle with caramel sauce, sprinkle with cane sugar on top. Can be served with ice cream.

Lemon pie


Ingredients

  • Flour - 130 g
  • Sugar - 120 g
  • Butter - 150 g
  • Zest of 1 lemon
  • Juice of 2 lemons
  • Eggs - 3 pcs.
  • Powdered sugar

1. Cut the zest into shavings, place in a small saucepan and cover 3–4 cm with water. Cook over medium heat until all liquid has evaporated. Cool it down.

2. Mash the sugar and softened butter until the mixture turns white. Add flour, stir.

3. Separate the whites from the yolks. Stir in all the yolks one at a time, stirring well each time. Pour in the juice of 1 lemon, stir. Add the zest.

4. Beat the whites with a mixer and mix gently with the dough.

5. Grease a 20 cm mold with butter and fill with dough. Bake for 40 minutes in an oven preheated to 175 ° C. Refrigerate slightly.

6. Rub 5-6 tbsp. l. icing sugar and lemon juice until you have a frosting consistency that can be spread over the cake.

7. Grease the cake with icing and cool until it solidifies.

Plum cake

Ingredients

  • Wheat flour - 300 g
  • Blue plums - 500 g
  • Sugar - 100 g

  • 6 cups diced apples (5 medium apples)
  • 1½ cups sugar

German apple pancakes


Ingredients

  • 2 large eggs
  • ¾ a glass of a mixture of milk and cream (cream with a fat content of 10-12%)
  • 1 tsp vanilla sugar
  • ½ tsp salt
  • 1 tbsp. l. Sahara
  • ½ cup all-purpose flour
  • 6 tbsp. l. butter
  • 3 strong and sour green apples, peeled and cut into thin slices
  • ¼ cups light brown sugar

1. Preheat oven to 220 ° C.

2. Combine the first five ingredients in a blender and blend. Add flour and mix again. Leave it on for a while.

5. When the butter melts and begins to boil, but has not yet turned brown, remove the pans and place the prepared apples in them. Pour the dough quickly and place in the oven. Cook until the pancakes are fluffy and golden, about 10 minutes.

6. Carefully tip the pancakes onto a serving plate. Sprinkle with powdered sugar and cut into quarters. Serve warm with maple syrup and fresh lemon juice.

Pear pie with frangipan

Pear pie, like any pastry, is especially good when hot. But even if the guests did not finish the cake, do not be discouraged - the next day it will also be very tasty, thanks to the frangipan.



Ingredients

  • Wheat flour - 250 g
  • Butter - 125 g
  • Sugar - 50 g

1. For the dough, in a bowl, mix the flour with cold butter, cut into slices, and grind the mixture with your hands (you can also use a food processor) to a breadcrumb consistency. Add sugar, salt and cinnamon. Pour in a little (about 50 ml) water and knead the dough.

2. Make a ball out of the dough, wrap in plastic wrap and refrigerate for 30 minutes.

3. For the filling, cut the unpeeled pears into quarters, remove the seeds, and cut each quarter in half. Heat 2 tablespoons in a skillet. l. sugar and butter, when the mixture begins to bubble, add the pears. Cook for a few minutes over medium heat, until the pears are tender and the sauce thickens a little.
